½ cup oil
4 eggs
1 pinch salt
½ lb boneless, skinless chicken breast, sliced
1 ¾ cups rice, cooked
5 oz mixed vegetable
¼ cup light soy sauce
1 oz spring onion

Steps:

  • Heat a wok over medium-high heat for 5 minutes. Add the oil then stir in eggs and fry until just cooked. Once cooked, remove eggs from the wok and set aside.
  • Heat up the wok until smoking hot and pour in the oil.
  • Add the chicken breast and fry until they are just cooked.
  • Add the rice and keep frying until they turn slightly brown.
  • Add the vegetables and fry everything together until they are thoroughly cooked.
  • Pour in the soy sauce and stir.
  • Add the cooked eggs back in and toss them around until they break into pieces.
  • Add in the spring onions and serve.
  • Enjoy!

4 skinless chicken breasts, cut into chunks (or use thighs or drumsticks)
2 tsp cornflour
1 onion, diced
2 tbsp rapeseed oil
1 garlic clove, crushed
2 tsp curry powder
1 tsp turmeric
½ tsp ground ginger
pinch sugar
400ml chicken stock
1 tsp soy sauce
handful frozen peas
rice to serve

Steps:

  • Toss the chicken pieces in the cornflour and season well. Set them aside.
  • Fry the onion in half of the oil in a wok on a low to medium heat, until it softens - about 5-6 minutes - then add the garlic and cook for a minute. Stir in the spices and sugar and cook for another minute, then add the stock and soy sauce, bring to a simmer and cook for 20 minutes. Tip everything into a blender and blitz until smooth.
  • Wipe out the pan and fry the chicken in the remaining oil until it is browned all over. Tip the sauce back into the pan and bring everything to a simmer, stir in the peas and cook for 5 minutes. Add a little water if you need to thin the sauce. Serve with rice.

When we went out for fast food near my husband's office, this dish was always our kids' pick, and they've asked me to make it for them. The restaurant never used very much curry powder, producing a very mild sauce.

cooked rice
1 -2 garlic clove, smashed and slice
2 slices ginger
1 onion, 1/2-inch dice
1/2 lb chicken breast, 1/2-inch dice
2 medium potatoes, 1/2 inch dice (optional)
1 medium carrot, 1/2 inch dice (optional)
2 -4 tablespoons peanut oil or 2 -4 tablespoons canola oil
1 -3 tablespoon curry powder
1 teaspoon salt
1 -2 cup chicken stock or 1 -2 cup water
1 -2 tablespoon cornstarch, in
1 -2 tablespoon water

Steps:

  • Put on rice to cook.
  • Prepare garlic, ginger, onion, chicken, potatoes, and carrots and have ready for cooking.
  • Heat empty wok over high heat until you can see the heat rising off the surface. Add oil and swirl to coat wok and heat oil thoroughly.
  • Add garlic and ginger to the wok, and toss briefly until fragrant.
  • Add onion and curry powder, and toss to thoroughly coat onion.
  • Add diced chicken, and stir-fry briefly until all the surfaces of the meat are coated and cooked (it need not be cooked through).
  • Add potatoes, carrot, and salt, and stir to thoroughly coat vegetables.
  • Add chicken stock or water to almost cover, bring to a boil, reduce heat, and simmer until meat, potatoes, and carrots are cooked through, 10-15 minutes.
  • Some people like to throw in some frozen peas at this point and heat them for about 3 minutes.
  • Thicken sauce with cornstarch/water mixture.
  • Serve over rice.
