1 package (8 ounces) fat-free cream cheese
1 tub (.5 ounce) sugar-free lemonade soft drink mix
1 cup cold fat-free milk
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 carton (8 ounces) frozen fat-free whipped topping, thawed
10 sugar-free lemon sandwich cookies, crushed
1 reduced-fat graham cracker crust (9 inches)
Lemon slices and fresh mint leaves, optional

Steps:

  • Beat cream cheese and drink mix until smooth. In another bowl, whisk milk and pudding mix 1-1/2 minutes (mixture will be very thick). Beat into cream cheese mixture. Beat in a third of the whipped topping. Fold in remaining whipped topping. , Reserve 3 tablespoons cookie crumbs; fold remaining crumbs into cream cheese mixture. Spoon into crust, spreading evenly. Sprinkle with reserved crumbs., Freeze, covered, until firm, 4-5 hours. Remove from freezer 15-30 minutes before serving. If desired, top with lemon slices and mint.

Deliciously cool and creamy lemon pie is the perfect summer dessert made with only 7 simple ingredients.

11 (about 160g) full-sheet graham crackers
1/2 cup (62g) salted almonds (I used roasted)
2 Tablespoons (25g) granulated sugar
5 Tablespoons (71g) unsalted butter, melted
2 (14-ounce) cans full-fat sweetened condensed milk
3/4 cup (180ml) fresh lemon juice (about 4 lemons)
4 large egg yolks*
garnish: lemon zest, lemon slices, almonds, whipped cream, or meringue topping

Steps:

  • Preheat oven to 350°F (177°C).
  • Using a food processor, pulse the graham crackers and almonds together into crumbs. A few larger pieces of nuts is OK. Pour into a medium bowl and stir in the sugar. Add the melted butter and stir until combined. The mixture will be thick, coarse, and sandy. Try to smash/break up any large chunks. Pour the mixture into an ungreased 9-inch pie dish. With medium pressure using your hand, pat the crumbs down into the bottom and up the sides to make a compact crust. Do not pack down with heavy force because that makes the crust too hard. Simply pat down until the mixture is no longer crumby/crumbly. Tips: You can use a small flat-bottomed measuring cup to help press down the bottom crust and smooth out the surface, but do not pack down too hard. And run a spoon around the bottom "corner" where the edge and bottom meet to help make a rounded crust⁠-this helps prevent the crust from falling apart.   • Pre-bake crust for 8 minutes. Remove from the oven and leave the oven on.
  • Whisk the sweetened condensed milk, lemon juice, and egg yolks together. Pour into warm crust.
  • Bake the pie for 19-21 minutes or until only *slightly* jiggly in the center. You want it mostly set. Remove from the oven and allow to cool completely on a wire rack. Once cool, cover and chill for at least 1 hour (and up to 3 days) before serving.
  • Garnish as desired. Store leftovers in the refrigerator for up to 1 week.

TRIPLE LEMON PIE

1 (15-ounce) box unroll and bake pie crusts (recommended: Pillsbury)
1 (4.3-ounce) box lemon pudding mix (recommended: Jell-O cook and serve)
4 egg yolks
1/4 cup sugar
3 cups lemonade
2 teaspoons lemon zest, finely grated
Fresh berries and whipped topping, for serving

Steps:

  • Preheat oven to 350 degrees F.
  • Follow package instructions for unrolling pie crusts. Press the dough into a 9-inch tart pan, cut off any overhang. Prick bottom and side of crust with a fork. Bake on baking sheet in preheated oven for 15 minutes, or until golden.
  • While pie crust is baking, whisk together pudding mix, egg yolks, sugar, lemonade and lemon zest until pudding mix is dissolved. Pour into a medium saucepan and bring to full boil over medium heat, stirring constantly (about 10 minutes). Let cool 5 minutes, stirring occasionally.
  • Pour the filling into cooled tart shell topping. Let cool completely in refrigerator until set.
  • Serve with fresh berries and whipped topping.

