HEALTHIER FROYO COOKIE SANDWICHES RECIPE BY TASTY



Healthier Froyo Cookie Sandwiches Recipe by Tasty image

Here's what you need: greek yogurt, honey, vanilla bean, rolled oats, coconut oil, honey, vanilla, egg, baking soda, salt, dark chocolate chips

2 cups greek yogurt
2 tablespoons honey
1 stalk vanilla bean, scraped
2 cups rolled oats, or 1 1/2 cups (150 grams) oat flour
½ cup coconut oil, melted
¼ cup honey
2 teaspoons vanilla
1 egg
1 teaspoon baking soda
1 pinch salt
½ cup dark chocolate chips

Steps:

  • Preheat oven to 375˚F (190˚C.)
  • Combine the Greek yogurt, honey, and vanilla in a bowl. Transfer to a freezer-safe container and freeze for 2 hours, or until consistency is thick and creamy but still scoopable.
  • Add the rolled oats to a bowl of a food processor and pulse until it becomes a flour-like consistency.
  • Combine coconut oil, honey, vanilla, and egg in a large bowl. Add in oats, baking soda, and a pinch of salt and mix until thoroughly incorporated. Fold in chocolate chips.
  • Using an ice cream scoop or a tablespoon, form 8 balls of cookie dough and place onto a baking sheet lined with parchment paper.
  • Using your hands or the back of a spoon, press down firmly on each ball to form a cookie shape. Bake for 8-10 minutes, or until golden brown on the edges.
  • Let cool for about 10 minutes. While the cookies are cooling, you may want to remove ice cream from the freezer and let sit out to soften.
  • Flip cookies over so the flat sides are facing up. Add one scoop of frozen yogurt to 4 of the cookies. Use the remaining 4 cookies to form sandwiches by placing on top of the ice cream scoop and pressing down very gently to slowly spread out the ice cream. Feel free to use a spoon to smooth out the ice cream instead.
  • Freeze for 1 hour, or to your liking.
  • Enjoy!

Delicious and creamy frozen yogurt made with the frozen fruit of your choice (I used strawberries and bananas). It takes just 5 minutes of work, but be sure to check out my tips to achieve a creamy texture.

4 cups sliced frozen strawberries, (or other frozen fruit of your choice (see notes) )
2 cups sliced frozen banana
1 cup Whole milk Greek yogurt
2 tsp orange extract, (or vanilla extract, if you like)
4 to 6 tbsp honey, (more to your liking, I used Greek honey)
1/4 cup sugar, (optional but highly recommended)
1 tbsp corn syrup, (optional)

Steps:

  • Combine the frozen strawberries, banana, yogurt, orange extract (or vanilla extract), honey, sugar, and corn syrup in the bowl of a food processor fitted with a blade or a heavy duty blender.
  • Blend until everything is combined into a creamy smoothie-like mixture. Taste, and if you like it sweeter add a bit more honey.
  • Transfer the mixture to a freezer safe container and smooth the surface. Press a piece of parchment against the top of the yogurt to prevent ice crystals from forming. Freeze for at least 6 hours or overnight.
  • To serve, allow the frozen yogurt to sit at room temperature for a few minutes just until soft enough to scoop. Scoop the amount you need (long, shallow pulls or strokes will produce better scoops). Enjoy!

Don't want to wait for the ice cream truck? Make these fun frozen yogurt treats yourself! This novelty-inspired dessert has only four ingredients and a few simple steps, so it's easy to make with the kids.

1 can (14 oz) sweetened condensed milk (not evaporated)
2 containers (6 oz each) Yoplait® Original yogurt Key lime pie
2 containers (6 oz each) Yoplait® Original yogurt strawberry
1 cup Trix™ cereal

Steps:

  • Line 8x4-inch loaf pan with foil, leaving edges of foil hanging over sides of pan. Divide condensed milk evenly between 2 medium bowls. Stir Key lime pie yogurt into 1 bowl. Stir strawberry yogurt into remaining bowl.
  • Spread Key lime pie mixture into foil-lined loaf pan. Sprinkle with cereal. Gently spoon and spread strawberry mixture on top. Freeze at least 8 hours until firm.
  • To serve, use foil to lift frozen loaf from pan. Pull back foil and remove. Let stand 5 to 10 minutes to soften slightly. Cut into eight 1-inch slices. Serve immediately.

12 tubes (2 oz each, 6 of each flavor) berry and strawberry Yoplait® Go-GURT® yogurt (from 16-count box or two 8-count boxes)
1 1/4 teaspoons blue gel food color
2 tablespoons Cookie Crisp™ cereal
1 tablespoon Honey Nut Cheerios™ cereal
2 tablespoons fresh blueberries (about 10 blueberries)
4 fresh blackberries, sliced crosswise
Assorted star candy sprinkles, gold and silver nonpareils

Steps:

  • Line 17 1/2x12 1/2x1-inch cookie sheet with cooking parchment paper.
  • Squeeze berry yogurt tubes in small bowl, and stir. Squeeze strawberry yogurt tubes between two small bowls; add 1 teaspoon blue gel food color to one of the strawberry bowls and 1/4 teaspoon blue gel food color to remaining strawberry bowl and stir both, leaving some streaks of deeper blue in each.
  • Drop spoonfuls of each yogurt onto parchment paper in random pattern, within 12x10-inch area. Using spatula or spoon, carefully swirl yogurt colors to look like a galaxy. Carefully skim across top of yogurt mixture using bench scraper or flat metal spatula to create flat, even surface, about 1/4-inch thick.
  • Top with cereals, berries and sprinkles. Freeze 30 minutes; loosely cover with foil. Return to freezer 4 1/2 to 5 1/2 hours or until firmly set. Break apart, and serve immediately. Store in covered container in freezer.
