2 tablespoons honey
1 tablespoon dijon mustard
1/2 teaspoon fine sea salt
1/2 teaspoon freshly crushed black pepper (finely ground)
1 large garlic clove (minced)
1/4 cup balsamic vinegar
3/4 cup extra virgin olive oil

Steps:

  • In a small mixing bowl, whisk together the honey, balsamic, mustard, salt, pepper and garlic. Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully emulsified.
  • Store in a jar with a lid and refrigerate. Shake well before serving. Enjoy!

2 eggs, lightly beaten
1 tablespoon water
0.5 cup cornmeal
3 firm green tomatoes, cut into 1/2-inch slices
Salt
Ground black pepper
0.25 cup vegetable oil
8 cup torn mixed salad greens and/or chopped romaine, iceberg, and/or Bibb lettuce
1 ounce black-eyed peas, rinsed and drained
0.667 cup sliced radishes
0.333 cup chopped pecans, toasted
1 Buttermilk Dressing or 2/3 cup bottled buttermilk ranch salad dressing
0.333 cup buttermilk
0.25 cup mayonnaise or salad dressing
1 garlic, minced
0.25 teaspoon dry mustard
0.25 teaspoon cracked black pepper

Steps:

  • In a shallow dish place flour. In a second shallow dish whisk together eggs and the water just until combined; place cornmeal in a third shallow dish. Sprinkle tomato slices with salt and pepper. Coat each tomato slice with flour, shaking off excess. Dip into egg mixture, then coat with cornmeal.
  • In a large skillet heat oil over medium-high heat. Add tomato slices, half at a time, and cook about 4 minutes or until golden brown, turning once halfway through cooking. Drain on paper towels.
  • On a serving platter arrange salad greens. Top with fried tomatoes, black-eyed peas, radishes, and pecans. Drizzle salad with Buttermilk Dressing. Buttermilk Dressing
  • In a small bowl combine buttermik, mayonnaise, garlic, dry mustard and black pepper.

This helps coat the tomato slices evenly without clumping or caking. Now that you've mastered the equation for how to fry those tomatoes to perfection, don't even think about skimping on the Buttermilk Dressing. A good, creamy dressing is a must when it comes to serving fried green tomatoes. Our recipe calls for chives, Dijon mustard, and lemon juice to create a cool and fresh condiment that's wonderful when topping this savory treat, but also an absolute standout for dressing the season's crisp and refreshing salads. 1 ½ tablespoons sour cream
1 ½ tablespoons thinly sliced fresh chives
1 tablespoon fresh lemon juice (from 1 lemon)
1 tablespoon Dijon mustard
2 teaspoons extra-virgin olive oil
1 cup whole buttermilk, divided
2 ½ teaspoons kosher salt, divided
1 ½ teaspoons black pepper, divided
Vegetable oil
1 large egg, lightly beaten
¾ cup fine yellow cornmeal
¼ teaspoon cayenne pepper
1 cup all-purpose flour, divided
1 pound green tomatoes (about 3), cut into 1/3-inch slices (12 slices)
8 cups assorted mixed lettuces (such as arugula and butter lettuce)
1 small red onion, thinly sliced (about ½ cup)

Steps:

  • Whisk together first 6 ingredients, ½ cup of the buttermilk, 1 teaspoon of the salt, and ½ teaspoon of the black pepper. Cover; chill buttermilk dressing until ready to serve.
  • Pour vegetable oil to a depth of 3 inches in a large cast-iron Dutch oven; heat over high to 350°F. Whisk together egg and remaining ½ cup buttermilk in a shallow dish. Combine cornmeal, cayenne, ½ cup of the flour, 1 teaspoon of the salt, and ½ teaspoon of the black pepper in a second shallow dish. Combine remaining ½ cup flour, ½ teaspoon salt, and ½ teaspoon black pepper in a third shallow dish. Working with 1 slice at a time, dredge tomato in flour mixture, then in egg mixture, and then in cornmeal-flour mixture.
  • Fry tomato slices, in 2 batches, in hot oil until browned, about 3 to 4 minutes total, turning slices halfway through frying. Drain on paper towels.
  • Combine lettuces and red onion in a large bowl. Toss lettuce mixture with ¼ cup of the buttermilk dressing, reserving the rest. Divide salad among 4 plates, top each with 3 fried green tomatoes. Drizzle evenly with remaining dressing.

2 to 3 large green tomatoes, sliced 1/4 to 3/8-inch thick
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup plain white cornmeal
1/2 cup all-purpose flour
2 teaspoons Creole seasoning (recommended: Konriko)
Baby arugula
Jumbo lump crabmeat
4 tablespoons champagne vinegar
2 teaspoons ground sumac, plus more for serving
1/8 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
6 tablespoons extra-virgin olive oil

Steps:

  • Preheat approximately 2-inches oil in large, heavy skillet to 325 degrees F. An electric- fryer can be used.
  • Sprinkle both sides of tomatoes with salt and pepper. Combine the cornmeal, flour and Creole seasoning in a shallow dish. Dredge the tomatoes in the cornmeal mixture and fry until golden brown. Remove from the oil and drain on paper towels.
  • For the vinaigrette:
  • Add the vinegar, sumac, and salt and pepper to a small bowl. Slowly whisk in the olive oil until combined. Remove and reserve 4 tablespoons. In a large bowl, add enough arugula for 4 servings. Pour the vinaigrette over the arugula and toss. Divide the arugula on serving plates, arrange 2 to 3 fried green tomatoes on the arugula and top with equal amounts of crabmeat. Drizzle reserved vinaigrette over the crabmeat and sprinkle with ground sumac. Serve immediately.

1 small red onion, thinly sliced
1 large head romaine lettuce, rinsed, dried and torn into bite-sized pieces

  • to Make Vinaigrette:.
  • In medium bowl whisk all the ingredients except the oil until mixed. Gradually whisk in the oil until smooth.

EASY TOMATO BALSAMIC VINAIGRETTE

I can't take credit for this recipe. A friend of mine who is a chef gave me this and I love it. Serve over grilled vegetables, fish and of course your favorite salad greens. One note, using a tube of the "double-concentrated" tomato paste really does make a big difference, as well as using an aged Balsamic. But I have made it with every day Balsamic and "standard" tomato paste and it still is pretty tasty. I think the rice vinegar is very important to use, and shouldn't be substituted in this recipe.
