FRUIT COBBLER
My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

Steps:
- Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.
- Stir together flour, sugar, salt, and baking powder. Mix in milk and vanilla. Pour batter over melted butter. DO NOT MIX OR STIR. Spoon fruit with juice over the batter. DO NOT MIX OR STIR.
- Bake at 350 degrees F (175 degrees C) for 55 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish.
- Cut crust from bread slices, and cut each into 4 or 5 strips. Spread fruit into prepared pan, and cover with a layer of bread strips.
- Beat together butter, sugar, and flour; mix in egg. Pour mixture over the fruit and bread.
- Bake in preheated oven for 35 to 45 minutes, or until golden brown.

PEACH COBBLER BREAD
I developed this recipe to take advantage of our wonderful Georgia peaches. My husband, Andy, says it tastes just like peach cobbler.

- In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in water and extracts. Stir in peaches. Combine flour, baking soda, salt and baking powder; gradually add to the creamed mixture. Stir in pecans. , Pour into a greased 9x5-in. loaf pan. Combine topping ingredients; sprinkle over batter. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
- Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
- Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

FRUIT COBBLER BREAD
Many years ago when I first started working in the grocery business one of our bakers made a bread similar to this and I loved it.I have come up with my own version that everyone simply loves and I get many requests for.Though fruit pies are generally used in this bread I have tried it with pumpkin pies as well as chocolate silk and pecan.Anything that is not a cream pie will work well I think.

- Place frozen bread dough loaves in a well greased bowl,cover with plastic wrap and then a clean kitchen towel.Allow to thaw for about 2 hours,(It does not need to rise,just thaw.)When it is thawed,remove from bowl and place on floured surface.With a large knife or bench scraper begin to chop dough into small(roughly 1 inch) pieces.Add in eggs.cinnamon sugar and cut up pie pieces as you go along until everything is well combined.Transfer equally between two 9x5 inch loaf pans that have been liberally sprayed with nonstick baking spray.Cover pans with plastic wrap and allow to rise in a warm place until double in size.Remove plastic wrap and place pans in 350 degree pre-heated oven.Bake for 40 to 50 minutes or until loaves are golden brown on top.Remove from oven to wire rack and allow to cool 15 minutes before removing from pan.While waiting for the bread to cool prepare the glaze for topping.Combine confectioners sugar,vanilla and enough milk to reach a slightly thick consistency desirable for drizzling over bread.Allow glaze to set up a bit before slicing.Makes 2 loaves
MAMA'S FRUIT COBBLER
Fast and easy. Very unusual topping made with bread- but you can't tell! Use whatever fruit you would like. My family says this is THE best cobbler EVER! I like it bc it is made with things that I always have on hand and can be thrown together in minutes yet it looks pretty enough to serve company.

- Mix first 4 ingredients together and set aside.
- Place drained fruit in a buttered 8x8 pan and top with bread strips.
- Pour sugar mixture over bread and fruit and sprinkle with cinnamon if desired.
- Bake at 350 degrees for 35-45 minutes or until golden brown.
- Great topped with ice cream or whipped cream on top.
- Note: I dont usually measure the fruit, I just fill the bottom of the pan. Frozen fruit that has been partially defrosted works great as does soft fresh fruit- harder fruits such as apples or pears should be precooked until softened for best results. Drained canned fruit works great for this too. One large can (29 oz) is a perfect amount.

Steps:
- Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
- Mix flour, sugar, and milk.
- When your butter is melted pour your mixture into pan directly on top of butter.
- Place peach/fruit slices into pan on top of cobbler.
- Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
- Serve hot with ice cream if you wish.
- I put 8-10 on the servings it depends on the size of the servings.

Never use more than 1 quart of fruit. Only use fresh fruit for this recipe. Any variation will work! I usually do use sweetened peaches and lightly sugared berries, but this is optional. Serve warm with cream, ice cream, or whipped cream.
