Sauteed Green Beans with Shallots and Garlic image

Crisp-tender green beans are elevated with sweet sauteed shallots and a bit of garlic.

Kosher salt and freshly ground black pepper
1 pound green beans, trimmed
2 tablespoons extra-virgin olive oil
1 large shallot, chopped
2 cloves garlic, thinly sliced

Steps:

  • Bring a medium saucepot of salted water to a boil. Add the green beans and cook until crisp-tender, about 4 minutes. Drain and rinse under cold water until the beans are cool. Drain well.
  • Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring occasionally, until lightly browned and tender, about 2 minutes. Add the green beans and garlic and increase the heat to medium-high. Cook, stirring occasionally, until the garlic has softened and the beans are heated through, about 4 minutes. Season with salt and pepper.

Garlicky Green Beans with Shallots image

A wonderfully, garlicky green bean side dish that works for nearly any main course!

¾ lb. fresh green beans
10 medium garlic cloves ((minced))
1 medium shallot ((2 cloves - minced))
2 tbsp. olive oil ((+ extra if needed))
¼ cup fresh, chopped Italian parsley ((flat leaf))
salt (to taste)

Steps:

  • Place the oil and the green beans in a skillet that has a lid. Begin cooking with the lid on.
  • While the green beans cook, chop the garlic and shallots.
  • Add the shallots to the pan and cook until they are browned. Then toss in the garlic and continue to cook until they just start to turn a very light brown. (Do not burn your garlic!!)
  • Cook with lid on, but stir frequently. Cook until the beans reach the level of doneness you like.
  • At the very end, just before you turn off the heat, stir in the parsley.
  • Note: The garlic and shallots should become very brown. Not burnt, but very brown. Keep the heat more at the medium level to avoid burning and add oil if necessary.

1 lb green beans
1 tablespoon minced garlic
1 shallot
8 ounces sliced mushrooms
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Wash and cut end of green beans. Bring to boil a pot of water and salt it as this is the only time to really flavor the green beans -- Boil them for about 8-10 minutes then drain water.
  • In a separate pan -- put olive oil and butter -- medium heat as not to burn. Pour green beans, shallot- sliced thinly, pre-sliced mushrooms and garlic and sautee for about 5 minutes! You can add more garlic if you want!
  • Make sure green beans are still firm.not to mushy. Add some more seasonings to taste after you are finishing the sautee as this will bring out the water from the mushrooms and the sweetness of the shallot !
  • Enjoy!

2 small shallots , very finely sliced
3 garlic cloves , thinly sliced
squeeze lemon
2 tbsp toasted flaked almonds

Steps:

  • Cook green beans in boiling salted water until tender, then drain and cool under running water. Set aside.
  • Put olive oil, shallots, garlic cloves and some salt in a frying pan, then cook gently for about 8 mins until soft but not brown. Tip in the beans and a grind of pepper, toss well, then warm through. Finish with a squeeze of lemon and toasted flaked almonds.
