2 tablespoons salted butter
1 cup cornflakes cereal, crushed
1 tablespoon sugar
1/8 teaspoon ground cinnamon
Pinch kosher salt
3 scoops ice cream of your choice (vanilla, strawberry, pistachio)
Canned whipped cream, for serving
1 tablespoon rainbow sprinkles
3 maraschino cherries with stems

Steps:

  • Melt the butter in a nonstick skillet over medium heat. Add the crushed cornflakes and toast until golden, about 5 minutes.
  • Remove the skillet from the heat and stir in the sugar, cinnamon and salt. Allow to cool slightly.
  • Scoop the ice cream into a bowl or bowls, and spoon over generous quantities of the fried cornflake crumbs. Top with some whipped cream, sprinkles and maraschino cherries.

1 sheet refrigerated pie pastry
1-1/2 teaspoons sugar
1 teaspoon ground cinnamon
1 quart vanilla ice cream
Oil for deep-fat frying
1/2 cup honey

Steps:

  • Preheat oven to 400°. Unroll pastry onto an ungreased baking sheet. Mix sugar and cinnamon; sprinkle over pastry. Prick thoroughly with a fork. Bake until golden brown, 10-12 minutes. Cool completely on a wire rack. , Place crust in a large resealable plastic bag; crush to form coarse crumbs. Transfer to a shallow bowl. Using a 1/2-cup ice cream scoop, drop a scoop of ice cream into crumbs; roll quickly to coat and shape into a ball. Transfer to a waxed paper-lined baking sheet; place in freezer. Repeat 7 times; freeze until firm, 1-2 hours., To serve, heat oil to 375° in an electric skillet or deep-fat fryer. Fry ice cream balls until golden, 8-10 seconds. Drain on paper towels. Serve immediately in chilled dishes. Drizzle with honey.

Fried ice cream is a tasty dessert made with a scoop of ice cream that is frozen solid and then covered in a crispy coating before being flash-fried.

1/2 gallon vanilla ice cream
2 cups crushed cornflake cereal
1 cup sweetened flaked coconut
4 teaspoons ground cinnamon
3 egg whites
2 tablespoons sugar
Oil for frying
Chocolate syrup, for drizzling

Steps:

  • Gather the ingredients.
  • Place six scoops of ice cream , about 3 inches in diameter, on a baking sheet. Freeze for at least 2 hours or until very firm.
  • In a shallow bowl, combine the cornflake crumbs, coconut, and cinnamon.
  • Roll the frozen ice cream balls in the crumb mixture. Place them back on the baking sheet and freeze again for at least 30 minutes. Reserve the remaining crumb mixture for the next steps.
  • In a medium bowl, beat the egg whites and sugar until foamy.
  • Dip the coated ice cream balls into the egg mixture, then roll again in the reserved crumb mixture, coating completely. Freeze again for 1 hour. Meanwhile, chill a medium bowl or plate in the refrigerator.
  • When ready to fry, heat about 3-inches of oil in a medium heavy-duty saucepan to 375 F. Set the chilled plate next to the pan. Remove one ball of ice cream at a time from the freezer. Quickly dip into the hot oil until the coating turns crisp and brown, 8 to 10 seconds.
  • Remove from the hot oil with a slotted spoon and place on the chilled plate. Repeat with the remaining ice cream balls. Serve immediately with a drizzle of sauce, if desired.

