olive oil: 1 tablespoon
garlic: 1 clove
zucchini: 1 cup
red onion: 1 cup
red pepper: 1/2 cup
corn niblets: 1/2 cup
Swiss cheese: 1/4 cup
eggs: 8
black pepper: 1/4 teaspoon ground
tarragon: 1/4 cup fresh

Steps:

  • Preheat oven to 350° F (conventional oven).
  • In a skillet, heat oil over medium heat. Add garlic, zucchini, onion, peppers, corn and sauté until tender.
  • Transfer vegetables to an ovenproof dish. Sprinkle cheese over the vegetables.
  • In a bowl, whisk the eggs together and season them with pepper and tarragon.
  • Pour seasoned eggs over vegetables and cheese.
  • Cover frittata mixture with foil and bake for 45 minutes or until the eggs are firm to the touch. Serve with toast and enjoy!

FRITTATA WITH POTATO AND PROSCIUTTO



Frittata with Potato and Prosciutto image

4 tablespoons olive oil
1 (7-ounce) potato, peeled, cut into 1/4-inch cubes
1/2 onion, chopped
2 garlic cloves, minced
Salt and freshly ground black pepper
6 large eggs
1/4 cup heavy cream
1/4 cup grated Parmesan
2 ounces sliced prosciutto, coarsely chopped
2 tablespoons chopped fresh basil leaves
1 baguette, cut into 8 pieces
1/4 cup unsalted butter

Steps:

  • Heat the oil in a heavy 9 1/2-inch-diameter skillet over medium heat. Add the potato, onion, and garlic. Season the potato mixture with salt and pepper, to taste. Saute over medium-low heat until the potato is golden and crisp on the outside, tender inside, about 7 to 10 minutes.
  • Preheat the broiler. Whisk the eggs, cream, Parmesan, prosciutto, and basil in a medium bowl to blend. Stir the egg mixture into the potato mixture in the skillet. Cook over medium-low heat until the egg mixture is almost set but the top is still loose, about 3 minutes. Place the skillet under the broiler. Broil until the top is set and golden brown, about 4 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a cutting board. Cut the frittata into 12 wedges.
  • Split open each bread piece. Toast the bread on a grill pan until golden. You can also broil the bread cut side up until golden, about 1 to 2 minutes, keeping a careful watch on the bread since they can easily burn. Butter the cut sides of the toasted bread. Arrange a frittata wedge on each bottom piece of bread. Cover with the bread tops and serve.

1/2 pound day-old country-style bread, sliced 1/4-inch thick
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 cup freshly grated Parmesan

Steps:

  • Preheat oven to 300 degrees F.
  • Brush one side of each bread slice with olive oil and place them on a baking sheet in one layer. Season them with salt and pepper and dust them with the Parmesan. Bake until golden brown and crisp, about 15 minutes. Serve warm or at room temperature.

Frittata With Peas, Herbs and Feta or Parmesan image

This frittata is just one good reason to stock peas in your freezer. My favorite herbs to use are tarragon and chives.

4 eggs
1 tablespoon milk
Salt and freshly ground pepper to taste
1/3 cup fresh peas, steamed or cooked in salted boiling water for 4 to 5 minutes, or 1/3 cup thawed frozen peas
2 to 3 tablespoons chopped fresh herbs, like chives, tarragon or parsley
1 tablespoon, tightly packed, freshly grated Parmesan, or 1 ounce feta, crumbled
2 teaspoons extra virgin olive oil

Steps:

  • Beat the eggs and milk in a bowl with salt and pepper to taste. Stir in the peas, chopped herbs, and Parmesan or feta.
  • Heat the olive oil over medium-high heat in a heavy, 8-inch nonstick omelet pan. Drop a bit of egg into the pan and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture, scraping in every last bit with a heat-proof rubber spatula. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. Once a few layers of egg have cooked during the first couple of minutes of cooking, turn the heat down to low, cover and cook 7 to 10 minutes, until the frittata is puffed and just about set. From time to time remove the lid and loosen the bottom of the omelet with a wooden or heat-proof rubber spatula, tilting the pan, so that the bottom doesn't burn. It will however turn golden.
  • If the frittata is still runny on the top, wearing oven mitts, slide the frittata out onto a plate or even better, a saucepan lid that has a handle, reverse the pan over the plate or lid, and holding the two together, flip the plate or lid so that the frittata goes back into the pan on its not-quite-cooked side. Finish for no longer than a minute, then reverse onto a platter. Allow to cool to room temperature, and serve, or chill. Cut into 4 wedges to serve. The wedges pack well and are very portable.

1/2 cup chopped leek (white portion only)
1/2 cup cut fresh asparagus (1-inch pieces)
2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup sliced fresh mushrooms
1 cup shredded Asiago cheese
4 eggs
1 cup egg substitute
1/4 cup fat-free milk
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes

Steps:

  • In small bowl, combine leek and asparagus. Drizzle with oil and sprinkle with salt and pepper; toss to coat. , Transfer to a baking sheet coated with cooking spray. Bake at 400° for 20-25 minutes or until tender, stirring occasionally. Reduce heat to 350°., Place mushrooms on the bottom of a 9-in. deep-dish pie plate coated with cooking spray. Top with roasted vegetables and cheese. In a large bowl, whisk the remaining ingredients; pour over cheese., Bake for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes. Cut into wedges.
