I've always liked to cook, and this cookie recipe was always a favorite of my eight children. Now it's a favorite of my 11 grandchildren.

1-3/4 cups sifted cake flour
1/2 cup baking cocoa
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup shortening
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1/4 cup milk
18 large marshmallows, halved
36 pecan halves
FROSTING:
2 cups confectioners' sugar
5 tablespoons baking cocoa
1/8 teaspoon salt
3 tablespoons butter, softened
4 to 5 tablespoons half-and-half cream

Steps:

  • Sift together flour, cocoa, salt and soda; set aside. In a bowl, cream shortening and sugar until light and fluffy; add the egg, vanilla and milk. Gradually add dry ingredients and mix well., Drop by heaping teaspoonfuls about 2 in. apart on greased baking sheets. Bake at 350° for 8 minutes. Do not overbake. Remove cookies from the oven and top each with a marshmallow half. Return to oven for 2 minutes. Remove cookies to wire racks to cool. , Meanwhile, beat all frosting ingredients together. Spread frosting on each cookie and top with a pecan half.

1/2 cup unsalted butter
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
15 large marshmallows (, halved)
1/2 cup butter (, softened)
2 Tablespoons unsweetened cocoa powder
2 1/2 Tablespoons milk
2 cups powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
  • Add the butter and sugar to a mixing bowl and cream together until light and fluffy, about 3 minutes. Add eggs and vanilla and mix well.
  • In a separate bowl, combine the flour, cocoa powder, baking soda, and salt. Add to the bowl with the creamed butter mixture and stir just until combined.
  • Scoop the dough by rounded tablespoons onto your cookie sheet. Bake for 8 minutes. Remove from oven and top with a marshmallow half (cut-size down). Return to oven for 2 minutes.
  • Allow to cool completely while you make the frosting.

1 cup shortening (butter can also be used)
2 cups sugar
1 teaspoon vanilla
2 eggs
4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup baking cocoa
1 cup milk
10 ounces mini marshmallows
2 tablespoons butter (melted)
1/4 cup baking cocoa
6 tablespoons milk
1/4 teaspoon salt
4 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl beat shortening, sugar, vanilla and eggs.
  • Add dry ingredients (flour, salt, baking soda and cocoa) and mix together well.
  • Slowly stir in milk.
  • Lightly flour your hands. Roll dough into balls approximately 1 1/2 inches in diameter.
  • Place on sprayed cookie sheet.
  • Bake 8 minutes. Remove from oven. Place 3 or 4 mini marshmallows on top of each cookie and return to oven for 30-45 seconds.

1 large egg, room temperature
1/4 cup 2% milk
1 teaspoon vanilla extract

ICING:
6 tablespoons butter, softened
2 tablespoons baking cocoa
1/4 cup 2% milk

Steps:

  • In a large bowl, cream butter and sugar. Add egg, milk and vanilla; mix well. Combine the flour, cocoa, baking soda and salt; beat into creamed mixture. , Drop by tablespoonfuls onto ungreased baking sheets. Bake at 350° for 8 minutes. Meanwhile, cut marshmallows in half. Press a marshmallow half, cut side down, onto each cookie. Return to the oven for 2 minutes. Cool completely on a wire rack., For icing, in a small saucepan, combine butter, cocoa and milk. This cookie is not for someone who is watching their figure, very decadent. I always double the batch because these cookies do not last long and you have enough frosting for a double batch.

1/2 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla extract
1/4 cup milk
1 3/4 cups flour

20 large marshmallows (cut in half)
1 cup sugar
1/4 cup milk
1/4 cup butter
1/2 cup semi-sweet chocolate chips

Steps:

  • Cookies:.
  • cream together butter and sugar with a hand held electric mixer.
  • Add egg, then vanilla and milk.
  • Then add flour, salt, baking soda, and cocoa.
  • Drop by spoonfuls on to a greased cookie sheet.
  • Bake @ 350 degrees for 8 minutes
  • Then press marshmallow (cut side down) on to cookie.
  • Put cookies back in oven for 2 more minutes.
  • Let cookies cool then frost.
  • Frosting:.
  • In a sauce pan combine sugar, milk and butter.
  • Bring to a boil, stir and remove from heat.
  • Add chocolate chips to hot mixture and let cool stirring occasionally. Frosting will come together as it cools.

FOR THE BATTER :
1/2 c shortening
1 c sugar
1 egg
1 3/4 c sifted flour
1/2 c cocoa
1/2 tsp salt
1/2 tsp soda
1/2 c buttermilk
1 tsp vanilla
1/2 c chopped nuts
30 large marshmallows ; cut in half
chocolate frosting
FOR THE FROSTING :
2 c powdered sugar
1/4 c cocoa
3 Tbsp soft butter
1/4 c cream
1/2 tsp vanilla
dash(es) of salt

Steps:

  • 1. Cream shortening and sugar , Beat in the egg. Sift dry ingredients ; Add to creamed mixture alternately with the buttermilk ; Stir in vanilla and nuts.
  • 2. Drop by tablespoons onto a greased cookie sheet ; Bake @ 350° for 8 minutes.
  • 3. Place a marshmallow half ( cut side down ) on top of each cookie and bake for 2-3 minutes longer.
  • 4. Cool cookies on rack and then frost with chocolate frosting.
  • 5. Mix chocolate frosting : Blend powdered sugar , cocoa , soft butter , cream , vanilla and a dash of salt until smooth.

½ teaspoon baking soda
¼ teaspoon salt
3 (1 ounce) squares unsweetened chocolate
1 cup packed brown sugar
½ cup butter
1 egg
¾ cup sour cream
½ cup chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • Sift flour, soda, and salt together.
  • In the top half of a double boiler, melt the chocolate over low heat.
  • Cream together brown sugar, butter, and egg in a large mixing bowl. Slowly mix in the flour mixture and mix until well blended. Pour in melted chocolate, sour cream, and vanilla. Mix well and stir in nuts.
  • Drop dough by teaspoonful onto greased cookie sheet about 1 inch apart. Bake for 10 minutes. Cool on wire racks. Cookies will be soft and about the size of a half dollar.
  • When cooled top with Chocolate Frosting.
