FRIED GREEN BEANS
Fried Green Beans are a simple and easy appetizer recipe to whip up.

Steps:
- Using a large pot, bring water and salt to a rolling boil.
- Add trimmed green beans and cook for 2-3 minutes until they are bright green.
- Remove green beans from pot and place in a bowl filled with water and ice for about 5 minutes. This stops them from cooking.
- Place green beans on paper towels and pat dry until ready for dipping in the batter.
- In a large bowl, whisk buttermilk and eggs together.
- In a separate bowl, whisk flour, breadcrumbs, and seasonings together.
- Slowly add flour mixture to buttermilk mixture, stirring vigorously until combined.
- Add green beans to batter and stir to coat.
- Heat oil in a frying pan over medium heat.
- Slowly add green beans one at a time into hot oil and cook until golden brown, turning during cooking (the green beans will float to the top so make sure not to overcrowd the pan so you have more control over cooking/flipping over each one).
- Remove and place on a plate lined with paper towels.
- Serve with your favorite dipping sauce.

My husband Ed, who hails from Illinois, gave me this recipe and has cooked it for me many times. It has a unique flavor and I have never seen any recipe that even resembles it. It is time consuming & must be watched closely.

- 1. Add bacon grease to large skillet, drain 2 cans cut green beans and add to skillet.
- 2. Cook on medium to high heat, until beans start changing color and shriveling up.
- 3. Watch closely & don't leave in long enough for beans to get crispy. Best served immediately.

Steps:
- Heat oven to 350°. Spray square baking dish, 8x8x2 inches, with cooking spray. Trim fat from pork if necessary. Sprinkle both sides of pork with salt and pepper.
- Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet about 10 minutes, turning once, until brown. Place in baking dish.
- Mix remaining ingredients except onions in medium bowl. Spread over pork chops.
- Bake uncovered about 50 minutes or until mixture is bubbly. Sprinkle onions over casserole. Bake uncovered 5 minutes.
