4 medium red potatoes (2 1/2 to 3 inch), each cut in 8 wedges
2 teaspoons olive or vegetable oil
1 teaspoon dried basil leaves
1 teaspoon garlic salt

Steps:

  • Heat oven to 500°F. Spray 15x10x1-inch pan with cooking spray. In medium bowl, toss potatoes with oil to coat. Sprinkle with basil and garlic salt. Arrange in single layer in baking pan.
  • Bake uncovered 15 to 18 minutes, stirring once, until potatoes are tender but crisp on outside.

4 large unpeeled russet potatoes, cut into 1/4-inch strips
¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

8 garlic cloves, minced
6 tablespoons extra virgin olive oil
3 russet potatoes (about 8-ounces each), each cut into 12 wedges
3 tablespoons cornstarch
1 1/2 teaspoon coarse sea salt
3/4 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 225°C/475° F. Combine the garlic and oil in a large bowl, warming it until the garlic is fragrant, about 1 minute. Transfer 5 tablespoons of the oil (leaving the garlic in the bowl) to the baking dish, coating it well. Add the potatoes to the bowl with the garlic mixture and toss to coat. Wrap tightly in plastic wrap and microwave on high power until the potatoes are translucent around the edges, 3 to 6 minutes, shaking the bowl to redistribute the potatoes halfway through cooking. Combine the cornstarch, salt, pepper, garlic powder, and cayenne in a small bowl. Sprinkle over the hot potatoes and toss well to coat. Arrange the potatoes in a single layer on the prepared baking sheet and bake, turning once, until deep golden brown and crisp, 30 to 40 minutes. Serve with ketchup, mayonnaise or sour cream.

3 cloves garlic, minced
2 tablespoons canola oil
3 large baking potatoes, 12 ounces each
1/2 teaspoon salt
1 tablespoon finely chopped fresh parsley leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat the garlic and oil in a small saucepan over medium heat for 2 minutes. Strain the garlic from the oil with a small mesh strainer. Set both garlic and oil aside.
  • Cut the potatoes into 1/4-inch sticks. In a large bowl, toss the oil, potatoes and 1/2 teaspoon of salt. Spray a baking sheet with cooking spray and spread the potatoes onto it in a single layer. Bake until golden and crisp, about 35 minutes.
  • Remove potatoes from the tray with a metal spatula. Toss with parsley, reserved garlic, and additional salt, to taste. Serve immediately.

1 tablespoon onion powder
½ tablespoon paprika

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

2 tablespoons butter
3 -4 garlic cloves, minced

Steps:

  • Preheat oven to 400 degrees.
  • Toss the potatoes with the olive oil.
  • Spread in a roasting pan and roast for 45 to 50 minutes, tossing occasionally, until cooked through and golden brown.
  • Just before the potatoes have finished roasting, melt the butter in a small saute pan.
  • Add the garlic and saute over medium-low heat for 2-3 minutes, until garlic begins to soften.

3 russet potatoes, scrubbed and cut lengthwise into about 12 wedges
3 tablespoons vegetable oil
Salt and freshly cracked black pepper
Salt and freshly cracked black pepper
3 tablespoons unsalted butter
2 tablespoons grated fresh garlic
1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh chives
1 teaspoon fresh thyme leaves, chopped

Steps:

  • Preheat the oven to 475 degrees F.
  • Soak the potato wedges in a bowl of water for 10 minutes. Drain the potatoes and then fully pat them dry with paper towels or a lint-free dish cloth.
  • Layer a baking sheet with 2 tablespoons oil and generously sprinkle with salt and pepper.
  • Add the potatoes to the pan and drizzle with the remaining 1 tablespoon oil. Sprinkle with salt and pepper and spread them evenly in a single layer on the pan. Cover tightly with foil and bake for 5 to 10 minutes. Remove the foil and bake until the bottoms are golden brown, about 10 minutes. Flip with a spatula and cook until the other side is golden brown, another 10 to 13 minutes.
  • In a small saute pan, melt the butter with the garlic and let the garlic gently cook over medium-low heat until fragrant, 5 to 7 minutes.
  • When the potatoes are cooked, toss them with the garlic butter and fresh herbs.

1 tablespoon olive oil
1/2 teaspoon salt

Steps:

  • Preheat oven to 475°F.
  • Spray 15 1/2 x 10 1/2-inch jelly roll pan or large cookie sheet with nonstick cooking spray.

  • Holding each potato half flat side down, cut lengthwise into 1/4-inch thick slices.

2 lbs potatoes, peeled
6 fresh garlic cloves, unpeeled
2 -3 tablespoons olive oil
kosher salt
3 fresh thyme sprigs

Steps:

  • Preheat oven to 500 degrees. Line a baking sheet with foil and place pan in the oven.
  • Cut potatoes into 1/4 inch thick wedges.
  • In a large bowl, toss the potatoes with the garlic cloves, olive oil, plenty of salt and thyme.
  • Remove the pan from the oven and quickly spread the fries on an even layer. Return to the oven and drop temperature to 450 degrees.
  • Roast for about 35 minutes. 5 minutes before they're done, loosen the potatoes from the foil with a spatula and return to oven to finish cooking. Discard thyme stems before serving.

1 bunch fresh basil
1/2 lemon, juice of
