A cookie dough crust, cream cheese filling, and fruit topping. Tip: For a quick crust, use one package of ready made sugar cookie dough rolled out to fit a pizza pan. Use an assortment of fresh fruit such as bananas, peaches, blueberries, kiwi, pineapple, and strawberries.

½ cup butter, softened
¾ cup white sugar
1 egg
1 ¼ cups all-purpose flour
1 teaspoon cream of tartar
½ teaspoon baking soda
¼ teaspoon salt
1 (8 ounce) package cream cheese
½ cup white sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
  • Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.
  • In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.
  • Arrange desired fruit on top of filling, and chill.

1/2 cup sugar
1 tablespoon cornstarch
1/2 cup unsweetened pineapple juice
1/4 cup water
2 tablespoons lemon juice
4 ounces cream cheese, softened
1/4 cup confectioners' sugar
1-3/4 cups whipped topping
12 sugar cookies (3 inches)
1 cup fresh blueberries
1 cup chopped peeled kiwifruit
1/2 cup chopped fresh strawberries

Steps:

  • For glaze, in a small saucepan, combine the sugar, cornstarch, pineapple juice, water and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Transfer to a small bowl; refrigerate until cooled but not set., In a small bowl, beat cream cheese and confectioners' sugar until smooth; fold in whipped topping. Spread over tops of cookies. Arrange fruit on top; drizzle with glaze. Refrigerate for 1 hour or until chilled.

Fruit Pizza Cookies. A mini version of the classic fruit pizza everyone loves! Soft sugar cookies with cream cheese frosting and colorful fruit toppings.

Number Of Ingredients 14

1 3/4 cups whole wheat pastry flour*
1/2 teaspoon baking powder (I recommend aluminum free)
1/8 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 cup unsalted butter ((1 stick), at room temperature)
3/4 cup granulated sugar
2 tablespoons light cream cheese
1 teaspoon pure vanilla extract
1/2 teaspoon freshly grated lemon zest
1 large egg (at room temperature)
7 ounces light cream cheese, (use the remaining cream cheese that you did not put in the cookies above)
1-2 teaspoons milk (any kind you like)
1/2 teaspoon pure vanilla extract
1 cup powdered sugar

Steps:

  • Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper or a silpat mat . In a medium mixing bowl, whisk together the whole wheat pastry flour, baking powder, baking soda, and salt. Set aside.
  • In the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl, cream together the butter, sugar, and cream cheese until light and fluffy, about 3 full minutes, stopping to scrape down the bowl as needed. Beat in the vanilla extract, lemon zest, and egg, stopping to scrape down the bowl again. With the mixer running on low speed, slowly add the flour mixture, beating just until incorporated.
  • With a small cookie scoop or spoon, scoop the dough by tablespoonfuls and roll into a ball. Place 2 inches apart on the prepared baking sheet. With your fingers, lightly press the cookie balls to a 1/4-inch thickness. If the dough is sticky, dampen your fingers slightly.
  • Bake the cookies for 9 minutes, until the edges barely begin to brown. Let cool on the baking sheet for 5 minutes, then gently transfer to a wire rack to cool completely.
  • Meanwhile, make the cream cheese frosting: In a medium mixing bowl, beat the cream cheese on medium speed for 2 minutes, until smooth. Reduce the mixer speed to low, beat in 1 teaspoon milk and vanilla extract until combined. With the mixer running gradually add the powdered sugar. Once the powdered sugar is incorporated, increase the mixer speed to high and beat for 1 full minute. Add additional milk, 1 teaspoon at at a time, if you desire a thinner frosting consistency.
  • Spread the frosting over the cookies, then top with fresh fruit. Enjoy!

1 tube (16-1/2 ounces) refrigerated sugar cookie dough
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

Almond extract makes all the difference in this updated version of the traditional fruit pizza. Kiwi makes the topping completely fresh and adds beautiful color. Use low-fat cream cheese for a slightly lighter version. Any clear juice (apple, pear, peach, etc.) may be substituted for the pineapple.
