Steps:
- Over medium heat, melt butter in a frying pan , or coat the pan with cooking spray before heating. Add garlic and lemon juice and sauté for about 2 minutes, watching to make sure the garlic doesn't burn.
- Crack eggs into frying pan. Sprinkle with salt and pepper and cook for about 2 minutes, until yolk begins to get a little firm.
- Flip eggs carefully and sprinkle again with salt and pepper. Allow to cook for 1 to 2 minutes (longer if you like a firmer yolk).
- Remove from frying pan, sprinkle with parsley, and serve immediately.

- Cook linguine according to package directions for al dente. Meanwhile, in a large skillet, heat 2 tablespoons oil and 1 tablespoon butter over medium heat until butter melts. Stir in garlic; cook until golden, about 1 minute. Add pepper flakes., Break two eggs, one at a time, into a custard cup or saucer; slip into skillet on top of garlic and pepper flakes. Reduce heat to low; cook until whites are completely set., Drain linguine; return to pan. Add cooked egg mixture; stir in 2 tablespoons cheese, salt and pepper, tossing to coat. Keep warm. Steps:
- Crush the garlic with the salt and mix well with the lemon juice.
- Melt the butter in a large frying pan.
- Add the garlic mixture.
- As the butter begins to color, slide in the eggs(previously broken into a bowl)and fry gently.

ASPARAGUS WITH BUTTER LEMON AND MINT DRIZZLE
This is wonderful when that spring asparagus arrives on the supermarket shelves. I've also made this using lime with great results. This makes a light amount of the drizzle double it if you would like all of the asparagus well coated.

Steps:
- Simmer, steam or roast the asparagus until tender but still firm.
- Use a paper towel to remove any residual water from the asparagus.
- Place the butter in a microwave proof container (I use a glass measuring cup) along with the lemon juice and chopped mint.
- While the asparagus is cooking warm the butter to the point where it's not quite all melted.
- Remove from the microwave and stir to finish melting the butter and mix the lemon juice and mint nicely together.
- Drizzle the butter mixture over the still hot asparagus.
- Sprinkle the lemon zest over the top if using.

- Take the cut salmon and put it in a dish, place aside.
- Zest all the lemons and cut up half of the mint,.
- Add the mint, lemon zest, and vegetable oil to salmon, juice 2 of the the lemons and also add it to the fish.
- Turn over the salmon in the dish, cover let fish sit in fridge for 2 hours.
- Preheat oven to 350°F, take cover off fish, put fish in oven,cook for 40 minute take out of oven. cut lemon into wedges, put fish on plate, garnish plate with lemons and some mint. enjoy!
