ICE CREAM SUNDAE WITH HOMEMADE CARAMEL SAUCE



Ice Cream Sundae with Homemade Caramel Sauce image

1 quart coffee ice cream, softened
1/2 cup chopped salted peanuts
Cookies 'n' Cream Crumbs, for sprinkling, recipe follows
Caramel Sauce, for drizzling, recipe follows
Whipped cream, for topping
1 package (36 cookies) chocolate sandwich cookies, such as Oreos
1 stick (1/2 cup) butter, melted
1 cup packed dark brown sugar
1/2 cup (1 stick) unsalted butter, cut into pats
1/2 cup heavy whipping cream
Pinch kosher salt

Steps:

  • Spoon two large scoops of ice cream into each of four dessert bowls. Divide the chopped peanuts between the bowls; then sprinkle each with some cookie crumbs, drizzle with some caramel sauce, and top with a dollop of whipped cream. Serve.
  • Preheat the oven to 350 degrees F.
  • Add the sandwich cookies to a food processor and pulse to coarse crumbs. Spread the crumbs out evenly on a baking sheet and drizzle with the melted butter. Bake for 10 minutes. Let cool completely. Use crumbs as an ice cream topping, for crunch.
  • Combine the brown sugar, butter, cream and salt in a medium saucepan. Stirring constantly, bring to a simmer over medium heat and cook until the mixture is smooth and saucy, about 5 minutes.

1/2 cup Kahlúa liqueur
2 teaspoons instant espresso powder
1/2 cup whipping cream
Vanilla frozen yogurt
Sliced toasted almonds

Steps:

  • Combine first 3 ingredients in heavy medium saucepan over medium heat and stir until espresso powder dissolves (mixture will be grainy). Increase heat to medium-high and bring to boil. Boil 5 minutes, stirring frequently. Add cream and stir until smooth. Cool 10 minutes; do not stir. Scoop frozen yogurt into bowls. Spoon sauce over. Sprinkle with almonds and serve.

FROZEN BROWNIE SUNDAES



Frozen Brownie Sundaes image

Vegetable oil cooking spray
2 tablespoons water
1/4 cup vegetable oil
1 large egg, at room temperature
1 3/4 cups brownie mix (recommended: Duncan Hines Dark Chocolate Fudge)
1/2 cup semisweet chocolate chips
2 (1.4-ounce) milk chocolate-toffee candy bars, coarsely chopped (recommended: Heath or Skor)
1 pint dulche de leche or caramel ice cream (recommended: Haagen-Dazs), softened
1/3 cup heavy whipping cream
1 3/4 cups milk chocolate chips
1 (12-ounce) bag frozen strawberries, thawed
1/3 cup powdered sugar
1 teaspoon fresh lemon juice

Steps:

  • Brownie layer: Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Spray an 8 by 8-inch glass baking pan with vegetable oil cooking spray. Line the pan with parchment paper, allowing 2 inches of paper to overhang the sides. Set aside. Spray the parchment paper with vegetable oil cooking spray.
  • In a large bowl mix together the water, oil and egg. Add the brownie mix and stir until blended. Stir in the chocolate chips and candy bar pieces. Transfer the batter to the prepared baking pan. Bake until a toothpick inserted into the center of the brownies comes out with a few moist crumbs attached, about 20 to 25 minutes. Remove the pan from the oven and cool the brownie layer completely in the pan, about 1 1/2 hours.
  • Ice cream layer: Using a spatula, spread the softened ice cream on top of the brownie layer and freeze until firm, about 4 hours or overnight.
  • Chocolate layer: In a small saucepan, heat the cream over medium-low heat until hot but not boiling. Remove the pan from the heat and add the chocolate chips. Stir until the chocolate has melted and the mixture is smooth. Using a spatula, spread the chocolate mixture over the ice cream layer. Freeze for at least 1 hour or until ready to serve.
  • Sauce: Put the strawberries, sugar and lemon juice in a blender and blend until smooth.
  • To serve: Remove the layers from the pan and peel away the parchment paper. Cut the layers into squares and drizzle with the strawberry sauce.

