DOWN AND DIRTY GARLIC CHILI
This recipe is something I will whip together on nights when spaghetti just won't cut it, but time is a commodity worth more than gold. There are only two in my family, but that just means plenty of yummy leftovers. Serve this chili with cheese on top and a thick slice of homemade sourdough bread and you've got a winner. The measurements are approximations since I'm more of a shake and dab type of cook, but this is generally right. This gives more kick than you might think, so be lenient with the pepper flakes if you are serving kids!

- Heat a large saucepan or Dutch oven over medium heat. Add ground beef, and cook until evenly browned. Stir occasionally to crumble. Season the beef with chili powder, onion flakes, cumin, paprika, garlic and red pepper flakes, and mix well.
- Pour in the tomatoes, chili beans, and tomato sauce. Reduce heat to low, and simmer for at least 30 minutes, or longer for thicker chili. Season to taste with salt and pepper.

CHILI LOVER'S CHILI
This chili recipe is so good! It did not come from a written recipe so I don't have exact measurements.I just add what's needed until it tastes right.I usually make the pinto beans from a leftover spiral ham bone (saving the liquid from the bottom of the pan the ham was cooked in-liquid gold I call it-adding to the chili also)and have the beans for dinner one night and chili the next.there's only 3 in my family so it works out just right!

Steps:
- Brown beef and pork.
- Drain.
- Steam or boil the browned meat to remove the fat (please don't skip this step or your chili will be GREASY!).
- Drain meat again and place back in pan and add onion, celery, green pepper, and some of the dry seasonings above to season the meat mixture.
- Add all ingredients except beans to a large pot.
- Simmer on low for 2-3 hours,adding beans the last half hour of cooking time.
VEGETABLE LOVER'S CHILI
This vegetable chili make a large quantity - perfect to serve for a big gang!! The beer adds a nice flavor to this chili.

- In large stockpot, combine tomatoes, kidney beans, celery, carrots,onion, green pepper, raisins, vinegar and seasonings. Cover and cook for about 30 minutes.
- Uncover and cook for another 30 minutes. Stir in the beer.
- Simmer, uncovered, for about 25 minutes, or until thickened.
- serve garnished with cheese.
