FRIED CHEESY PICKLES
Steps:
- Pour 2 inches oil into a large pot and heat to 360 degrees F. Line a plate with a paper towel.
- Stir together the ranch dressing and sriracha to taste in a bowl. Set aside.
- Drain the pickles and use a paper towel to pat off any excess moisture (I like to save the brine and use it again!). Wrap each pickle in a slice of cheese, then fold and roll the cheese-wrapped pickle in an egg roll wrapper. Fold up the left side, then the right and roll up tightly like a burrito, using a bit of water on your finger to seal the sides.
- Working in batches to not overcrowd the pot, fry the pickles until golden brown and crispy on all sides, 2 to 3 minutes. Transfer to the lined plate to drain and cool slightly. Slice in half crosswise and serve with the Sriracha ranch.

- Using an apple corer, remove the centers of the pickles. To do this, stand the pickle straight up, twist the corer to break the pickle skin, and then push it down until you reach the opposite end of the pickle. Twist and pull towards you to remove the inside of the pickle. You can discard these centers or save them to use in relish, macaroni salad, potato salad, or tartar sauce. Spoon the pub cheese into the cored pickle, pressing it in until the pickle is full. You will want to hold your thumb against the opposite end of the pickle to make sure that the filling doesn't squeeze out as you're pushing more in. Once the pickles are filled with cheese, get out your egg roll wrappers. Take one pickle and lay it in the center of an egg roll wrapper. You want the egg roll wrapper to be angled so that it looks like a diamond, with the pickle going down the center. Fold over one side of the egg roll wrapper to cover the pickle. Then, fold up the bottom end and fold down the top end. Dip a finger in water and run it over the unfolded side of the wrapper. Then, roll it up tightly. You should have a traditional egg roll shape now! Repeat with the remaining pickles. In a heavy-bottomed skillet, fill about ½-inch high with oil and heat over medium-high heat. When the oil is hot, add in the pickles. Pan fry until golden brown all around, turning to cook evenly. Remove the pickles from heat and place on a rack to cool. As the pickles cool, add the Chipotle Mayo Dip ingredients in a food processor or blender and mix until well-combined. Serve the Fried Pickle Poppers warm with the Chipotle Mayo Dip.

- Beat 1 egg, 3/4 cup milk and a pinch of cayenne. Place 1/4 cup cornstarch in a shallow dish. In another dish, mix 1/2 cup each cornstarch and cornmeal with 2 tablespoons chopped dill, 2 teaspoons paprika, and salt and pepper. Dip about 3 dozen cold pickle slices in the plain cornstarch, then the egg wash, then the cornmeal mixture. Fry in 2 inches of 375 degrees F canola oil until golden, about 3 minutes. - Cover a plate with parchment paper or wax paper. In a shallow dish, combine buttermilk, salt, and pepper. Place pickles in mixture and set aside.
- Pour the flour, cornmeal, seafood seasoning, and 1/4 teaspoon Cajun seasoning into a large, resealable plastic bag; shake to mix well. Add pickles a few at a time and tumble gently to coat evenly with the flour mixture. Remove and place on prepared plate.

JALAPENO POPPER DEEP FRIED
It's excellent served with a ranch dressing or sour cream. For an added kick add some chipotle peppers in adobo to the ranch dressing and combine in a blender! By coating the poppers with flour and then deep frying them you will get a great crust on the peppers and the melted cheeses will also stay inside the shell. Feel free to use different types of shredded cheeses or alter the spices in the stuffing. You can also use fine corn meal or rice flour to create a crust with a different texture

- Fry the bacon in a saute pan until crispy. Let cool slightly and then crumble.
- Mix the cream cheese, shredded cheese, garlic powder, salt, pepper, and crumbled bacon in a bowl. This mixture will act as the stuffing for the deep fried jalapeno poppers.
- Cut the stem off of each jalapeno, cut them in half lengthwise, and remove the seeds.
- Take about a tablespoon or two of the jalapeno popper stuffing mixture and fill each jalapeno half.
- Working on one jalapeno pepper at a time, briefly dip the pepper into the milk and then roll it in the flour to coat. Set aside and repeat with all the jalapeno poppers. When deep fried the flour will form the crispy outside that mark many jalapeno poppers.
- Once you have completed step 6 for each pepper repeat it again, starting with the driest peppers.
- In a dutch oven, large pot, or deep fryer heat the oil to around 365 degrees.
- Carefully place several of the jalapeno poppers into the oil, being sure not to over-crowd it. Let the peppers cook until the outside is a golden brown, normally about 3 minutes. Remove with a strainer or slotted spoon and let dry on a wire rack.
- Serve the jalapeno poppers with ranch dressing or sour cream.