FROZEN LEMONADE PIE

2 cups graham cracker crumbs
1/4 cup granulated sugar
7 tablespoons butter, melted
One 14-ounce can sweetened condensed milk, chilled
One 12-ounce container whipped topping, thawed
One 6-fluid-ounce can frozen lemonade concentrate, unthawed
1 teaspoon candied lemon peel, for garnish

Steps:

  • For the crust: Preheat the oven to 350 degrees F.
  • In medium bowl, stir together the cracker crumbs, sugar and the melted butter until combined and resembles a wet sand mixture. Pour into a pie plate and press the mixture firmly along the bottom and sides. Bake for 7 to 8 minutes. Remove from the oven and let cool completely.
  • For the filling: In a large bowl, add the sweetened condensed milk and whipped topping. Fold the two together gently until combined, being careful to keep the mixture light and fluffy. Add the lemonade concentrate and continue to gently fold. Be sure to avoid letting the mixture get too liquid-y. Pour the filling into the pie crust. Place in the freezer to chill overnight.
  • Sprinkle with a little candied lemon peel and serve!

3/4 ounce agave nectar
1/2 ounce almond liqueur (recommended: Amarreto Disaronno)
1/2 lemon, cut in small pieces
1/2 cup ice
Lemon Zest Meringue, recipe follows
2 egg whites
2 teaspoons sugar
1/2 ounce almond liqueur (recommended: Amarreto Disaronno)
1/2 teaspoon lemon zest

Steps:

  • Combine ingredients in a glass and muddle, strain into a chilled martini glass, top with Lemon Zest Meringue.
  • Place egg whites in small bowl, beat on high speed for 1 minute, add in sugar, almond liqueur, and zest. Continue beating until stiff peaks form. Put on top of drink, torch with a butane torch until tips are golden, serve immediately.

MERINGUE:
3 large egg whites

Steps:

  • In a medium saucepan, combine sugar, cornstarch, flour and salt. Gradually stir in water. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat. Gradually stir 1 cup of hot mixture into egg yolks; return all to saucepan. Bring to boil. Cook and stir for 2 minutes. Remove from the heat. Stir in the butter, lemon juice and zest until smooth. Pour into pastry shell. In a bowl, beat egg whites and salt until stiff but not dry peaks are formed. Gradually beat in sugar until soft peaks form. Spread over pie, sealing edges to pastry. Bake at 350° for 12-15 minutes or until meringue is golden. Cool. Store any leftovers in the refrigerator.

2 1/4 cups sifted all-purpose flour
1 teaspoon sugar
1 teaspoon salt
12 tablespoons cold unsalted butter (6 ounces), cut into pieces
1/4 cup ice water (strain out the ice just before using)
1 teaspoon red wine vinegar
4 eggs, separated
2/3 cup sugar
1/4 cup fresh lemon juice
1 1/2 teaspoon finely grated lemon zest
1 1/2 teaspoons powdered gelatin
1/3 cup water
Sweetened whipped cream, for garnish

Steps:

