CHRISTMAS FRUITCAKE

It's a shame that fruitcake as a species gets such a bad rap. With its two key ingredients--rum and butter--it ought to be a hit. This recipe includes dried fruit, instead of the glowing, candied stuff we've all learned to associate with fruitcake, and is less dense and more cake-like than many fruitcake recipes. It has become a favorite of my friends and family around the holidays (even the skeptical ones), and is delicious by itself, or covered with a layer of almond paste.

⅛ cup chopped dried cherries
⅛ cup chopped dried mango
¼ cup dried cranberries
¼ cup dried currants
2 tablespoons chopped candied citron
¼ cup dark rum
½ cup butter
¼ cup packed brown sugar
1 egg
½ cup all-purpose flour
⅛ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ cup unsulfured molasses
2 tablespoons milk
¼ cup chopped pecans
¼ cup dark rum, divided

Steps:

  • Soak cherries, mango, cranberries, currants, and citron in 1/4 cup rum for at least 24 hours. Cover tightly, and store at room temperature.
  • Preheat oven to 325 degrees F (165 degrees C). Butter a 6x3-inch round pan or loaf pan and line it with parchment paper.
  • In a large bowl, cream together butter and brown sugar until fluffy. Beat in egg. Whisk together flour, baking soda, salt, and cinnamon; mix into butter and sugar in three batches, alternating with molasses and milk. Stir in soaked fruit and chopped nuts. Scrape batter into prepared pan.
  • Bake in preheated oven for 40 to 45 minutes. Cool in the pan for 10 minutes, then sprinkle with 2 tablespoons rum.
  • Cut out one piece parchment paper and one piece cheesecloth, each large enough to wrap around the cake. Moisten cheesecloth with 1 tablespoon rum. Arrange cheesecloth on top of parchment paper, and unmold cake onto it. Sprinkle top and sides of cake with remaining rum. Wrap the cheesecloth closely to the surface of the cake, then wrap with paper. Place in an airtight tin, and age for at least 10 weeks. If storing longer, douse with additional rum for every 10 weeks of storage.

5 eggs, separated
1/2 cup molasses
1/4 cup grape juice or 1/4 cup apple juice
1 cup butter
1 cup sugar
1 1/3 cups raisins
1/2 lb cut up candied pineapple
1/2 lb whole candied cherry
1 1/4 cups snipped dates or 1 1/4 cups any dried fruit
1/2 cup citron (optional)
1 orange, zest of
1 lemon, zest of
1 3/4 cups pecan pieces or 1 3/4 cups walnut pieces
2 cups flour
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon mace
1 teaspoon cinnamon
1 teaspoon baking soda

Steps:

  • Separate eggs.
  • Beat yolks with molasses and juice.
  • Cream butter and sugar.
  • Add yolk mixture to creamed mixture and blend.
  • Combine fruits and nuts; mix with 1 cup flour to coat.
  • Preheat oven to 325 degrees F.
  • Sift remaining 1 cup flour with spices.
  • and baking soda.
  • Beat egg whites until peaks form and fold into creamed mixture.
  • **Cut cooking time in half to 1 hour for loaf pans.
  • Gently stir in fruit/nuts and dry ingredients.
  • Pour into a 9" tube pan that has been well greased, lined with brown paper and greased again.
  • Reduce heat to 300 degrees F and bake for 2 hours.
  • Put on rack to cool.
  • Wrap in foil and store in a cool place.

Fruktkaka (Swedish Fruitcake .... Not Like American Fruitcake) image

This is a light cake, only distantly related to the dense, sticky American-style fruitcakes. Published in Saveur magazine, December 2009.

4 ounces dried figs, finely chopped
4 ounces dried apricots, finely chopped
4 ounces raisins, finely chopped
1/2 cup dark rum
1 tablespoon freshly grated orange zest
1 1/2 teaspoons freshly grated lemon zest
12 tablespoons unsalted butter, softened
1 3/4 cups flour
1 teaspoon baking soda
1 cup superfine sugar
4 eggs

Steps:

  • Combine the figs, apricots, raisins, rum, orange zest, and lemon zest in small bowl; cover with plastic wrap and let sit at room temperature for at least 4 hours or as long as overnight.
  • Heat oven to 350°F Grease the bottom and sides of a 12 1/4" x 4 1/4" x 2 3/4" loaf pan with butter and dust all over with flour; tap out excess flour and set aside.
  • Combine butter and sugar in a large bowl and beat with a handheld mixer set to medium speed until the mixture is pale and fluffy, 1-2 minutes. Add the eggs one at a time, beating well after each addition. Add the reserved fruit-rum mixture and the flour mixture and mix on low speed until just combined.
  • Transfer batter to prepared pan and smooth the top with a rubber spatula. Bake until a toothpick inserted into the middle of the cake comes out clean, 40-45 minutes. Unmold cake onto a wire rack and let cool completely before slicing.

This looks long but is simple...it's the best tasting fruitcake I have ever had and made. It originally came from Edith Adam's Homemakers Magazine in 1970.

1 lb salted butter
2 cups white sugar
4 cups all-purpose flour
6 ounces grape jelly (Welches)
1 ounce melted unsweetened chocolate
1 teaspoon baking powder
12 medium beaten egg yolks
1 medium orange, juice of
1 cup grape juice (Welches, OR 1/2 cup grape juice and 1/2 cup rum)
1/2 lb blanched slivered almond
1 lb pecan halves
3 lbs washed seedless raisins
1 lb washed sultana raisin
1 lb candied chopped pineapple
1 lb candied red cherries or 1 lb chopped cherries
1 lb green glazed cherries or 1 lb chopped cherries
1 lb candied citron peel, cut fine
12 medium egg whites, beaten stiff

Steps:

  • Baking times and pan sizes-- 4 x 4 pan takes 1 1/2 hours 6 x 6 pan takes 3 hours 8 x 8 pan takes 4 1/2 hours Preheat oven 275 degrees F.
  • Line cake pan set plus one extra with three layers brown greased paper.
  • Grease sides next to the batter.
  • Place a small dish of water in bottom of oven for steam and moisture.
  • Test by touching finger in centre of cake, if no dent press harder.
  • Cake should be firm to touch or slightly springy.
  • Method: Prepare almonds, soak overnight in the orange juice.
  • Prepare fruit, and soak overnight in the grape juice, sprinkle a little flour over the fruit.
  • Next Day-- cream butter at room temperature but not too soft.
  • Add white sugar gradually creaming until no grains are felt between fingertips.
  • Beat in the beaten egg yolks.
  • Blend well.
  • ALL STEPS MUST BE FOLLOWED AS GIVEN TO PREVENT BUTTER FROM OOZING OUT DURING BAKING.
  • Stir in the grape jelly and the melted cooled chocolate.
  • Blend in the flour, and baking powder.
  • Add the fruits in small amounts at a time, mixing well.
  • Add almonds, and pecans.
  • Fold in lastly the stiff beaten egg whites-- Pour into prepared pans and bake.
