Spiced Pumpkin Coffee Shakes image

The winter holidays are my favorite time of year, and this spiced pumpkin drink is one reason I love the season so much. If you don't have a coffee maker, it's OK to use instant coffee-just make it stronger. -Kathie Perez, East Peoria, Illinois

Number Of Ingredients 9

2 cups whole milk
1/2 cup canned pumpkin
2 tablespoons sugar
1 teaspoon pumpkin pie spice
1 cup strong brewed coffee
3 teaspoons vanilla extract
4 cups vanilla ice cream
1 cup crushed ice
Sweetened whipped cream and additional pumpkin pie spice

Steps:

  • In a small saucepan, heat milk, pumpkin, sugar and pie spice until bubbles form around sides of pan and sugar is dissolved. Transfer to a bowl; stir in coffee and vanilla. Refrigerate, covered, several hours or overnight., Place milk mixture, ice cream and ice in a blender; cover and process until blended. Serve immediately with whipped cream; sprinkle with additional pie spice.

1/3 cup vanilla ice cream (or frozen yogurt)
2 tablespoons sweetened condensed milk
1 tablespoon instant coffee powder (or granules)
1/4 teaspoon Chinese five spice powder
1 cup ice cube

Steps:

  • Combine all the ingredients in a blender & process about 30 seconds or until smooth.
  • Pour into a glass & enjoy!

Number Of Ingredients 18

1 cup butter, softened
1 cup sugar
1 large egg, room temperature
1 cup molasses
1 cup buttermilk
6 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1 cup chopped walnuts
1 cup golden raisins
1 cup chopped dates
FROSTING:
3-3/4 cups confectioners' sugar
1/3 cup orange juice
2 tablespoons butter, melted

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg; beat in molasses and buttermilk. Combine the flour, baking powder, baking soda, cinnamon, ginger and salt; gradually add to creamed mixture and mix well. Stir in the walnuts, raisins and dates. Chill for 2 hours or until easy to handle. , On a floured surface, roll out dough to 1/4-in. thickness. Cut with a 2-1/2-in. round cookie cutter. , Place on greased baking sheets. Bake at 350° for 12-15 minutes. Cool completely. , For frosting, beat all ingredients in a small bowl until smooth. Spread over cooled cookies; let dry completely.