3 cups crushed cornflakes
4 teaspoons ground cinnamon
Oil for deep-fat frying
Honey and whipped topping, optional

Steps:

  • Place nine 3-in. scoops of ice cream on a baking sheet. Freeze for 1 hour or until firm. , In a shallow bowl, combine cornflake crumbs and cinnamon. Roll ice cream balls in crumb mixture. Place on baking sheet; freeze overnight. Wrap each scoop separately in plastic wrap; transfer to a freezer bag. May be frozen for up to 2 months., In an electric skillet or deep-fat fryer, heat oil to 375°. Unwrap ice cream; fry one scoop at a time for 8-10 seconds. Place in chilled bowls; serve immediately. 6 Sponge Cakes, edges trimmed, recipe follows
1 pint vanilla ice cream
3/4 cup apricot jam
1/2 teaspoon cardamon
2 ounces rum
2 ounces butter
Peanut or canola oil, to fry
Coating Batter, recipe follows

Steps:

  • Halve sponge cakes and scoop out center. Fill cavities with a half scoop ice cream. Close up cake, completely enclosing ice cream. Place in freezer.
  • Melt jam in saucepan on medium heat. Season with cardamom and rum. Stir butter into apricot mixture. Keep warm to serve.
  • Heat oil in deep fryer to 375 degrees F. Remove cakes from freezer and dip into coating batter. Fry for 10 seconds or until golden brown. Drain on paper towels. Serve on a heated platter, covered with apricot sauce.

1 pint ice cream, any flavor
1 loaf sliced white bread
6 to 8 cups canola oil, for frying
1/2 cup sugar
2 teaspoons cinnamon

Steps:

  • Place a plate or sheet pan in the freezer and let it chill for at least 1 hour or overnight.
  • Using a large ice cream scoop, make balls of ice cream and place them on the sheet pan then return them to the freezer.
  • Cut the crusts off the sliced bread and using about 2 slices per ice cream ball, form the bread around the ice cream using your hands to pack it like a snow ball. Once it's completely covered return it to the freezer.
  • In a medium saucepan, heat 3 inches of canola oil to 365 degrees F. Drop the covered ice cream balls, one at a time, into the hot oil and fry, turning occasionally so they color evenly, until golden brown on all sides. Remove from oil and briefly drain on paper towels. Stir together the sugar and cinnamon. Coat fried ice cream in the cinnamon sugar mixture. Serve immediately.

1 quart vanilla ice cream
1 cup crushed frosted cornflakes
1 cup sweetened coconut flakes, or 1 cup chopped walnuts, or 1 cup cookie crumbs
2 large eggs
2 tablespoons sugar
Vegetable oil, for frying
Hot chocolate sauce, optional
Whipped cream, optional

Steps:

  • With an ice cream scoop, form 4 large balls of ice cream. Place on a waxed paper lined sheet and cover with plastic wrap. Freeze for at least 2 hours.
  • In a bowl, combine the cornflake crumbs with either the coconut, walnuts or cookie crumbs (or any combination). Spread the mixture in a shallow dish.
  • Dip the ice cream balls in the crumb mixture and freeze for 30 minutes.
  • In a bowl, beat the eggs and sugar. Dip the coated ice cream balls into the eggs, then roll in the crumb mixture, coating completely. Freeze for 1 hour. (If necessary, or for a thicker crust, roll again in eggs and crumbs until the balls are completely coated.)
  • Heat the oil in a large pot or fryer to 400 degrees F. One at a time, lower the balls into the oil and fry until golden brown, about 30 seconds to 1 minute. Remove from the oil and place in a dessert bowl. Drizzle with chocolate sauce and whipped cream, as desired. Repeat with the remaining ice cream.

4 scoops well frozen ice cream
2 eggs, beaten
50 g crushed corn flakes
oil, burning hot (for frying)

Steps:

  • Give the ice-cream scoops a perfect round.
  • Put the 4 scoops in the deep freezer for 15 minutes.
  • Give it an egg wash once you remove it from the deep freezer.
  • Roll on the crushed corn flakes and give it a nice coating.
  • Put it in the freezer for 20 minutes.
  • Repeat the process twice.
  • Heat the oil.
  • Make sure it is burning hot.
  • Deep fry the ice-cream quickly for 5-8 seconds.
  • Make sure that the oil is very hot or the corn flakes won't get its colour.
  • Now add little brandy or cognac and flambe it on the table.