  • Make the Crust: In a food processor combine the flour, sugar, and salt. Add the butter and pulse until pea-sized pieces appear.
  • In a small bowl, stir the water and vinegar together.
  • Add the vinegar mixture and pulse briefly¿it will still look crumbly. Transfer the crumbs to a work surface and shape into a round, flat disk. Wrap in plastic wrap and refrigerate at least 30 minutes before using. (Or, refrigerate up to 48 hours or freeze up to 1 month before using. If frozen, let thaw in the refrigerator overnight before rolling out.)
  • When the time comes to roll out the dough, let the dough warm up for a few minutes at room temperature to make it more workable. Dust a work surface with just a few tablespoons of flour and keep some extra flour at hand. Sprinkle a little flour on top of the dough and start rolling outward from the center with quick, light strokes. Don't worry if the edges split a bit; concentrate on forming a good circle from the center. Lift up and rotate the dough 1/4 turn every minute or so to help ensure even rolling. The dough should feel smooth and soft; some say it should feel like the inside of your forearm. If it gets sticky, sprinkle on a bit more flour, but don't do this more than 2 or 3 times; the dough will absorb too much flour. Instead, put it back in the refrigerator for 15 minutes to firm up the butter. Keep rolling until the circle is at least 2 inches larger than your pan (for example, 11 inches wide for a 9-inch pie pan), or 3 inches larger for deep-dish pies.
  • Set your pie pan nearby. We always use heavy aluminum pans, because glass pans seem to bake the crust too fast. However, we know that the advantage of glass is that you can easily check the color of the crust. To transfer the crust to the pan, I find it easiest to roll a finished crust up onto the rolling pin, then gently unroll it in the pan. Or, you can fold it gently in quarters, lift it up, position the center point on the center of the pan, and unfold it into the pan. Make sure that the dough is allowed to settle completely into the pan.
  • Don't stretch and press the dough into the corners; stretched dough will likely shrink back when you bake it. Instead, lift the edges of the crust to let it settle down into the corners. If the dough tears a bit, don't be concerned; we'll patch it in a minute. Using scissors or a sharp knife, trim the dough to within 3/4-inch of the rim. Use any extra scraps to patch the crust, pressing with your fingers (wet them if necessary) or set aside. To decorate the rim, fold under the excess dough then just press it all around with the back of a fork. For a slightly more advanced look, press the thumb and forefinger of 1 hand together. Use them to gently push the thick dough rim outward, while pushing inward with the forefinger of the other hand, so that they intersect in a "V" with the dough in between. Repeat all around the rim to make a wavy edge. Chill 1 hour.
  • Preheat the oven to 425 degrees F. Line the shell with a sheet of foil and fill with raw rice or dried beans. Bake for 20 to 25 minutes. Remove the foil and rice and continue baking until golden brown. Let the pie shell cool on a rack while you make the filling.
  • Make the Filling: In a mixing bowl with a whip attachment, whisk together the yolks and 1/3 cup sugar until fluffy, then add the lemon juice and zest. Place the bowl over a saucepan of simmering water, and cook, whisking, until thickened, about 7 to 8 minutes.
  • Meanwhile, sprinkle the gelatin over cold water and let dissolve.
  • Remove the yolk mixture from the heat and whisk in the gelatin until dissolved. Place the mixture over an ice bath and stir with a rubber spatula to cool it. Once it's room temperature remove it from the ice bath and let it sit while you whip the meringue.
  • Place the egg whites in a clean dry bowl and whip on medium speed until foamy; then turn up to high and continue whipping until soft peaks form. Gradually add the remaining 1/3 cup sugar and whip until glossy and sugar has dissolved. Fold 1/3 of the whites into the lemon mixture; then fold in the remaining whites in 3 batches. Pour the mixture into the cooled pie shell and smooth the top.
  • Chill the pie at least 2 hours before serving. Serve with dollops of whipped cream.

LEMON CHIFFON PIE

1 c graham cracker crumbs
3/4 c finely chopped pecans
1/4 c granulated sugar
1/4 c butter,melted
FILLING:
1 qt vanilla ice cream, softened,divided
10 oz jar lemon curd- or your homemade
2 Tbsp lemon juice
MERINGUE:
4 large egg whites
6 Tbsp granulated sugar
1/4 tsp cream of tartar

Steps:

  • 1. Heat oven to 400^. Crust: Combine cracker crumbs, pecans and sugar. stir in butter and press into the bottom and sides of an ungreased 9-inch pie plate. Bake for 10-12 minutes or until crust is lightly browned. Cool completely on a wire rack. Freeze at least 15 minutes.
  • 2. Filling: Spread 2 cups of the ice cream into the crust. Freeze 30 minutes. In a small bowl, combine lemon curd,and lemon juice; spread over ice cream layer. Freeze about 1 hour. Spread remaining soft ice cream over lemon layer. Freeze until set , about 1 to 2 hours.
  • 3. Meringue: In a large heavy saucepan, combine the egg whites, sugar and cream of tartar. (correct). With a hand mixer, beat on low speed for 1 minute. Continue beating mixture over very low heat until mixture reaches 160^ (unusual,I know) about 8 minutes. Transfer to a large bowl; beat until stiff glossy peaks form and sugar is dissolved. IMMEDIATELY spread meringue over ice cream, sealing to edges of pie crust. Using a kitchen torch ( or fire starter),or broil 8-inches from the heat for 3 to 5 minutes or until meringue is lightly browned. Freeze for at least 1 hour before serving. Set out for 8 minutes before cutting. Keep any left over pie covered in freezer.
