Easy Bacon Fried Rice image

This is a fried rice recipe that I luckily created from practically threadbare cabinets one evening. It's the epitome of comfort food and is a breeze to make. The green beans really complement the flavors but feel free to use any veggie you have on hand. Enjoy!

6 slices bacon, cut into 1/2-inch pieces
1 cup frozen French-cut green beans, thawed
½ onion, roughly chopped
2 cloves garlic, minced
2 teaspoons sesame oil
1 egg, beaten
3 cups cold cooked rice
1 tablespoon soy sauce, or more to taste

Steps:

  • Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until just beginning to brown, about 7 minutes. Drain all but 1 to 2 teaspoons of bacon grease from the skillet. Add green beans, onion, and garlic; saute until bacon is crisp and green beans and onions are softened, about 3 minutes.
  • Push bacon mixture to one side of the skillet; heat sesame oil on the empty side, about 30 seconds. Pour in egg; cook until just set, about 1 minute. Stir into bacon mixture to combine. Mix in rice. Stir in soy sauce, a tablespoon at a time, until rice is evenly coated. Cook until rice is heated through, 3 to 5 minutes.

5-Spice Pork and Fried Rice image

The inspiration for this dish came from when I was attending college back at home in Ireland and I would always order a 5-spice chicken with noodles at a lunch spot in between classes. Ever since then I've just loved the sweet, spicy and earthy flavor of 5-spice; it also pairs beautifully with pork.

1/2 cup hoisin sauce
1/4 cup low-sodium soy sauce
2 tablespoons light brown sugar
1 tablespoon rice wine vinegar
1 teaspoon Chinese 5-spice powder
One 1-to-1 1/2-pound pork tenderloin
2 tablespoons sesame oil
2 large eggs, beaten
1 shallot, minced
2 cloves garlic, chopped
3 cups cooked white rice, cooled
1 tablespoon oyster sauce
1/2 cup frozen corn, thawed
1/2 cup frozen peas, thawed
1 tablespoon chopped cilantro, plus whole leaves for garnish
1 cup dry roasted cashew nuts or roasted peanuts, chopped

Steps:

  • Preheat the oven to 450 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the hoisin sauce, soy sauce, brown sugar, vinegar and 5-spice powder in a small saucepan. Cook over medium heat, stirring, until the sugar dissolves, 2 to 3 minutes. Set aside and let cool.
  • Put the tenderloin on the prepared baking sheet. Brush all over with the sauce and roast in the oven until the internal temperature on an instant-read thermometer reaches 140 degrees F, 15 to 20 minutes. Slice 1/2-inch thick.
  • While the pork is roasting, heat 1 tablespoon of the sesame oil in a large nonstick skillet. Cook the eggs, stirring with a silicone spatula, until softly scrambled, 1 to 2 minutes. Remove and set aside.
  • Add the remaining 1 tablespoon sesame oil to the same skillet. Add the shallots and garlic and cook, stirring, until translucent, 1 to 2 minutes. Add the rice and cook, stirring often, 2 to 3 minutes. Add the oyster sauce and cook, stirring often, about 2 minutes. Add the corn and peas and stir together. Add the soy sauce and the cooked eggs and cook, stirring often, until the corn and peas are warmed through, about 2 minutes. Remove from the heat, stir in the chopped cilantro and set aside.
  • Spoon some fried rice in the center of each plate, top with 2 to 3 slices of pork, some of the nuts and cilantro leaves and serve.

