Pronounced 'froo-toh-sah-LAH-tah' in Greek, this recipe combines a handful of favorite fruits for a summertime treat! Served with a favorite cheese, it makes for a refreshing end-of-meal dessert or for a wonderful mid-day snack!

Steps:
- Wash apples & pears [& peel, if desired], then core & cut into fairly small pieces, & place in large salad bowl.
- Peel nectarines, bananas & kiwi fruits & cut into fairly small pieces, as well, & add to other fruit pieces.
- Mix orange Juice & honey & pour over fruit, then toss to coat.
- Refrigerate at least an hour before serving.

FROUTOSALATA - MIXED FRUIT SALAD
Steps:
- Wash and peel apples.
- Using a sharp knife cut the apple in half through the center. Cut each half in half. Remove the core from each quarter and then slice each quarter into thin slices.
- Peel oranges. Remove as much of the pith as possible.
- While holding the orange firmly on a cutting board carefully cut the orange into rounds using a sharp knife.
- Arrange slices of apples and oranges on serving dish.
- In a small bowl combine honey and orange juice. Pour mixture over arranged fruit slices and sprinkle with cinnamon. Enjoy!

- 1. Note: 1. To avoid any pesticides or chemicals fruit has now a days it is advised to peel all fruits. Except, of course if you buy from your local farmers market & they're really fresh . 2.Feel free add any other fruit you may like.
- 2. Wash and peel all the fruit. Cut into fairly small pieces. Place in a large salad bowl. Mix orange juice and honey and pour over the fruit. Toss and refrigerate for at least 1 hour before serving with feta, cottage cheese or any other cheese you prefer. Serve in individual bowls. Enjoy!!!

- Heat the oven to 400°F Lightly butter a large Pyrex or ceramic baking dish that can hold the sweet potato wedges in one layer.
- In a small saucepan, melt the butter. Whisk in the honey, orange juice, and spices. Put the sweet potatoes in the buttered baking dish, add the honey mixture, and toss the pieces well to coat them thoroughly. Arrange the sweet potatoes in a single layer; sprinkle with salt and pepper.
- Roast until the potatoes are browned and tender and the juices are bubbly and thickened, 45 to 55 minutes. To ensure even roasting, stir and baste several times with the pan juices, doing so more frequently toward the end of roasting. Serve at once.

The night before serving, I combine the oranges, pineapple, grapes and strawberries in a large plastic bag, then refrigerate until ready to serve. - Greast 12" tart pan with removable bottom.
- Preheat oven to 300.
- Whip together cream cheese, flour and eggs. Set aside.
- Chop finely, process, or grate: red onion, garlic, zucchini, chanterelle mushrooms, yellow sweet pepper, and fresh basil leaves.
- Place mixture into a cloth napkin and squeeze out all excess moisture. Then place mixture into large mixing bowl.
- To the cream cheese mixture, add 8 more eggs, the grated Swiss cheese, salt and white pepper. Whip together well.
- Add cheese-and-egg mixture to mixing bowl of chopped vegetables. Blend well. Pour batter into the prepared pan.
- Bake at 300 for 1 hour. Just before the Frittata comes out of the oven, prepare the sauce.
- DIJON-HOLLANDAISE SAUCE:.
- In a double boiler, whip egg yolks and lemon juice until mixture has a custard-like consistency. Add salt, white pepper, and cayenne pepper.
- In a separate pan, melt butter, then add it very slowly, a few drops at a time, to the egg uolk mixture, whipping constantly.
- Add mustard, blend well.
- Top Frittata with Dijon-Hollandaise Sauce.
