ULTIMATE GREEN CURRY (GAENG KHIAW WAN GAI)
Steps:
- In a medium saucepan, heat the oil over medium heat until sizzling (or if using coconut cream, heat it until bubbling). Add the curry paste and cook, stirring, just until fragrant and the color has intensified, about 1 minute. Watch carefully so it doesn't burn.
- Add the chicken and stir to coat in the curry paste, then pour in the coconut milk and bring to a boil. Add the eggplant, lower the heat to maintain a simmer, and simmer until the chicken and eggplant are cooked through, about 8 minutes. Remove from the heat and stir in the Thai basil, chiles, and lime leaves. Stir in the sugar and fish sauce until the sugar has dissolved. Serve hot over jasmine rice or rice noodles or with roti for dipping.
SOUTHERN THAI GAENG SOM RECIPE - SOUR FISH SOUP
This recipe is for Southern Thai gaeng som (วิธีทำ แกงส้ม, แกงเหลือง), a sour curry, but more of a soup, filled with chilies, lime juice, and turmeric.

Steps:
- Begin by making the curry paste. Peel the stems off all the chilies, then add them to a blender or food processor.
- Peel the garlic, and shallots, and cut the turmeric into pieces, and toss them all into the blender.
- Add about a cup of water, and blend for a few seconds until pureed.
- NOTE: Be warned that turmeric stains, so don't use a nice blender!
- To prepare the green papaya, first peel the outer green skin, rinse it in water to remove the sap, then shave off thin bite sized pieces of papaya so you have thin wedges. Cut the papaya like you're whittling a piece of wood. Then set aside.
- For the limes, slice and squeeze them into a separate bowl.
- Put a big soup pot on the stove and turn to medium heat, and add in all the curry paste you just blended.
- Add 2 liters of water to the soup, using some of the water to rinse out the blender, and add to the pot.
- Add the shrimp paste, and stir the soup to make sure the shrimp paste fully dissolves.
- Take the green papaya, add it all to the soup, stir quickly, then put the cover on to bring to a boil.
- Once the gaeng som is boiling, gently add the pieces of fish.
- But here's the Thai Aunty trick - don't stir the soup until the fish is fully cooked. If you stir the soup when the fish is still raw, your soup will taste fishy (according to Thai cooking practice).
- Boil the soup, without stirring, for about 5 - 8 minutes.
- When the fish is finished cooking, you can stir gently, and then turn off the stove pretty quickly so you don't overcook the fish.
- Once your heat is off, it's time to season with salt and lime juice. Add some at first, stir gently, taste test, then add more if needed.
- Taste test until your gaeng som is sour, slightly salt, and extremely spicy.
GA GONE THAI
i began with Recipezaar's Ga Kho but was in a BIG hurry and misread the directions. That, plus my usual tweaking, left me with a wonderful dish which is even quicker to prepare. Enjoy!

Steps:
- Preheat oven to 325 degrees F.
- Into a covered (you can cover with parchment or aluminium foil since you'll be removing it later) casserole add oil, soy sauce, fish sauce and sugar.
- Stir just a bit.
- (It is not necessary to dissolve the sugar.) Using a microplane grater (try www. leevalley. com) grate galangal and garlic.
- Add to casserole with shallot (s) and black pepper.
- Add chicken and toss with"sauce".
- Freshly squeeze the lime juice over the whole mess and toss again.
- Cover casserole and bake for about 45 minutes.
- Remove cover and bake until nicely browned and meat pulls away from bones.

- Prepare your ingredients. Slice the onion, baby corn, and chicken into bite-sized pieces. Peel, cut, and parboil the potatoes for ~5 minutes. Set aside.
- Open the can of coconut milk and scoop the top thicker cream part into a pan (approximately 1/2 cup). Heat this cream over medium heat until the oil just starts to separate from the milk. Then add the yellow curry paste and saute with the cream until it becomes fragrant.
- Add the chicken, coat in the curry paste, and cook until it's done. Then add the rest of the coconut milk and water and bring to a boil. Let cook until the consistency of the curry is what you prefer. You can use less water if you want a shorter cooking time.
- Add the potatoes, onions, and baby corn and cook until just done, but still firm. Adjust seasonings with fish sauce and sugar to taste. Some curry pastes will not need any sugar or fish sauce, and others will need more than the amounts specified here.
