This super quick garbanzo bean salad is a hit with my crowd. If there are any leftovers, which rarely happens, I pile them into pitas for lunches the next day! You can also add grilled chicken or steak to turn it into a hearty main-dish salad.-Judy Doepel, Ballston Lake, New York

1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1-1/2 cups coarsely chopped English cucumber (about 1/2 medium)
1 can (2-1/4 ounces) sliced ripe olives, drained
1 medium tomato, seeded and chopped
1/4 cup thinly sliced red onion
1/4 cup chopped fresh parsley
3 tablespoons olive oil
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
5 cups torn mixed salad greens
1/2 cup crumbled feta cheese

Steps:

  • Place the first 11 ingredients in a large bowl; toss to combine. Sprinkle with cheese.

2 (15 ounce) cans garbanzo beans, drained
2 cucumbers, halved lengthwise and sliced
12 cherry tomatoes, halved
½ red onion, chopped
2 cloves garlic, minced
1 (15 ounce) can black olives, drained and chopped
1 ounce crumbled feta cheese
½ cup Italian-style salad dressing
½ lemon, juiced
½ teaspoon garlic salt
½ teaspoon ground black pepper

Steps:

  • Combine the beans, cucumbers, tomatoes, red onion, garlic, olives, cheese, salad dressing, lemon juice, garlic salt and pepper. Toss together and refrigerate 2 hours before serving. Serve chilled.

"It keeps for days in the refrigerator, but it never lasts that long in my house!"

2 cans (15 ounces each) garbanzo beans or chickpeas, rinsed and drained
1/2 cup chopped sweet onion
1/2 cup whole ripe olives, halved
1/4 cup chopped sweet red pepper
1/4 cup chopped green pepper
1 celery rib, chopped
1/4 cup shredded Parmesan cheese
1/2 cup olive oil
3 tablespoons balsamic vinegar
2 tablespoons minced fresh parsley
1 tablespoon sugar
1/4 teaspoon onion powder
1/8 teaspoon dried basil
Dash dried oregano

Steps:

  • In a bowl, combine the beans, onion, olives, peppers, celery and Parmesan cheese. In a jar with tight-fitting lid, combine the remaining ingredients; shake well. Pour over bean mixture and toss to coat.

3/4 cup celery, chopped
1 garlic clove, minced
1/2 cup pimiento, chopped
2 tablespoons olive oil (Spanish for authenticity)
3 green onions, chopped
2 tablespoons balsamic vinegar
1 cup olive, sliced (black or green)
fresh ground black pepper, to taste

Steps:

  • Combine all of the ingredients in a salad bowl.
  • Add freshly ground black pepper, to taste.
  • Mix well, cover and refrigerate 24 hours.

1 apple, cored and chopped
¼ cup chopped walnuts

¼ teaspoon lemon juice
½ head iceberg lettuce - rinsed, dried, and shredded

Steps:

  • In a salad bowl, combine the chick peas, celery, onion, apple or grapes and chopped nuts.
  • Prepare the dressing by whisking together the mayonnaise, honey, mustard and lemon juice.
  • Combine the salad mixture and dressing. Toss and serve on a bed of shredded lettuce.

1 tablespoon peanut oil
2 garlic cloves, crushed
1 red onion, diced
4 tablespoons red wine vinegar
1/4 teaspoon dried chili pepper flakes
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
5 tablespoons extra virgin olive oil
1 lime, juice of
14 ounces garbanzo beans
3 tablespoons cilantro leaves, chopped
1/2 red bell pepper, diced
1/2 green bell pepper, diced

Steps:

  • Heat a wok or large saucepan over a medium heat. Add the peanut oil and toss in the garlic and red onions.
  • Stir fry for about a minute, until the garlic gives off a nutty aroma.
  • Add the red wine vinegar while still on the heat - cook down and stir in the chile flakes along with a pinch of salt and pepper.
  • Take the pan off the heat and leave to cool before adding the olive oil and lime juice.
  • In a large bowl, tip in all the salad ingredients and spoon over the dressing. Leave the garbanzos to steep for an hour or so before serving at room temperature, either as a starter or as an accompaniment to roast meats.

1 tablespoon minced fresh basil or 1 teaspoon dried basil

1/2 cup best quality olive oil
1 cup finely minced yellow onion
1 tablespoon dried thyme
1/2 cup coarsely chopped red pepper
1/2 cup dark raisin
2 (1 lb) cans garbanzo beans, drained and rinsed,about 3 1/2 cups
1/2 teaspoon salt
1/2 cup white wine vinegar

Steps:

  • Heat the olive oil in a saucepan.
  • Add the onions and thyme and cook over low heat, covered, until onions are tender and lightly colored, about 25 minutes.
  • Add chopped red pepper and cook for another 5 minutes.
  • Add raisins and garbanzos and cook for another 5 minutes, stirring occasionally.
  • Do not overcook the garbanzos or they will become mushy.
  • Season with salt, transfer to a bowl, and pour the vinegar over the hot mixture.
  • Let vegetables cool to room temperature, then cover and refrigerate for at least 24 hours before serving.
  • Allow to return to room temperature before serving.
