GARBANZO BEAN CHOCOLATE CAKE {GLUTEN, EGG, DAIRY AND TREE-NUT FREE}



Garbanzo Bean Chocolate Cake {Gluten, Egg, Dairy and Tree-Nut Free} image

Number Of Ingredients 11

2 3/4 cups freshly-ground garbanzo bean flour, sifted twice (freshly-ground makes ALL the difference!)
1 3/4 cups granulated sugar (sucanat, organic evaporated cane juice or white sugar)
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 "flax eggs" (2 Tbsp. flax meal + 6 Tbsp. warm water that has set or "gelled" together for a few minutes before adding to the recipe. If not egg-free, simply add two eggs here. It will make for a moister cake if you do.)
2 teaspoons vanilla
1/2 cup olive or melted coconut oil
1 cup rice milk (You can also use almond or coconut milk if you do not have an allergy to those.)
1 cup boiling water

Steps:

  • Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add in flax "eggs," vanilla, oil, and milk.
  • Mix in water.
  • Fill two greased 8 in. round cake pans.
  • Bake at 350 F for about 25-27 minutes or until a toothpick inserted comes out clean.
  • Let cool about 5 minutes before moving to a wire rack to finish cooling. Let cool completely before icing.*

I halved the Lemony Garbanzo Cake recipe from "The Brilliant Bean" by Sally and Martin Stone and tweaked it a little. Then I baked it in 2 mini springform pans in my toaster oven at 350 degrees for 35 minutes. It's dense and moist and has a different texture than traditional flour cakes.

1 cup canned chick-peas, drained, rinsed, and loose skins discarded
2 eggs
4 pitted dates
1/4 teaspoon baking powder
1/2 teaspoon vanilla
3 tablespoons unsweetened cocoa powder

Steps:

  • Add all ingredients to a blender or food processor and puree.
  • Pour into one 9 inch pan or two mini spring form or cake pans.
  • Bake at 350 degrees for 35-40 minutes or until an inserted toothpick comes out clean.
  • Cool completely before frosting.

I actually saw this mentioned on a Weight Watchers board and found the recipe online. I didn't find it on RecipeZarr, so I thought I would add it. My friend calls it Chocolate F*rt Cake! It is different and one way to get some fiber in your diet. I am sure you could play around with an egg substitute and Splenda.

1 (19 ounce) can garbanzo beans, rinsed and drain
4 eggs
1 1/2 cups semi-sweet chocolate chips
1/2 teaspoon baking powder
3/4 cup sugar
powdered sugar, for dusting- (optional)

Steps:

  • Puree in food processor till smooth the beans and eggs.
  • Add the baking powder and sugar, pulse till smooth.
  • In a microwave safe bowl, melt the chocolate chips, stirring often till smooth.
  • Add to food processor, pulse till smooth.
  • Pour into a greased and floured 9 inch cake pan.
  • Bake at 350 degrees for about 40 minutes.
  • Dust with sugar if you like.
  • *I could not find a 19oz can of beans, so I used about 2 cups.
  • *I also added a splash of vanilla flavoring.
  • *I also 'floured" my pan with dark cocoa.