CARAMEL YOGURT

1 quart plain whole-fat yogurt, homemade or manufactured with milk and cultures only (do not use yogurt with stabilizers or Greek yogurt, which is already drained)
1/2 cup sugar
Pinch of salt
Ground cardamom, cinnamon or grated lemon zest for garnish (optional)

Steps:

  • Place yogurt in a fine-meshed strainer or colander lined with cheesecloth. Place strainer over a bowl and drain for at least 3 hours, or overnight. Reserve all liquid in bowl: this is whey. There should be about 2 cups firm drained yogurt. If necessary, return enough whey to yogurt to make 2 cups.
  • In a medium saucepan, place sugar, salt and 1 cup whey. Bring to a boil, reduce heat to medium and cook, stirring frequently; adjust heat as needed so mixture does not boil over. Cook until liquid boils off and remaining syrup becomes deep brown, 20 to 30 minutes. Remove from heat.
  • Add 2 tablespoons whey to pot and stir to blend well. If mixture is too thick to stir, add another tablespoon of whey. Allow caramel to cool slightly, stirring frequently to make sure it remains fluid. (If caramel stiffens too much to stir, place over a pot of hot water and stir until fluid again.) Add 1/4 cup yogurt to pot and stir vigorously to blend. Add remaining yogurt and stir to blend fully.
  • Transfer to a covered container and refrigerate until chilled, at least 30 minutes. If desired, serve garnished with a sprinkling of cardamom, cinnamon or grated lemon zest.

What a wonderful and quick finish to any meal. Warm caramelized bananas spooned over melting vanilla ice cream or vanilla frozen yogurt, drizzled with hot chocolate sauce and sprinkled with toasted walnuts. Top it off with a maraschino cherry and you are all set. Note: If you don't have Kahlua you use the sub listed in the Kitchen Dictionary: 1/2 - 1 tsp chocolate extract + 1/2 - 1 tsp instant coffee dissolved in 2 tbsp water = 2 tbsp Kahlua.

1 1/2 firm bananas (Green tipped works best.)
1 lemon, juice of
1 tablespoon unsalted butter
2 tablespoons brown sugar
1 1/2 cups vanilla frozen yogurt or 1 1/2 cups vanilla ice cream
1/8 cup walnuts, toasted and chopped
4 maraschino cherries
1/4 cup semi-sweet chocolate chips
1/8 cup half-and-half
1/4 teaspoon cinnamon
1 teaspoon Kahlua

Steps:

  • Peel and slice the bananas into 1/4 inch diagonal slices. Place cut bananas in a shallow dish and toss with lemon juice.
  • Melt the butter and brown sugar in a heavy skillet and cook on medium high heat for one minute or until butter is melted. Stir in the bananas tossing to coat. When bananas are nicely glazed remove from heat.
  • Place the chocolate chips and half-and-half in a microwave safe measuring cup. Microwave for 20 seconds, stir and microwave again for 10 to 20 seconds if needed. Stir until smooth. Add cinnamon Kahlua or Kahlua substitute.
  • Place a scoop of vanilla ice cream in an ice cream dish, top with the warm bananas spooning any of the brown sugar glaze over each individual serving. Drizzle with chocolate sauce and sprinkle with toasted chopped walnuts. Garnish each with a maraschino cherries.

  • Scoop frozen yogurt into balloon-shaped glasses or sundae dishes. Spoon lukewarm sauce over. Top with fruit and serve immediately.

  • In a saucepan over medium high heat, cook the sugar until it starts to melt on the bottom. During this step, you need to stir it pretty continuously so it doesn't burn. While stirring, the sugar will stick together and form hard clumps/shards.
  • At this point, you don't have to stir AS much because you want the sugar to get hot enough to melt and turn a golden brown color. So stir the sugar, give it a moment, and then stir again. And when I say "moment," I don't mean walk away and come back. Just stand there and give it a second. Then stir again, repeating this process until all the clumps are melted and the sugar has turned golden brown. Reduce heat to medium.
  • Stirring continuously with one hand, add the butter with the other. Because the butter is colder than the caramel, the mixture will bubble and sizzle quite a bit. But just keep stirring!
  • Once all the butter has completely melted, still continuously stirring, slowly pour in the Kahlua. The mixture will sizzle even more than before. I kind of added a little Kahlua, stirred until it stopped sizzling, added some more, and so on until all the Kahlua was added.
