Gary Rhodes Recipe: "This is a good old English pudding which is made all over the country. I think this recipe originated with Francis Coulson of Sharrow Bay in Ullswater, and it works better than any of the other recipes I have tried. The best dates to use are Medjool, which come from India. They are plump and meaty with almost a molasses taste".

3/4 cup dates, stoned and chopped
1 1/4 cups water
1 teaspoon baking soda
4 tablespoons unsalted butter
3/4 cup sugar
2 eggs, beaten
1 1/3 cups self-raising flour
1 teaspoon vanilla extract
1 1/4 cups heavy whipping cream
1/3 cup brown sugar
2 teaspoons molasses or 2 teaspoons dark corn syrup

Steps:

  • Preheat the oven to 350°F and grease an 11x7 inch baking dish.
  • Boil the dates in the water for about 5 minutes until soft, then add the baking soda.
  • Cream the butter and sugar together until light and fluffy, then add the eggs and beat well.
  • Mix in the dates, flour and vanilla, then pour into the greased baking pan and cook in the preheated oven for about 30-40 minutes, or until just firm to the touch.
  • To make the sauce, simply place all the ingredients in a pan over a low heat and stir together until blended, then bring to the boil.
  • Some of this can be poured over the pudding and finished under the broiler, or it can be kept totally separate and ladled over the pudding when served.

I've been told by a number of Scottish friends that the Udny Arms (in Aberdeenshire, Scotland) has THE best sticky toffee pudding. Thankfully they've made it available on the web! I've had a number of sticky toffee puddings since living in Scotland, but this one is by far the best. It is also very easy to make! 1/2 cup butter
2 cups confectioners' sugar
2 eggs
3 cups flour
8 ounces dates (pitted and cut into pieces)
1 teaspoon baking soda
2 cups boiling water
1 cup butter
2 3/4 cups brown sugar
1 pint whipping cream

Steps:

  • For the Pudding:.
  • Cream butter and sugar until white and fluffy.
  • Beat in eggs gradually.
  • Fold in flour.
  • In a separate bowl pour the boiling water over the dates and soda.
  • When water is absorbed add other ingredients and cream mixture.
  • Bake in 9" x 13" cake pan in moderate hot oven (350 F) for 40 minutes.
  • For the Sauce:.
  • Mix all ingredients and bring to a boil.
  • Poke holes in top of cake and pour half of mixture over top, allowing sauce to soak into cake.
  • Brown under grill before serving.
  • Keep remaining sauce hot and spoon onto still warm pieces of cake cut into 3" squares.
  • Top with whipped cream.

This recipe was given to me by an English coworker, and it is unbelievable! Would make a great dessert for a holiday dinner. It's called a pudding, however, this is a moist cake with a caramel topping (the sticky part). You'll find that the caramel recipe alone is great, and could be used for many different things.

4 tablespoons butter
3/4 cup dark brown sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup boiling water
3/4 cup pitted dates
1 teaspoon vanilla extract
3/4 cup brown sugar
6 tablespoons butter
1/2 cup cream

Steps:

  • Directions for Pudding:.
  • Preheat oven to 350 degrees.
  • Chop the dates as finely as you prefer (if you like chunks in your cake, keep them bigger, but I usually like small small pieces).
  • Boil the water and pour over the dates. Add the baking powder, baking soda, and vanilla extract. Let soak for about 5 minutes or so.
  • While the dates soak, cream the softened butter and sugar with a mixer (paddle attachment helps).
  • Add the egg and beat until combined and smooth. Add the flour.
  • Stir in soaked date mixture and mix until combined.
  • Place into 8 x 8 (or something similar) greased baking tray and bake for 30-40 minutes at 350 degrees. Toothpick or knife should come out clean when done. Be sure to check at 30 minutes, since oven times may vary.
  • Directions for sauce:.
  • Melt butter in saucepan.
  • Add brown sugar and cream, bring to a boil.
  • Boil for 2-3 mins until texture is slightly fudgy and velvety.
  • Serve cake warm with warm sauce. We add the cooled sauce to the top of the cake and warm in microwave for 20 seconds, then top with a dollop of whipped cream or cool whip.
  • The more sauce you use, the stickier the wicket!
