Provided by Jaclyn

Categories     Main Course

Time 35m

Number Of Ingredients 10

1 1/2 lbs extra large shrimp, (peeled and deveined )
1/2 cup all-purpose flour ((preferably unbleached))
1 1/2 tsp paprika*
1/2 tsp garlic powder
Salt and freshly ground black pepper
2 large eggs**
2 cups panko bread crumbs
Vegetable oil ((about 8 cups))
1 Tbsp minced fresh parsley ((optional))
1 lemon, (cut into wedges (optional))

Steps:

  • Add flour, paprika, garlic powder, salt and pepper to a medium shallow dish and whisk to blend.***
  • In a second medium shallow dish whisk eggs until well blended.
  • Pour panko into a 3rd shallow dish (a pie plate works well here).
  • Preheat oil in a large pot to 350 degrees while you coat shrimp. Note that shrimp should be lightly wet on the exterior, if not rinse with water and drain well otherwise the flour won't stick in the next step.
  • Dredge shrimp in flour mixture on both sides. Transfer to egg mixture and coat on both sides. Then finish by coating in panko on both sides, while pressing into panko so it adheres well.
  • Fry shrimp in batches (no more than 10 at a time) until cooked through, about 1 minute. Bring oil back to 350 degree temperature between batches.
  • Use a large spider to remove shrimp from oil and transfer to a baking sheet lined with two layers of paper towels to drain. Repeat process with remaining shrimp.
  • Garnish shrimp with parsley if desired, serve with lemon wedges and your favorite shrimp sauce (such as cocktail sauce, honey mustard, tartar sauce, sriracha dip, creamy herb etc).

1/2 cup white rice flour
1/2 cup beer
1 pound peeled and deveined large shrimp, tail-on
Kosher salt and freshly cracked black pepper
Tartar Sauce, recipe follows, for serving
3/4 cup mayonnaise
1 tablespoon minced fresh dill

1 tablespoon white wine vinegar
2 teaspoons chopped capers (rinsed and drained)

Categories     Appetisers     Dinner     Main Course

Time 30m

Number Of Ingredients 9

1 pound (450g) raw shrimp (peeled and deveined, see note 1)
1 teaspoon salt (divided)
½ teaspoon ground black pepper (divided)
½ cup (120ml) buttermilk (or whole milk, or sour cream with a splash of water)
1 cup (120g) all purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Oil for frying (see note 2)

Steps:

  • Add the shrimp to a medium bowl or a Ziploc bag, season with ½ teaspoon salt and ¼ teaspoon ground black pepper then add the buttermilk and mix to combine. Let it sit for 10-15 minutes as you prepare the breading and preheat the oil.
  • In a shallow bowl, combine the flour with the remaining salt and pepper, garlic powder, onion powder, and smoked paprika.
  • Remove the shrimp (one by one) from the buttermilk shaking off any excess then bread in the flour mixture and place onto a plate or a wire rack. Repeat with the rest/all of the shrimp.
  • Preheat at least 2 inches of oil in a dutch oven or a deep fryer (it needs more oil to work) to 350°F/180°C. Drop the shrimp in hot oil, do not overcrowd (I do 6-7 at a time) and fry for 2 minutes.
  • Remove onto a wire rack or a plate lined with paper towels and serve hot with fresh lemon wedges and your favorite dipping sauces.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

1/2 cup mayonnaise
1/4 cup sweet pickle relish
1 lemon, juice of, plus lemon wedges for serving
8 cups coleslaw mix or 8 cups shredded cabbage
2 scallions, sliced
kosher salt & freshly ground black pepper
24 extra-large shrimp, peeled and deveined (about 1 1/2 pounds)
1 1/2 sleeves saltines (about 60 crackers)
1 1/2 cups all-purpose flour
1 tablespoon Old Bay Seasoning
4 large eggs
vegetable oil, for frying

Steps:

  • Make the slaw: Mix the mayonnaise, relish and lemon juice in a large bowl. Add the coleslaw mix and scallions; season with salt and pepper and toss to coat. Cover and refrigerate until ready to serve.
  • Fill a large bowl halfway with ice water and 1 tablespoon salt. Butterfly the shrimp: Make a deep cut down the back of each shrimp so it can be splayed open. Soak in the ice water, 5 to 10 minutes.
  • Meanwhile, place the saltines in a large resealable plastic bag and finely crush with a rolling pin; transfer to a bowl. Mix the flour and Old Bay Seasoning in another bowl. Lightly beat the eggs in a third bowl. Dredge the shrimp in the seasoned flour, dip in the eggs and press into the crushed crackers, splaying each one open to coat inside the incision. Transfer to a plate, cover and refrigerate until ready to fry.
  • Heat 3/4 inch vegetable oil in a large heavy-bottomed skillet over high heat until a deep-fry thermometer registers 350 degrees F. Fry the shrimp in batches, turning once, until golden, 1 to 2 minutes. Drain on paper towels and season with salt. Serve with lemon wedges and the slaw.
