EASY GARLIC GINGER CHICKEN



Easy Garlic Ginger Chicken image

Light and flavorful!

4 skinless, boneless chicken breast halves
3 cloves crushed garlic
3 tablespoons ground ginger
1 tablespoon olive oil
4 limes, juiced

Steps:

  • Pound the chicken to 1/2 inch thickness. In a large resealable plastic bag combine the garlic, ginger, oil and lime juice. Seal bag and shake until blended. Open bag and add chicken. Seal bag and marinate in refrigerator for no more than 20 minutes.
  • Remove chicken from bag and grill or broil, basting with marinade, until cooked through and juices run clear. Dispose of any remaining marinade.

Number Of Ingredients 10

1/4 cup sherry wine (or chicken broth)
1/4 cup soy sauce
4 garlic cloves, minced
1 tablespoon honey
1 tablespoon minced fresh basil (or 1 teaspoon dried basil)
1/2 teaspoon ground ginger (or 2 teaspoons minced fresh gingerroot)
1/2 teaspoon Chinese five spice powder
1/4 teaspoon crushed red pepper flakes (optional)
1/4 teaspoon pepper
1 lb boneless skinless chicken breast, cut into 1 inch strips

Steps:

  • Combine the first nine ingredients in a bowl. Remove 3 tablespoons for basting; cover and refrigerate. Place the chicken in a large resealable plastic bag; add the remaining marinade. Seal the bag and turn it around to coat it thoroughly. Refrigerate for at least 3 hours.
  • Drain and discard the marinade. Broil the chicken strips 3"-4" from the heat for 3 minutes; then turn the strips over. Baste with reserved marinade. Broil 4-5 minutes longer or until chicken juices run clear, turning occasionally. Remove from oven and serve. Enjoy!
  • To freeze: Place chicken and marinade in a freezer bag. Seal, label and freeze.
  • To serve: Thaw overnight in the fridge and cook as directed.

1/4 teaspoon pepper

2 1/2-3 lbs skinless chicken pieces
1/2 cup honey
1/2 cup low sodium soy sauce
1/4 cup ginger preserves
1/4 cup hoisin sauce
2 tablespoons olive oil
3 garlic cloves, minced
2 teaspoons minced fresh ginger
1/2 cup diced onion
1/2 teaspoon crushed red pepper flakes (optional)
1 tablespoon cornstarch
3 tablespoons cold water
sliced scallion, for garnish
sesame seeds, for garnish

Steps:

  • Layer the chicken in the bottom of a 5 - 6 qt slow cooker.
  • In a bowl, whisk together honey, soy sauce, preserves, hoisin sauce, oil, garlic, ginger, onion and red pepper flakes. Pour over chicken. Cover slow cooker and cook on low 4-5 hours.
  • Using tongs or a slotted spoon or skimmer, remove chicken from sauce to a plate. Transfer sauce to a medium saucepan over medium-high heat and allow to reduce slightly.
  • Meanwhile, using two forks, shred chicken, discarding bones and cartilage as you go.
  • When the chicken is shredded, whisk the cornstarch into the cold water. Add to the sauce and simmer until thickened. Add chicken and stir to coat chicken well. Garnish with sliced scallions and sesame seeds; serve over steamed white rice.
