FILIPINO LUMPIA (DEEP-FRIED PORK SPRING ROLLS)



Filipino Lumpia (Deep-Fried Pork Spring Rolls) image

This is one of Dale Talde's (Top Chef) recipes. His mother is Filipino and this recipe is inspired by her cooking when he grew up.

1 lb ground pork
1/2 cup yellow onion, minced
1/2 cup carrot, minced
3 garlic cloves, minced
1 1/2 teaspoons kosher salt, plus more
1/4 teaspoon fresh ground black pepper
1 (14 ounce) package 6-inch square spring roll wrappers (lumpia wrappers if you can find them)
1 large egg, lightly beaten, for egg wash
vegetable oil (for frying)
1 cup white vinegar
1/4 cup soy sauce
2 tablespoons sugar
3/4 teaspoon black peppercorns
2 garlic cloves, minced
2 Thai red chili peppers, stemmed and thinly sliced

Steps:

  • In a medium bowl, combine the pork with the onion, carrot, garlic, salt, and pepper and mix with your hands until evenly combined. Position 1 spring roll wrapper in front of you like a diamond (so that a point is facing you), and place 1 tablespoon of filling on the diamond's bottom half. Lift the point nearest you and wrap it around the filling. Fold the left and right corners in toward the center, brush the top tip with some of the beaten egg, and continue rolling into a tight cylinder. Transfer to a parchment paper-lined baking sheet and repeat with the remaining wrappers and filling.
  • Make the dipping sauce: In a small jar, combine the vinegar, soy sauce, sugar, peppercorns, garlic, and chiles. Shake to mix.
  • Pour oil to a depth of 2 inches in a 6-quart Dutch oven, attach a deep-fry thermometer to the side of the pan, and heat to 350°. Working in batches, add the spring rolls to the oil and fry until golden brown and the filling is cooked, about 8 minutes. Using a slotted spoon, transfer the lumpia to paper towels to drain. Season with salt and serve while hot with the garlic-chile vinegar sauce.

This is a traditional Filipino dish. It is the Filipino version of the egg rolls. It can be served as a side dish or as an appetizer.

1 tablespoon vegetable oil
1 pound ground pork
2 cloves garlic, crushed
½ cup chopped onion
½ cup minced carrots
½ cup chopped green onions
½ cup thinly sliced green cabbage
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon soy sauce
30 lumpia wrappers
2 cups vegetable oil for frying

Steps:

  • Place a wok or large skillet over high heat, and pour in 1 tablespoon vegetable oil. Cook pork, stirring frequently, until no pink is showing. Remove pork from pan and set aside. Drain grease from pan, leaving a thin coating. Cook garlic and onion in the same pan for 2 minutes. Stir in the cooked pork, carrots, green onions, and cabbage. Season with pepper, salt, garlic powder, and soy sauce. Remove from heat, and set aside until cool enough to handle.
  • Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with water to seal the edge. Cover the rolls with plastic wrap to retain moisture.
  • Heat a heavy skillet over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. Slide 3 or 4 lumpia into the oil. Fry the rolls for 1 to 2 minutes, until all sides are golden brown. Drain on paper towels. Serve immediately.

50 pieces lumpia wrapper
3 cups cooking oil
1 1/2 lbs ground pork
2 pieces onion (minced)
2 pieces carrots (minced)
1 1/2 teaspoons garlic powder
1/2 teaspoon ground black pepper
1/2 cup parsley (chopped)
1 1/2 teaspoons salt
1 tablespoon sesame oil
2 eggs

Steps:

  • Combine all filling ingredients in a bowl. Mix well.
  • Scoop around 1 to 1 1/2 tablespoons of filling and place over a piece of lumpia wrapper. Spread the filling and then fold both sides of the wrapper. Fold the bottom. Brush beaten egg mixture on the top end of the wrapper. Roll-up until completely wrapped. Perform the same step until all mixture are consumed.
  • Heat oil in a cooking pot. Deep fry lumpia in medium heat until it floats.
  • Remove from the pot. Let excess oil drip. Serve. Share and enjoy

1 pound Italian hot sausage links
½ cup finely sliced green onions
¼ cup diced onions
½ cup finely chopped carrots
½ cup finely chopped water chestnuts
2 cloves garlic, minced
2 tablespoons soy sauce
½ teaspoon salt
¼ teaspoon ground ginger
16 spring roll wrappers
avocado oil cooking spray

Steps:

  • Remove casing from sausage and cook in a skillet over medium heat until slightly browned, 4 to 5 minutes. Add green onions, onions, carrots, and water chestnuts. Cook and stir until onions are soft and translucent, 5 to 7 minutes. Add garlic and cook for 1 to 2 minutes. Season with soy sauce, salt, and ginger. Stir until filing is well combined and remove from heat.
  • Lay a spring roll wrapper at an angle. Place a scant 1/4 cup filling in the center of the wrapper. Fold bottom corner over filling and tuck in the sides to form a roll. Use your finger to lightly moisten edges with water. Repeat with remaining wrappers and filling. Mist each roll with avocado oil spray.
  • Preheat an air fryer to 390 degrees F (198 degrees C). Place lumpia rolls in the basket, making sure they are not touching; cook in batches if necessary. Fry for 4 minutes; flip and cook until skins are crispy, about 4 minutes more.

This is my favorite Filipino food (besides the barbecue skewers). Serve this with rice and use sweet and sour sauce or vinegar with crushed black pepper and fresh garlic as a dipping sauce.

1 lb ground pork
1/4 cup chopped water chestnut
1/2 cup finely chopped onion
2 egg yolks
3 teaspoons soy sauce
1/4 teaspoon garlic
salt (as needed)
pepper (as needed)
vegetable oil
50 fresh spring roll wrappers

Steps:

  • Mix all of the filling ingredients in large bowl. To test the filling, fry a spoonful in a pan with a little oil, and taste to determine if seasonings need adjustment.
  • To roll, place wrapper in front of you with the corners turned so it forms a diamond rather than a square.
  • Spoon 1 teaspoon of filling on the quarter of the wrapper nearest you and roll the point away from you and around the filling, folding in the sides and pinching them together as the filling rolls past them.
  • As you complete the roll seal the edges with water.
  • Repeat until all the wrappers and filling has been used up.
  • Deep fry in oil until golden brown.
  • Serve with sweet and sour sauce or the vinegar with crushed black pepper and fresh garlic.
