FRUIT-SWEETENED BANANA BREAD
There's no refined sugar in this banana bread. The sweetness comes from the natural sugars in the bananas, raisins and dates.

Steps:
- Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
- Put the raisins and dates in a medium bowl, cover with very hot water and let soak until the fruit is very soft, about 25 minutes. Drain, then puree until smooth in a food processor, scraping the bowl frequently.
- Whisk together the flour, baking powder, cinnamon and salt in a medium bowl.
- Beat the butter in a large bowl with an electric mixer on medium-high speed until smooth. Add the raisin-date mixture, and beat until incorporated and smooth. Add the egg and egg yolk, vanilla and zest, and beat until incorporated. Lower the mixer speed to medium-low, and add half the flour mixture, then the milk, then the remaining flour mixture, stopping to scrape down the side of the bowl as needed (it's OK if there are some lumps). Fold in the bananas.
- Pour the batter into the prepared pan, and smooth the top with a spatula or the back of a spoon. Bake until the bread is golden brown and crisp and a toothpick inserted in the center comes out clean, about 1 hour. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

Steps:
- Preheat oven to 325º F.
- Mash the bananas until they are mostly lump-free.
- With a hand mixer, beat together the banana, applesauce, eggs, vanilla, and water until creamy.
- In a separate bowl, sift the flour, baking soda, baking powder, and spices.
- Gradually add the dry mixture to the wet ingredients, beating well.
- Pour the batter into a gently oiled and floured 9×5 inches loaf pan and spread evenly.
- Bake for 45 minutes or until a toothpick is inserted and comes out clean.
- Cool completely on wire rack before slicing.
SWEET BANANA BREAD
My mom gave me this recipe and it's nice and sweet. I normally use three medium-large sized bananas. Nuts can be added, if desired.

- In a small bowl, sift together flour, baking powder, baking soda, salt and vanilla pudding mix. In a large mixing bowl, beat sugar and shortening until light, scraping sides of the bowl often. Add the eggs one at a time, beating smooth after each addition. Mix in the milk.
- Add flour mixture and mashed bananas alternately to creamed mixture, beating until smooth after each addition. Fold in nuts if desired. Pour batter into a lightly greased 8x4 inch loaf pan.
- Bake in a cold, (non-preheated) oven set to 350 degrees F (175 degrees C). Bake for 50 minutes, then cover with foil to prevent burning and bake for additional 10 to 20 minutes or until toothpick inserted into the crown comes out clean. Leave in pan for 10 minutes, then remove from pan and cool.

FRUIT AND MOLASSES SWEETENED BANANA BREAD
This is a conglomeration of all the healthy/hippie Banana Bread versions I've read over the years. It's definitely inspired by the Laurel's Kitchen banana bread.

Steps:
- Preheat oven to 375.
- Butter your (pans). This will make a huge loaf of bread or a small loaf and six muffins.
- Add oats to yogurt and water. You could substitute 1 cup buttermilk here.
- Mix the flour, salt, baking soda, ginger, Herbs.
- Beat the eggs.
- In another bowl mash the bananas and add to the eggs.
- Cream the butter with the molasses. Add mixture to eggs/bananas.
- Dump applesauce, apple pulp, yogurt/oats and nuts to the wet mixture.
- Mix the wet with the dry as thoroughly as possible.
- Pour batter into pan(s).
- Sprinkle pumpkin seeds and a little more Herbs de provence on top.
- Bake at 375 for 45 minutes to an hour until inserted toothpick comes out clean.