2 cups chicken broth
1 1/2 cups long-grain white rice
5 tablespoons olive oil, divided
1 lb bacon, chopped thinly
2 teaspoons Chinese five spice powder
2 large eggs, beaten
1 red bell pepper, seeded and thinly sliced
2 small carrots, shredded (a couple of handfuls)
1 scallion, thinly sliced on an angle
1 cup fresh peas
3 garlic cloves, finely chopped
4 tablespoons fresh ginger, peeled and grated
1/2 cup tamari (dark soy sauce)
salt & freshly ground black pepper

Steps:

  • In a medium saucepan, bring the broth and 3/4 cup water to a boil. Stir in the rice, cover and cook over low heat for about 18 minutes. Alternatively, use a rice cooker to prepare the rice.
  • In a large, deep nonstick skillet or wok, heat 2 tablespoons oil over high heat.
  • Season the pork with salt, pepper and the five-spice powder.
  • Add to the pan and stir-fry for 3 minutes. Transfer to a plate.
  • Heat 1 tablespoon oil in the skillet, then add the eggs and scramble for 2 minutes.
  • Push the eggs to the side of the pan, add the remaining 2 tablespoons oil and lower the heat to medium.
  • Add red bell pepper and carrots and stir-fry for 2 minutes. Add the scallion, peas, garlic and ginger and stir-fry for 1 minute.
  • Add the cooked rice and crisp it for a couple of minutes. Stir in the tamari and reserved pork.

2 cups jasmine rice
8 ounces bacon, cut into 1-inch pieces
1 teaspoon sesame oil
1 large yellow onion, small dice
6 cloves garlic, minced
2 inches fresh ginger, peeled and grated
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
2 medium carrots, shredded
1 cup diced fresh pineapple
3 tablespoons sake (Japanese rice wine)
3 tablespoons light soy sauce
3 tablespoons rice wine vinegar
1 scallion, sliced
10 to 12 fresh cilantro leaves
4 to 6 sunny-side up eggs

Steps:

  • Add the rice to a medium saucepan and cover with water. Swish the rice with your fingers and then strain through a fine-mesh strainer. Repeat the process 2 more times. Place the washed rice back into the saucepan and add 1 1/2 cups water. Cover the saucepan with a tight-fitting lid and cook over medium-low heat until all the water has been absorbed and the rice is cooked through, 20 to 25 minutes. Remove from the heat and keep covered for an additional 10 to 15 minutes. (If using a rice cooker, follow the manufacturers' instructions.) Fluff the rice with a fork, transfer to a tray and allow to cool in the refrigerator until the rice is no longer sticky, about 2 hours.
  • In a large skillet or wok, cook the bacon over high heat until crispy, about 10 minutes. Remove the cooked bacon and reserve about 2 tablespoons bacon fat in the skillet. Reserve the remaining bacon fat for another use.
  • Return the skillet to high heat and add the sesame oil. Add the onions, garlic and ginger. Add 3/4 teaspoon salt and 3/8 teaspoon pepper and stir until the onions are translucent, 5 to 7 minutes. Add the carrots, pineapple and remaining 3/4 teaspoon salt and 3/8 teaspoon pepper. Continue stirring until the pineapple and carrots are cooked through, 5 to 7 minutes. Add the sake, soy sauce and rice wine vinegar and continue stirring. Add the cooled rice and reserved bacon and continue stirring. If necessary, add a touch more bacon fat or oil to the pan to avoid sticking. Adjust seasoning with salt and pepper.
  • Transfer the fried rice to serving bowls and garnish with the scallions, cilantro and a sunny-side up egg on top.

EASY EGG FRIED RICE

a mugful of American long grain rice
a cupful of frozen peas
2 tbsp sunflower oil
2 back bacon rashers, roughly chopped
1 small red pepper , chopped
2 garlic cloves , thinly sliced
2 large eggs
1 heaped tsp Chinese five-spice powder

Steps:

  • Fill a roomy saucepan with water, bring to the boil and tip in a heaped teaspoon of salt - the water will bubble furiously. Pour in the rice, stir once and return to the boil, then turn the heat down a little so that the water is boiling steadily, but not vigorously.
  • Boil uncovered, without stirring (this makes for sticky rice) for 10 minutes. After 8 minutes, throw in the frozen peas, boil for 2 minutes and drain (don't rinse).
  • Heat the sunflower oil in a wok and stir fry the bacon for 3-4 minutes until crisp. Tip in the red pepper and the garlic cloves and stir fry for 2 minutes.
  • Beat the eggs, pour into the pan and stir fry until the egg just sets. Toss in the Chinese 5-spice
