Ingredients

¼ cup vegetable oil for frying, or as needed
1 ¼ cups all-purpose flour, or more if needed
½ cup white sugar
½ cup water
½ cup milk
1 egg
1 tablespoon baking powder
1 teaspoon vanilla extract
½ teaspoon salt

Steps:

Pour enough oil into a skillet to completely coat the bottom and heat over medium-high heat.
Blend flour, sugar, water, milk, egg, baking powder, vanilla extract, and salt together in a blender until smooth. Add more flour if batter is too watery. Put your finger over the hole of a funnel and fill funnel with batter.
Hover filled funnel over the skillet, release finger, and swirl batter into the hot oil; cook until golden brown, about 5 minutes per side.

8 cups vegetable oil for frying
1 ½ cups milk
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
¾ cup confectioners' sugar

Steps:

In a deep-fryer, or heavy skillet, heat oil to 375 degrees F (190 degrees C).
In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.
While covering the funnel hole with one hand, pour in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.

Whisk the flour, baking powder, salt, and cinnamon together in a large bowl. Set aside. In a medium bowl, whisk the eggs, brown sugar, vanilla, and milk. Pour the wet ingredients into the dry ingredients and whisk until no lumps remain.
Place a wire rack over a baking sheet. This is where the cakes can cool immediately after frying.
If using a funnel, cover the bottom of the spout with your finger as you pour the batter in. Measure about 1/3 cup of batter and pour into the hot oil, making one large swirl and making sure to connect some of the swirl layers. It doesn’t have to be pretty, it doesn’t have to be perfect! Fry until golden brown, about 1-2 minutes on each side. Carefully remove with a metal spatula or metal slotted spoon and place onto the wire rack to slightly cool. Repeat with remaining batter, then turn off heat.*
