Mix up your side dishes with this easy and delicious chicken potato salad. Creamy, fresh and a little bit spicy, it's perfect to serve at all your summer cookouts.

Steps:
- In a large serving bowl, combine the chicken, potatoes, carrots, peas, jalapenos, 1 Tablespoon parsley.
- In a small mixing bowl, combine the mayonnaise, Mexican cream and pepper. Pour over the chicken and combine. Taste, if it needs salt, add just a bit.
- Place the lettuce around a plate and cover with the chicken salad. Sprinkle with remaining parsley.
- Serve with crackers.

FRIED CHICKEN DINNER SALAD
This is a quick dinner salad. I prefer mine with a honey mustard dressing and my husband likes his with ranch dressing. Use the dressing of your choice.

- Beat egg in a shallow dish.
- Mix bread crumbs and Parmesan cheese together in a shallow dish.
- Season chicken with Cajun seasoning. Dip chicken into beaten egg and dredge in bread crumb mixture, pressing lightly to coat evenly.
- Heat olive oil in a deep skillet over medium-high heat. Cook breaded chicken in the hot oil until golden brown, about 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Drain chicken on paper towels. Slice into strips.
- Divide lettuce, tomato, carrots, and hard-boiled eggs between 2 large pasta bowls. Top with sliced chicken; drizzle salad dressing on top.

- Sprinkle potatoes with applewood seasoning. In a large skillet, heat oil over medium heat. Add potatoes in batches; cook, stirring frequently, until potatoes are tender, 15-20 minutes. FRIED CHICKEN AND POTATO SALAD WITH CARROTS
Steps:
- In a bowl whisk together the yogurt, cumin, Worcestershire sauce, 2 teaspoons Tabasco, and salt and black pepper to taste, add the chicken and combine the mixture well. Let the chicken marinate, covered and chilled, for at least 8 hours or overnight. In a kettle of boiling salted water cook the potatoes for 4 to 6 minutes, or until they are just tender, transfer them with a sieve to a bowl of ice and cold water to stop the cooking, and drain them well. In the boiling water cook the carrots for 2 to 4 minutes, or until they are crisp tender, drain them, and plunge them into a bowl of ice and cold water to stop the cooking. Drain the carrots well and in a bowl, combine them with the potatoes. In a large plastic bag combine the bread crumbs and the chicken, drained, shake the bag to coat the chicken with the bread crumbs, and transfer the chicken to a rack set in a jelly roll pan. Chill the chicken uncovered for 30 minutes. In a bowl whisk together the vinegar, white pepper and remaining 1 1/2 teaspoons Tabasco, add the olive oil in a stream, whisking until emulsified. Whisk in the parsley. In a deep skillet heat 1 1/2" vegetable oil to 375 degrees. Fry the chicken in batches for 30 seconds to 1 minute or until it is no longer pink inside, and transfer with a slotted spoon to paper towels to drain. To the potato mixture ass the chicken, scallions and dressing and toss well. Do not finish making the salad more than 1 hour in advance.
SKILLET CHICKEN THIGHS WITH CARROTS AND POTATOES
These chicken thighs are cooked in one skillet for easy cleanup. Carrots, potatoes, and onions are added for a complete meal. Serve with a side salad and some crusty bread.

- Season chicken thighs with paprika, salt, and pepper.
- Heat oil in a skillet over medium-high heat. Place chicken thighs skin-side down in the skillet and cook, without moving, until golden brown, 7 to 9 minutes. Flip thighs over and cook for an additional 3 to 5 minutes. Remove from the skillet and set aside.

- Place chicken thighs over vegetables, cover, and cook until carrots are tender and chicken is no longer pink at the bone and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Season with additional salt and pepper if needed.

- Blot chicken thighs with paper towels and sprinkle with salt and pepper.
- Melt butter with olive oil in a 12-inch skillet over medium heat. Place chicken thighs in the hot oil and cook until browned, about 4 minutes per side. Remove chicken from the skillet and keep warm.

- Preheat the oven to 425 degrees F (220 degrees C).
- Wash chicken breasts and pat dry. Separate the skin from the meat to create a pocket on each breast.
- Combine garlic, olive oil, salt, pepper, and rosemary leaves in a small bowl; stir to combine. Rub about 1/6 of olive oil mixture under the skin of each breast and rub another 1/6 on the outside of the skin. Sprinkle with additional salt and pepper if you wish.
- Arrange carrots, potatoes, and onion in the bottom of a roasting pan or casserole dish and season with salt and pepper. Place chicken, skin-side up, on top of the vegetables.
