GARLICKY TOMATO SALAD
Steps:
- To make the garlic vinaigrette, whisk together the garlic, vinegar, oil and pepper in a small mixing bowl.
- Place a layer of lettuce leaves on a serving platter or on 4 plates and arrange the sliced tomatoes and then the cherry tomatoes on top. Drizzle over the vinaigrette.
- Scatter the basil leaves and the pumpkin and sunflower seeds over the tomatoes, and serve at once.

Simple Mediterranean tomato salad with feta, red onions, and fresh herbs, and finished with a bright citrus dressing of citrus and extra virgin olive oil.

Steps:
- In a large salad or mixing bowl, add the tomatoes, onions, fresh herbs and garlic.
- Add sumac, kosher salt and a generous sprinkle of freshly ground pepper. Add lemon juice, white wine vinegar and extra virgin olive oil. Toss to combine. Taste and adjust seasoning to your liking.
- Transfer to a serving platter or bowl. Top with large pieces of quality feta cheese (optional). Enjoy!

GARLICKY TOMATO SALAD
This recipe was given to me by a friend from work. It is definitely for those out there who like garlic. Very simple, very tasty. My instructions call for a chilling time of five to eight hours, but I usually make this salad a full day ahead.

Steps:
- Quarter the tomatoes and place in bowl with a fitted lid.
- Peel and mince the garlic cloves as finely as possible.
- Mince parsley.
- Combine tomatoes, garlic and parsley.
- Combine dressing ingredients and shake well. Pour over the tomato mixture, cover and chill at least five to eight hours before serving.

TOMATO AND GARLIC CROUTON SALAD
Steps:
- Preheat the oven to 400 degrees F.
- In a small skillet over medium-low heat, add 3 tablespoons olive oil, the butter, garlic, red pepper flakes, and salt and pepper, to taste. Cook to infuse the butter and oil with the garlic, about 4 minutes.
- Add the cubed bread to a large bowl, pour the butter and garlic mixture over the bread and toss to coat. Transfer to a sheet tray and bake until crisp, about 10 minutes. Remove from the oven and let cool.
- In a small bowl whisk together the remaining olive oil and red wine vinegar and set aside.
- In a large serving bowl, combine the tomatoes, olives, mozzarella, croutons, basil, and the oil and vinegar mixture. Gently toss to coat all the tomatoes and croutons. Let the salad sit for 10 minutes before serving.

- Sprinkle both sides of chicken with pepper. In a large nonstick skillet over medium-high heat, brown chicken on each side in 1 teaspoon oil. Remove and keep warm. , In the same skillet, saute tomatoes and garlic in remaining oil for 1 minute. Add carrots; saute 2-3 minutes longer. Combine the tomato sauce, broth, tomato paste and rosemary; stir into skillet. Bring to a boil. , Return chicken to the pan. Reduce heat; cover and simmer for 10-12 minutes or until chicken juices run clear and carrots are crisp-tender. Serve with pasta.
