FRIENDSHIP SOUP MIX IN A JAR

Steps:

• In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.
• Attach a label to the jar with the following instructions: Friendship Soup ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper to taste, garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water. TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.

Steps:

• In a 1-1/2-pint jar, layer the first seven ingredients in the order listed. Wrap pasta in a small sheet of plastic wrap; add to jar. Seal tightly. Store in a cool, dry place for up to 3 months., To prepare soup: Remove pasta from jar and set aside. In a Dutch oven over medium heat, cook the beef until no longer pink; drain. Add the water, tomatoes and soup mix; bring to a boil. Reduce heat; cover and simmer for 45 minutes. Stir in the reserved pasta; cover and simmer for 15-20 minutes or until the pasta, peas, barley and lentils are tender.

Steps:

• To avoid the sifting of seasonings through the beans, layer ingredients in the jar in this order: onion, ½ cup split peas, rice, ½ cup lentils, beef granules, ½ cup split peas, barley, ½ cup lentils, Italian seasoning, and pasta. Optional: place pasta in a small storage bag to make easy to remove.
• Seal and attach gift tag.

FRIENDSHIP SOUP RECIPE

Steps:

• Place butter or olive oil in a large soup pot and cook onion until tender
• Add any hard vegetables, cubed up, such as raw carrots, sweet potatoes, winter squash or potato
• Add seasonings, garlic, and stock and boil until vetetables are fork tender
• Add any cans of vegetables and bring mixture to a boil
• Add any tender raw veggies such as kale, spinach, broccoli, cauliflower, mushrooms, summer squash, tomatoes, cabbage, or other ingredient the kids brought
• Bring mixture back to a boil and cook until they are fork-tender

Steps:

• 1. Preparation Instructions: In a 1 1/2 pint jar, layer the first eight ingredients in the order listed. Seal tightly. Yield 1 batch. To prepare soup, carefully remove macaroni from the top of the jar and set aside. In a large saucepan, or Dutch oven, brown beef; drain. Add the water tomatoes and soup mix. Bring to a boil. Reduce heat, cover and simmer for 45 minutes. Add the reserved macaroni, cover and simmer for 15 to 20 minutes or until the macaroni, peas, lentils, and barley are tender. Yields 4 quarts.
