BUTTERMILK FRIED CHICKEN DRUMSTICKS
This is a faster version of fried chicken, using everyday pantry items. A quick toss in buttermilk and yellow mustard brings tangy flavor to the chicken, and the cornflake-herb crust offers a nice crunch.

- Preheat the oven to 250 degrees F. In a large bowl, whisk together the buttermilk, eggs, and 2 tablespoons mustard. Add the drumsticks and toss to coat, then set aside.
- Fill a large cast-iron pan with 1/2-inch oil and heat over medium heat until shimmering. Meanwhile, combine the cornflake crumbs, flour, thyme, granulated garlic, 1 teaspoon salt, and 1/4 teaspoon black pepper in a shallow baking dish; set aside. In a small bowl, whisk together the honey and remaining 1/4 cup mustard and set aside.
- Remove the chicken from the buttermilk, shaking off any excess, then transfer the drumsticks to the flour mixture and coat well. Fry the pieces in 2 batches, turning halfway, until richly golden brown and crisp and the internal temperature registers 165 degrees F on an instant-read thermometer (avoid touching bone), about 15 minutes. (Turn the heat down if browning too fast.) Transfer the drumsticks to a wire rack set over a baking sheet and sprinkle generously with salt. Keep cooked drumsticks warm in the oven while frying the second batch. Serve immediately with the honey mustard.

- Combine garlic, honey, 1 tablespoon olive oil, salt, cumin, paprika, oregano, and pepper in a large bowl. Add drumsticks; toss to coat. Arrange drumsticks vertically in the prepared basket, leaning against the basket wall and one another.
- Cook in the air fryer at 400 degrees F (200 degrees C) until an instant-read thermometer inserted in the thickest part of the drumstick reads 175 degrees F (80 degrees C), 15 to 20 minutes. Rearrange drumsticks with kitchen tongs halfway through cooking for even cooking.
- Meanwhile, combine spinach, sour cream, cilantro, lime juice, garlic, jalapeno pepper, salt, and pepper in the bowl of a food processor; process until crema is smooth. Drizzle some crema sauce over drumsticks and serve with remaining crema.

- In a large bowl or dish, combine yogurt, mustard and garlic. Add chicken and turn to coat. Cover and refrigerate 8 hours or overnight., Preheat oven to 425°. FRIED CHICKEN DRUMSTICKS WITH CUMIN SALT

- In a large sealable plastic bag combine buttermilk and 1/2 tablespoon cumin. Add drumsticks and seal bag, pressing out excess air. Marinate drumsticks at room temperature 15 minutes. In another plastic bag combine flour and salt and pepper to taste. In a small cup stir together remaining 1/2 tablespoon cumin, 1 teaspoon salt, and 1/2 teaspoon pepper.
- In a 4 1/2- to 5-quart kettle (preferably cast-iron) heat oil until a deep-fat thermometer registers 345° F. Just before oil reaches 345° F. drain half of drumsticks. Add drumsticks to bag with flour mixture and shake to coat, knocking off excess. Using tongs lower floured drumsticks carefully into hot oil. Fry drumsticks, turning occasionally and regulating heat to keep oil at a constant 345° F., until mahogany-colored and cooked through, about 12 minutes. Transfer fried drumsticks with tongs to a rack set over paper towels to drain and season while hot with half of cumin salt. Prepare remaining drumsticks in same manner.

- Before frying, boil chicken legs in a pot of water for 10 minutes.
- In a large saucepan, heat vegetable oil on medium heat.
- On a large plate, combine flour, cayenne pepper, paprika, and salt.
- Keep beaten eggs in a separate bowl.
- Take 1 chicken leg and cover it is flour mixture.
- Place the chicken leg in eggs and cover it in egg.
- Place the chicken leg back into the flour mixture and cover it again in flour.
- Once oil is hot and ready for frying, place chicken leg into the oil for frying.
- Repeat steps 5-8 for each chicken leg allowing up to 3 legs to fry at one time.
- Once legs are fried to a golden brown, remove from oil and place on a double-folded paper towel on a plate.
- Allow plenty of time to cool before serving.

- Rinse your chicken legs under cold running water. Put them in a large bowl and season with salt, pepper, garlic powder, and half of the five-spice powder. In a medium bowl, whisk together your 2 eggs and tablespoon of water. Add to the chicken, and toss everything together.
- In shallow baking dish, stir together the flour, baking powder, white pepper, and the other half of the five spice powder. Fill a cast iron skillet slightly less than halfway with oil, and heat to 360 degrees.
- Take each drumstick and allow the excess egg to drip off. Thoroughly coat in the flour mixture, and shake off any excess. Lay them in the oil, four at a time.
- Fry each batch of chicken for 14 minutes, maintaining a temperature of 350 degrees (the oil will cool right down when you add the chicken), and flipping them about halfway through, until crispy and golden brown. Serve!
