This is a quick and easy recipe. Good for quick suppers.

4 skinless, boneless chicken breast halves
1 onion, chopped
½ pint sour cream
1 cup shredded Cheddar cheese
1 tablespoon dried parsley
½ teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon salt
1 (15 ounce) can tomato sauce
½ cup water
1 tablespoon chili powder
⅓ cup chopped green bell pepper
1 clove garlic, minced
8 (10 inch) flour tortillas
1 (12 ounce) jar taco sauce
¾ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium, non-stick skillet over medium heat, cook chicken until no longer pink and juices run clear. Drain excess fat. Cube the chicken and return it to the skillet. Add the onion, sour cream, Cheddar cheese, parsley, oregano and ground black pepper. Heat until cheese melts. Stir in salt, tomato sauce, water, chili powder, green pepper and garlic.
  • Roll even amounts of the mixture in the tortillas. Arrange in a 9x13 inch baking dish. Cover with taco sauce and 3/4 cup Cheddar cheese. Bake uncovered in the preheated oven 20 minutes. Cool 10 minutes before serving.

Beef enchiladas are typically prepared with corn tortillas, but my husband, Jeff, and I prefer flour tortillas. I use them in this saucy casserole that has irresistible home-cooked flavor and a subtle kick. -Jennifer Standridge, Dallas, Georgia

1 pound ground beef
1 medium onion, chopped
2 tablespoons all-purpose flour
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon rubbed sage
1 can (14-1/2 ounces) stewed tomatoes, cut up
1/3 cup butter
4 to 6 garlic cloves, minced
1/2 cup all-purpose flour
1 can (14-1/2 ounces) beef broth
1 can (15 ounces) tomato sauce
1 to 2 tablespoons chili powder
1 to 2 teaspoons ground cumin
1 to 2 teaspoons rubbed sage
1/2 teaspoon salt
10 flour tortillas (6 inches), warmed
2 cups shredded Colby-Monterey Jack cheese, divided
Optional toppings: Halved grape tomatoes, minced fresh cilantro, sliced jalapeno peppers, chopped or sliced red onion and cubed avocado

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 6-8 minutes, breaking meat into crumbles; drain. Stir in flour and seasonings. Add tomatoes; bring to a boil. Reduce heat; simmer, covered, 15 minutes., In a saucepan, heat butter over medium-high heat. Add garlic; cook and stir 1 minute or until tender. Stir in flour until blended; gradually whisk in broth. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in tomato sauce and seasonings; heat through. , Pour 1-1/2 cups sauce into an ungreased 13x9-in. baking dish. Place about 1/4 cup beef mixture off center on each tortilla; top with 1-2 tablespoons cheese. Roll up and place over sauce, seam side down. Top with remaining sauce. , Bake, covered, until heated through, 30-35 minutes. Sprinkle with remaining cheese. Bake, uncovered, until cheese is melted, 10-15 minutes longer. Serve with toppings as desired.

1 pound boneless skinless chicken breasts
1/2 cup water
5 teaspoons minced garlic, divided
1 cup finely chopped onion
3 tablespoons butter
2 cans (4 ounces each) chopped green chilies
1 tablespoon chili powder
1-1/2 teaspoons salt
1/2 teaspoon each ground cumin and dried oregano
1/4 teaspoon pepper
1/2 cup all-purpose flour
1 cup chicken broth
1 cup heavy whipping cream
2 cups shredded Monterey Jack cheese, divided
1/3 cup vegetable oil
12 corn tortillas (6 inches)
1 cup sliced green onion, divided

Steps:

  • In a saucepan, bring the chicken, water and 2 teaspoons garlic to a boil. Reduce heat; cover and simmer for 15-20 minutes or until chicken is no longer pink. Remove chicken; reserve liquid. Cut chicken into thin strips. Set aside., In a skillet, saute onion in butter until tender. Add remaining garlic and saute for 1 minute. Add chilies and seasoning; saute 1 minute. Stir in flour until blended. Gradually stir in chicken broth, cream and reserved liquid. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Remove from the heat. Stir in 1 cup cheese until melted. Combine 1 cup of the cheese sauce and chicken; set aside., In a large skillet, heat oil. Dip tortillas, one at a time, in hot oil just until limp, about 5 seconds on each side. Place on paper towels to drain. Spoon about 1/4 cup chicken mixture down the center of each tortilla; sprinkle with 1 tablespoon green onion. Roll up and place seam side down in a greased 13x9-in. baking dish. Pour remaining sauce evenly over tortillas. Cover and bake at 400° for 20-25 minutes or until heated through and bubbly. Sprinkle with remaining cheese; bake 3-4 minutes longer or until cheese is melted. Garnish with remaining green onions.

To save time prepare and cook the chicken a day ahead, make this as spicy as you like by using spicy salsa and you may also add in crushed chili flakes for more heat :)

1 3/4 cups reduced-fat sour cream
2 small green onions, chopped
1/3 cup minced fresh cilantro
1 tablespoon minced fresh jalapeno pepper
1 teaspoon ground cumin (or to taste)
2 tablespoons oil
12 ounces boneless skinless chicken breasts, cut into 3 x 1 inch strips
1 tablespoon fresh minced garlic (or to suit taste)
8 (6 inch) flour tortillas
2 cups shredded reduced-fat cheddar cheese
1 1/2 cups bottled chunky salsa (medium or hot)
1 -2 tomatoes, chopped

Steps:

  • Set oven to 350 degrees F.
  • Grease a 13 x 9" baking dish.
  • In a small bowl, mix together the sour cream, green onions, cilantro, jalapeno peppers and cumin; set aside.
  • Heat a skillet to medium-high heat with 2 tbsp oil.
  • Add in the chicken saute for 2 minutes, add in the minced garlic, saute for 2 minutes more, or until the juices run clear.
  • Divide the chicken strips among the 8 tortillas, placing them down the center of the tortillas.
  • Top with the sour cream mixture; roll them up, and place them seam-side down in the baking dish.
  • Sprinkle with the grated cheese.
  • Cover with foil; bake for 25-30 minutes, or until hot and bubbly.
  • Remove from the oven; spoon the salsa in a strip down the center, and sprinkle the chopped tomato over the salsa.

  • Preheat oven to 350º. In a large saucepan, heat 2 tablespoons of the olive oil. Cook the onion over moderate heat until soft and translucent, about 5 to 7 minutes. Add the garlic, green onions, jalapeño, chili powder, cumin, crushed red pepper, paprika, oregano, sugar, salt and pepper and cook, stirring, for 1 minute. Stir in the tomatoes and remove from heat. Blend in a food processor or blender until smooth. Return the tomato mixture to heat and bring to a simmer. Add the chicken breasts and cook, stirring occasionally, for 20 to 25 minutes, until the chicken is no longer pink and cooked through.
  • Transfer the chicken to a cutting board and use two forks to shred it. Place the chicken in a large bowl and add the black beans. Stir in 1 cup of the sauce.
  • Wrap the tortillas in a damp paper towel and warm them in a microwave oven until soft and pliable, about 1 minute.
  • Spread a thin layer of sauce on the bottom of a 9-by-13-inch glass baking dish. Arrange the tortillas on a work surface. Spoon the chicken mixture onto the tortillas. Roll up the tortillas and arrange them in the baking dish. Top the enchiladas evenly with the remaining sauce. Sprinkle the top of the enchiladas with the cheese. Bake for 15 to 20 minutes, until the enchiladas are hot and the cheese is melted.
