PERFECT SUMMER FRUIT SALAD
The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

Steps:
- Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
- Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

This is a recipe I have been making for years. My ex-mother-in-law gave it to me. It is easy to make and very good. A lot of time I leave out the fruit cocktail and add more of the other fruit and it is just as good.

- Mix sour cream & Cool Whip well.
- Drain pineapples, cherries, oranges & fruit cocktail. Add to sour cream & Cool Whip.
- Mix well.
- Add marshmallows mixing well.
- Smooth down, cover and refrigerate for at least 4 hours or overnight.

ONE CUP SALAD
This is a quick easy to make side dish that is always a hit at hoe-downs and hootenanys. One cup of each ingredient is added so it is easy to remember and fun to make with kids. If you are serving all the kin folk simply add two or three cups of each ingredient. Some folks also add whatever berries are in season to make it sweeter and more colorful for kids.
