CHOCOLATE FUDGE PEANUT BUTTER COOKIES

- Preheat oven to 375°. Reserve 1 can plus 1/3 cup frosting for topping cookies. In a large bowl, mix egg, peanut butter and remaining frosting until blended. Stir in flour just until moistened., Drop dough by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Flatten with a fork dipped in sugar., Bake until set, 7-9 minutes. Remove from pans to wire racks to cool completely. Spread with reserved frosting.

PEANUT BUTTER AND JELLY THUMBPRINT COOKIES
These cookies are great for kids of all ages. I usually double the recipe when I make them. Using a cookie scoop and soda bottle cap to make the indentations results in uniform cookies, which makes a nice presentation. But you can improvise with other lids; just aim for something about the size of a quarter. Use any variety of jelly, but I do not recommend jelly with chunks of fruit, like strawberry. Attempting to move the cookies prior to cooling completely will cause them to break.

Steps:
- Sift flour, baking soda, and salt together in a bowl.
- Beat butter, peanut butter, white sugar, brown sugar, and vanilla together in a separate bowl with an electric mixer until light and fluffy, 1 to 2 minutes. Scrape sides of bowl with a rubber spatula. Add egg to butter mixture and beat on medium speed until blended. Scrape side of bowl down again.
- Beat flour mixture into butter mixture on low speed until just blended. Scrape bowl and mix a few more seconds.
- Scoop dough into 2 tablespoon-sized balls and arrange on a baking sheet. Cover baking sheet and refrigerate at least 4 hours (overnight is ideal).
- Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper and arrange cookie balls atop paper.
- Bake cookies in the preheated oven until partially cooked, 11 minutes.
- Place raspberry jam in a bowl and stir until syrup consistency.
- Press a soda bottle cap into the center of each cookie until edges of cookies bulge and begin to crack, making an indentation. Fill each indentation with about 1 teaspoon jam.
- Bake cookies until edges are lightly browned, 7 minutes longer. Cool cookies completely on the baking sheet before transferring to a wire rack.

SOFT AND FUDGY PEANUT BUTTER COOKIES
These cookies weren't supposed to be! A Zaar chef, who shall remain nameless, ;) posted a recipe for a chocolate cookie with pb chips in it. But instead of listing butter as the first ingredient, she accidentally listed peanut butter. After I had mixed everything together, I knew something was wrong because I ended up with a bowl full of crumbs, not dough. To try and salvage the ingredients, I added the milk, left out the pb chips and formed them like traditional pb cookies. Thankfully, the resulting cookies were soft and tasty so I decided to share. :)

Steps:
- Place peanut butter and sugar in a large bowl and beat until thoroughly combined.
- Mix in the eggs and vanilla.
- Combine the flour, cocoa, baking soda and salt in a small bowl.
- Alternately add with the milk to the peanut butter mixture, mixing thoroughly. (How thick your peanut butter is will determine if you need more milk or not.).
- Roll into one inch balls and place on an ungreased cookie sheet about 2 inches apart.
- Use a fork to flatten with the traditional crisscross pattern of a peanut butter cookie.
- Bake at 350° for 8 minutes. Allow to cool on cookie sheet slightly before removing to a cooling rack.

CHOCOLATE FUDGE THUMBPRINT COOKIES
Karo recipe that adds chocolate to all those wonderful thumbprint cookies. I looked through all 'zaar had, but didn't see one with chocolate and using Karo corn syrup.

Steps:
- Preheat oven 325 degrees.
- Mix margarine, light brown sugar, and vanilla till smooth.
- Beat in 1/2 cup corn syrup and egg.
- Blend in 3 cups of flour and salt, adding more flour if necessary to make dough.
- You can refrigerate at this point for 48 hours.
- Roll dough into 1 inch balls, roll in nuts to coat.
- Place on ungreased sheet 2 inches apart. Press thumb into ball.
- Fill with prepared filling:.
- Warm 1/3 cup light corn syrup in saucepan or carefully in microwave.
- Add chocolate chips; heat and stir till melted and mixed.
- Let cool till you can handle it easily. Then put into pastry bag or sealable bag. (Cut SMALL snip from bottom corner).
- Fill hollow thumbprints with chocolate mix.
- Bake 10-12 minutes or till firm.
- Cool on wire rack.

- Heat oven to 350°F. Lightly spray large cookie sheets with CRISCO® Original No-Stick Cooking Spray, or line with cooking parchment paper.
- Reserve frosting packet from brownie mix. In large bowl, beat brownie mix, 1/2 cup peanut butter, the eggs and vanilla with electric mixer on low speed 20 seconds. Beat on high speed 30 to 40 seconds or until completely mixed. Stir in chocolate chips.
- Drop 24 heaping tablespoons of dough 2 inches apart onto cookie sheets. Press thumb into center of each cookie to make indentation, but do not press all the way to the cookie sheet (if dough sticks to thumb, spray thumb with cooking spray). Bake 9 to 11 minutes or until almost no indentation remains when touched. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 20 minutes.
- In small bowl, beat contents of reserved frosting packet, 1/3 cup peanut butter and the butter with electric mixer on medium speed until smooth. Fill each thumbprint indentation with 2 teaspoons frosting mixture, spreading slightly; sprinkle with peanuts. Let stand until frosting mixture is set. Store loosely covered in single layer.
