UNICORN HOT CHOCOLATE
This rich, pink-hued hot drink is made from white chocolate and milk, topped with rainbow-dyed whipped double cream, sweets and sprinkles.

Steps:
- Whip up the double cream (if using) until it just holds its shape - it should be the consistency of crème fraîche. Then, if you like, stain the inside of a disposable piping bag with different gel food colourings using a skewer to drag a tiny streak of colour from the bottom of the bag to the top.
- To make the hot chocolate pour the milk into a small pan and heat until simmering, stirring to stop it scorching. Take the pan off the heat and add the white chocolate then stir until the chocolate has fully melted. Add food colouring to turn the mixture pastel pink then pour into 2 mugs or heatproof glasses.
- To decorate fill the prepared piping bag with the whipped cream then snip off the end to create a wide tip. Pipe mounds of the cream on top of the hot chocolate and scatter over sprinkles and coloured sweets if you like.

FROZEN HOT CHOCOLATE
Oprah recently featured this treat as one of her favorite things. I ordered the mix from Serendipity in NYC. The food editor from our local paper went in search of the recipe after numerous requests from readers and here it is--straight from Serendipity 3 restaurant. When my mix arrives, I'll let you know how this recipe compares to the real deal.

Steps:
- Chop chocolate into small pieces and place in top of double boiler over simmering water, stirring occasionally until melted.
- Add chocolate mix and sugar, stirring constantly until thoroughly blended. Remove from heat and slowly add 1/2 cup milk, stirring until smooth.
- Cool to room temperature.
- In blender, place the remaining 1 cup milk, room-temperature chocolate mixture and ice.
- Blend on high speed until smooth and the consistency of a frozen daiquiri. Pour into a giant goblet and top with whipped cream and chocolate shavings.
- Enjoy with a spoon or a straw.
ULTIMATE FROZEN HOT CHOCOLATE
Eureka! I found the perfect frozen hot chocolate for me. I have actually had Serendipity's frozen chocolate. I also have tried Big Train's frozen hot chocolate. These are my two favorite commercially available frozen hot chocolates. I have tried several frozen hot chocolate recipes, but none had the "ice creamy" taste that both of them had and not as "chocolatey" as I would have like. This is even my second version of Frozen Hot Chocolate that I have posted here. My most recent experiment was Mamafoodie.com's version which was very different from other recipes and very satisfying, but for me was almost there. She confessed that she wanted it less chocolatey than Serendipity's. This is my adaptation of her recipe with a few changes of my own. For me, I think the secret ingredient is heavy cream, which now I'm thinking we avoid using in trying to be healthy and are just afraid to go there. In the future, I may try to omit the white chocolate and butter to lessen fat content, and see how that tastes, but for now, I think this is it for me. My search is done. Please note that cooking and prep times do not include the time it takes for the batch to cool to room temperature prior to blending with ice.

Steps:
- In microwavable container, melt butter.
- Combine cocoa and sugar with the butter to make a paste.
- Add semi-sweet chocolate chips, white chocolate chips and 2/3 cup of the heavy cream to the cocoa/sugar/butter mixture.
- Microwave on HIGH for 1 minute, stir, and microwave again for intervals of 20 seconds until chocolate chips are fully melted and fully incorporated. Be careful not to burn chocolate.
- Add remaining heavy cream to chocolate mixture and stir.
- Cool mixture to room temperature.
- Pour mixture and ice into blender and blend until smooth. (I actually do this in two batches to make it easier to blend and due to the size of my blender.).
- Add milk if necessary to help blend if chocolate ice mixture is too thick to blend in blender.
- Enjoy!

CHILL OUT FROZEN HOT CHOCOLATE
We serve this in our ice cream parlor and it's very popular. I know there's another frozen hot chocolate recipe here, but this one is different, as it's made with hot cocoa mix.

Steps:
- Pour milk into blender.
- Add hot cocoa mix and ice.
- Blend first at low speed and then high speed until ice is finely crushed and slushy.
- Pour into tall glass and top with whipped cream and a dusting of hot cocoa mix, if desired.
- Serve with a straw and enjoy!
- P.S. This recipe was originally posted using small ice cubes. At our shop we have a commercial blender that has no problem getting through these. Since most people have regular blenders, I have changed it to crushed ice.

- Add Hot Chocolate Powder and Sugar to Melted Chocolate, stirring constantly, until well blended.
