Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x9 inch square baking pan.
- Combine the flour, white sugar, egg, baking soda, vanilla and undrained fruit cocktail. Mix until blended. Pour batter into the prepared pan and sprinkle the top with the brown sugar.
- Bake at 350 degrees F (175 degrees C) for 40 minutes or until golden brown and firm.

BANANA NUT BREAD BAKED IN A JAR
This makes a great gift for friends and neighbors. Also great for Christmas Bazaar item. Decorate with pretty label and a circle of Christmas fabric under the jar ring. Using the same basic recipe you can substitute different fruits and vegetables to make other varieties.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease insides of 8 (1 pint) straight sided, wide mouth canning jars.
- In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs, bananas, and water. Sift together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.
- Pour mixture into greased WIDE MOUTH pint jars, filling 1/2 full of batter. Do NOT put lids on jars for baking. Be careful to keep the rims clean, wiping off any batter that gets on the rims.
- Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
- As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
- Jars should be eaten immediately or kept sealed in refrigerator for up to a week.

- Mix cream cheese, butter, sugar, eggs and vanilla until fluffy.
- Fold in flour and baking powder until just mixed.
- Stir in fruit cocktail.
- Pour into 2 greased and floured 9x5 inch loaf pans.
- Bake at 325 for 1 hour.
- Cool 10 minutes in pans; then remove from pans and finish cooling on wire rack.
- May drizzle with powdered sugar icing when cool.

CRANBERRY WHITE CHOCOLATE QUICK BREAD MIX IN A JAR
A moist and delicious quick bread mix for gift giving! Nothing says "I love you!" better than a gift from the kitchen. And especially one that fills the house of your recipient with the aroma of sweet, fresh baked bread. The dry ingredients are layered in a quart-sized jar and the jar can be decorated in any number of ways to reflect the occasion. Be sure to attach a recipe card or an embellished tag, to the jar, with the recipe, additional ingredients needed and baking instructions. Prep time includes putting together the gift jar as well as combining the wet ingredients before baking.

- To make the gift jar: Sift together the flour, baking powder and salt and then spoon into a quart-sized jar with a tight-fitting lid. (I use a wide-mouth funnel to easily get the ingredients into the jar.) Tap the jar gently on the counter top to settle the flour.
- Combine the sugar, cinnamon, nutmeg and ginger and pour over the flour in the jar.
- Continue the layers with the dried cranberries, then the white chocolate chips and finally the pecans. Put the lid on the jar and decorate as desired.
- To make bread: Preheat oven to 350°F and lightly grease a 9x 5 loaf pan.
- Pour all the dry ingredient from the jar into a large mixing bowl and stir to combine.
- In a small bowl, use a fork to beat the eggs lightly and then add the sour cream. Continue mixing with the fork until the sour cream is incorporated.
- Add the melted butter to the dry ingredients and then add the egg and sour cream mixture. Stir just until combined.
- Spread into prepared loaf pan and bake in preheated oven for 50 minutes, or until toothpick inserted near center comes out clean.
- Cool 10 minutes in pan and then turn out onto a cooling rack (with a layer of foil or waxed paper under the rack, to keep your counter clean.).
- Stir together powdered sugar and milk until smooth. Drizzle or spread over top of loaf. Serve immediately or cool completely before slicing, to keep the slices looking nice.

- 1. Mix all but the fruit cocktail together and place in baggy. Put into the jar. Add the snack size fruit coctail in the package. Close lid and decorate and attach a tag
- 2. Fruit cocktail Bread (you bake in the jar) Remove contents of the jar. drain fruit reserving the juice. add 1 egg 1 tablespoon oil and the fruit cocktail. add 1 tablespoon reserved juice. Mix well. Spray the inside of the jar with cooking spray. place batter in jar and place jar in a smakk baking dish to stableize. do not put lid on jar. Bake at 350 for 35 minutes or until done. Remove from oven and cool 10 minutes. Run knife around jar to loosen and slide the bread out. slice and serve.
