BLUEBERRY AND RAISIN JAM



Blueberry and Raisin Jam image

I had a overabundance of blueberries but I couldn't find a recipes I liked so I tried something new and made this very tasty jam. Enjoy!

12 ounces raisins
½ cup orange juice
4 pints fresh blueberries
1 (1.75 ounce) package powdered low-sugar pectin
4 cups white sugar

Steps:

  • Blend raisins and orange juice in a blender or food processor until smooth; transfer mixture to a pot. Blend blueberries in blender or food processor until pureed; add to raisin mixture. Stir pectin into fruit mixture and bring to a boil. Mix sugar into fruit mixture; boil, stirring often, until sugar is dissolved, about 5 more minutes.
  • Sterilize the jars and lids in boiling water for 10 minutes. Pack the jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool dark area.

2 cups whole wheat flour
1 ½ cups rolled oats
1 cup cold butter, cubed
½ cup brown sugar
½ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon kosher salt
4 apples - peeled, cored, and sliced
5 cups fresh blueberries
¼ cup brown sugar
¼ cup white sugar
2 tablespoons whole wheat flour
1 lemon, juiced and zested
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with butter.
  • Beat 2 cups whole wheat flour, rolled oats, butter, 1/2 cup brown sugar, 1/2 cup white sugar, 1 teaspoon cinnamon, and 1/4 teaspoon kosher salt in a bowl with an electric mixer on medium speed until the mixture is pea-size and crumbly, 3 to 5 minutes. Refrigerate until ready to use.
  • Combine apples, blueberries, 1/4 cup brown sugar, 1/4 cup white sugar, 2 tablespoons whole wheat flour, lemon juice and zest, 1 teaspoon cinnamon, and nutmeg in a large bowl; transfer to prepared baking dish. Sprinkle crumble mixture over fruit mixture.
  • Bake in preheated oven until topping is browned and fruit is bubbly, 35 to 45 minutes.

1 can (8 ounces) unsweetened crushed pineapple, drained
1 package (12 ounces) frozen unsweetened blueberries
1/2 cup sugar
1 package white cake mix (regular size)
2/3 cup butter, melted
1 cup chopped walnuts
1/2 cup sliced almonds

Steps:

  • Preheat oven to 350°. Mix pie filling and pineapple in a greased 13x9-in. baking dish until combined. Toss blueberries with sugar; spoon over pie filling mixture. Sprinkle with cake mix; drizzle with butter. Top with walnuts and almonds (do not stir)., Bake until golden brown and bubbly, 45-55 minutes. Serve warm.

2 cups all-purpose flour, plus additional for rolling dough
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup cold unsalted butter, cut into small pieces
1/4 cup ice water, as needed
1/2 cup raisins
1/2 cup rum
1 (21-ounce) can prepared apple pie filling
1 (3-ounce) package strawberry flavored gelatin (1/2 cup)
2 tablespoons prepared vanilla icing, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • To make the crust: Sift the flour, sugar, salt, and cinnamon into a medium-size mixing bowl. Using a pastry cutter or your fingers, work the butter into the flour mixture until coarse crumbs form. Mixing with a fork, add ice water, 1 tablespoon at a time, just until the dough holds together. Press the dough into a ball and divide in 1/2. Flatten each piece into a disk, wrap in waxed paper and refrigerate for 1 hour.
  • To make the filling: Put the raisins in a medium-size bowl and pierce them with a fork so they will soak up the rum. Pour rum over raisins and let stand at least 1 hour. Strain, return raisins to the bowl and stir in pie filling. Set aside.
  • On a lightly floured surface, roll out 1 piece of dough and fit it into a 9-inch pie plate. Pour in the filling and sprinkle the gelatin over the top. Roll out the remaining dough, fit it over the top of the pie, pinching the edges together to seal. Trim and crimp the edges. Pierce the top of the pie in a few places with a fork to make steam vents.
  • Bake for 10 minutes and then reduce oven to 325 degrees F. and bake until crust is browned, about 45 minutes. Place on a rack to cool. If using icing, heat it in the microwave just until melted, then drizzle over the pie. Cut into wedges and serve.

1 1/2 T dark rum
1 tsp salt
1/6+ C raisins (Golden preferred)
1/3 C packed light brown Splenda
1 1/2 C all-purpose flour
1/2 tsp lemon zest, finely grated
1/4 tsp cinnamon
1/16 tsp ground nutmeg
1/16 tsp salt
3 apples, medium (1 1/4 lbs), medium to sweet
BLUEBERRY
1/3 C Splenda
1/6 ( 3/4 oz) all-purpose flour
3 1/2 tsp lemon zest, finely grated
Lemon juice from 1/2 lemon
1 T cornstarch
salt, small pinch
3 C (15 oz) blueberries, rinsed and dried

Steps:

  • APPLE 1. Bring rum and raisins to a boil in a heavy medium sauce pan. Remove from heat and let stand, covered, for 1 hour. 2. Rub together with your fingers, in a bowl, brown Splenda, flour, zest, nutmeg and salt until no bumps remain. 3. Peel and core the apples, then cut into 1/2" wedges. Add to the Solenda mix, tossing gently to mix. Add the raisnis, with any fluid and mix until combined. Set aside in refrigerator. BLUEBERRY 1. Measure out 1 1/2 cups of the blueberries, choosing the softest, and placing them in a sauce pan with 1/2 cup of water. Cover and bring to a boil. 2. Meanwhile, in a small bowl, mix together the corn starch and 1/4 cups of water. Set aside. 3.When the blueberries have come to a boil, lower the heat and simmer, stirring constantly for 3-4 minutes or until the start to burst and the juuices have begun to thicken. Stirring constantly, add the cornstarch mixture, Splenda, lemon juice and salt. Simmer a minute or two until the mixture becomes translucent. Immediately remove from the eat and stir into the berries. Set aside in refrigerator.

VelvetineNut asked me to post this--it's hardly a recipe and the quantities listed are estimates. The result is wonderful--plump juicy raisins that add incredible flavor to cakes, cookies, fudge, bread pudding, etc. And, there's a bonus--the resulting syrup is delicious. They keep forever and you can just keep adding raisins and/or liquor as needed. Prep time does not include the time you let the raisins soak.

2 cups raisins
1 1/4 cups Bourbon

Steps:

  • Find a mason jar or other glass container with a tight-fitting lid.
  • Place the raisins in the jar.
  • Pour the bourbon (I use Maker's Mark)over the raisins--enough to cover them.
  • Give them a shake and close up the jar.
  • Let it sit in your cupboard for a few days (although after just a few hours the raisins will begin to plump), inverting the jar occasionally to make sure all the raisins are getting coated.
  • Voila!
  • For bourbon or dark rum, I suggest dark raisins.
  • For white rum, I suggest golden raisins.
