Steps:
- 1. Saute shrimp in butter with garlic. Remove to plate when pink. Then give a rough chop.
- 2. In the same skillet, saute scallops in the remaining butter, adding a little olive oil. Braze 2 minutes and turn. Don't overcook! Give a rough chop.
- 3. In a bowl, combine the crab, krab (if using), shrimp and scallops.
- 4. In another bowl, mix cream cheese, dill, and lemon juice. Optional: Can add green onion.
- 5. Butter sourdough bread on one side. Slather the cream cheese mix on the other side. Top with sliced Swiss cheese. Top with seafood mixture. Top with another slice of Swiss cheese and buttered sourdough with cream cheese mix on the other side.
- 6. Grill until toasty brown.
- 7. Serve with lemon wedges.

This crab sandwich is served at The Greenery-- a "chick" restaurant at the mouth of Ogden Canyon in Utah. This sandwich was honored with a 2002 Olympic pin.

- Heat oven to 350 degrees.
- Mix crab, mayonnaise, onion, salt and lemon juice.
- Place a tomato slice on each muffin half.
- Arrange crab salad on top of tomato dividing equally among sandwiches.
- Top each with a slice of mozzarella.
- Transfer to a baking sheet and bake for 15-20 minutes or until cheese is slightly browned.
- Cooks Note: Due to personal taste, I often decrease the amount of mayonnaise so that the salad isn't as wet.

- Make the crab paste: mix the ingredients together in a bowl and season, then set aside. In a separate bowl, mix the white meat with the herbs, lemon juice, oil and seasoning.
- Spread the bread lightly with butter, then spoon and spread the crab paste over 4 of the slices. Pile the white meat over, then top with the remaining bread. Cut the crusts off, if you like, and serve halved or in small triangles or squares with lemon wedges on the side.
