ASPARAGUS WITH LEMON BUTTER



Asparagus with Lemon Butter image

Buttery, fresh asparagus sure to please any guest.

Number Of Ingredients 6

4 tablespoon butter
1 juiced lemon
salted water
5 to 6 spears per person asparagus
olive oil
to taste kosher salt

Steps:

  • Wash asparagus and line them up on a cutting boar with the tops even. Even up bottoms and cut off tough ends.
  • Bring a skillet or oval casserole filled half full of salted water to boil. Dump in asparagus all at once. When water returns to the boil, cook asparagus from 1 to 3 minutes depending on its size and your preference. Remove from pot and drain well.
  • Return asparagus to hot pan, squeeze lemon juice over top. Fry with olive oil and a little butter, being careful not to overcook. Add kosher salt to taste. Serve immediately.
  • To make sauce, melt 2 tablespoons butter and whisk in lemon juice.

  • Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. Serve with Greek yogurt.

1 cup milk
2 eggs
1 ½ cups biscuit mix
½ cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon ground black pepper
1 bunch fresh asparagus, trimmed

Steps:

  • Heat vegetable oil in a large skillet over medium heat.
  • Whisk milk and eggs together in a bowl.
  • Stir biscuit mix, Parmesan cheese, salt, and black pepper together in a separate bowl.
  • Dip asparagus into milk mixture.
  • Roll and coat asparagus in dry ingredient mixture. Repeat with a second layer for each asparagus.
  • Carefully place coated asparagus in the hot oil; fry until golden brown, 2 to 4 minutes.

1 teaspoon coarse salt
¼ teaspoon ground black pepper
3 cloves garlic, minced
1 pound fresh asparagus spears, trimmed

  • Melt butter in a skillet over medium-high heat. Stir in the olive oil, salt, and pepper. Cook garlic in butter for a minute, but do not brown. Add asparagus, and cook for 10 minutes, turning asparagus to ensure even cooking.

3 slices bacon, chopped
1 ½ teaspoons butter
1 pound fresh asparagus, trimmed
1 shallot, thinly sliced
1 pinch salt, or to taste
1 pinch ground black pepper, or to taste
1 tablespoon grated Parmesan cheese

Steps:

  • Cook and stir bacon in a skillet over medium heat until crisp, about 5 minutes. Discard grease.
  • Melt butter in the same skillet.
  • Cook and stir asparagus and shallot with salt and black pepper in melted butter and bacon. Cover skillet and cook, stirring occasionally, until asparagus are tender, about 5 minutes.
  • Transfer asparagus mixture to a platter. Sprinkle with Parmesan cheese.

Still trying to find a way to get my husband to eat asparagus. He loves fried foods, so maybe this will work! Recipe from Paula Deen. Serve with recipe#251965. Says it makes 12-15 servings, but that seems a little high to me. If you try this, please approximate how many servings you got out of it.

1 lb fresh asparagus
1 cup all-purpose flour
1 cup whole buttermilk
1 large egg
1 tablespoon hot sauce
1 1/2 cups self-rising cornmeal mix
1 tablespoon cajun seasoning
peanut oil (for frying)

Steps:

  • Snap off tough ends of asparagus. Rinse asparagus with water, and leave damp.
  • Place flour in a resealable plastic bag; add asparagus, seal and shake to coat.
  • In a shallow dish, whisk together buttermilk, egg, and hot sauce.
  • In another shallow dish, combine cornmeal mix and Cajun seasoning.
  • Dip asparagus in buttermilk mixture; dredge in cornmeal mixture.
  • In a large Dutch oven, pour oil to a depth of 2 inches. Heat oil over medium heat to 365 degrees. Fry asparagus, in batches, 4-5 minutes, or until golden brown.
  • Drain on paper towels and serve with Creole Mustard Sauce.

OVEN FRIED CHICKEN FROM PAULA DEEN

This is very delicious, and easy to make! Placing the chicken on the cooling rack is REALLY what makes it great, no need to turn them. I double the mustard/water combo, because I think this makes the chicken more moist. If they are not brown enough for you, place under broiler for a few minutes after it is baked to get a nice brown color. Also, a drizzle of melted butter before baking is a nice touch. This is from Paula Deen, hope you enjoy! I am trying to say Panko bread crumbs in the ingredients, but it will not let me. P.S. I am SO in love with Panko bread crumbs, if you have not yet tried them, please do, you will love them! : )

1 cup grated parmesan cheese
4 tablespoons olive oil, divided
2 tablespoons freshly minced thyme leaves
kosher salt & freshly ground black pepper
1/4 cup Dijon mustard
2 tablespoons water
2 1/2 lbs boneless skinless chicken breasts, pounded to 1/4 -inch thickness

Steps:

  • Preheat oven to 400 degrees F.
  • Line a baking sheet with heavy-duty aluminum foil. Place a cooling rack over pan and spray rack with nonstick cooking spray.
  • In a shallow dish, combine bread crumbs, cheese, 2 tablespoons olive oil, thyme, salt and pepper, to taste.
  • In a separate shallow dish, combine mustard, water, salt and pepper, to taste, and remaining olive oil.
  • Coat each chicken breast with mustard mixture; dredge each in bread crumb mixture.
  • Place on prepared rack in pan.
  • Bake for 25 to 30 minutes, or until chicken is golden brown.

2 cups canned diced tomatoes
2 cups tomato sauce
1 cup water
1/2 cup onion, diced
1/2 cup green bell pepper, diced
2 garlic cloves, diced
1/4 cup chopped fresh parsley leaves
1 1/2 teaspoons italian seasoning
1 1/2 teaspoons house seasoning (see recipe below)
1 1/2 teaspoons seasoning salt
1 1/2 teaspoons sugar
2 bay leaves
1 1/2 lbs ground beef
6 -9 long strips lasagna noodles
12 ounces cottage cheese, mixed with 1 beaten egg and 1/2 cup Parmesan
1 cup grated gruyere cheese
1 cup grated swiss cheese
2 cups grated cheddar cheese
1 (8 ounce) package cream cheese
1 cup mozzarella cheese, grated
flour, for coating
2 eggs, beaten
plain breadcrumbs, for coating
peanut oil, for frying

Steps:

  • For the sauce:.
  • Combine the tomatoes, tomato sauce, water, onions, peppers, garlic, parsley, seasoning mixtures, sugar and bay leaves in a stockpot.
  • Bring to a boil, then reduce the heat and simmer, covered, for 1 hour. See Cook's Note*
  • Crumble the ground beef in a saucepan.
  • Cook until no pink remains then drain off the fat.
  • Add the ground beef to the stockpot.
  • Simmer for another 20 minutes.
  • Remove bay leaves.
  • Cook the pasta according to the package directions.
  • Drain and set aside.
  • *Cook's Note: If sauce is too thin, for your taste, you can thicken it up at this time by mixing 1 tablespoon of cornstarch and a 1/4 of a cup of cold water. Bring sauce back to a boil. Stir in cornstarch mixture, stirring constantly.
  • For the lasagna:.
  • Place a thin layer of sauce in the bottom of a 9 by 13 by 2-inch pan.
  • Layer 1/3 of each; noodle; cottage cheese mixture, Gruyere, Swiss and Cheddar cheese. Pinch off small pieces of cream cheese and dot over the other cheeses.
  • Add another layer of sauce.
  • Repeat layering 2 to 3 times ending with sauce.
  • At this point it may be covered and refrigerated (see note below) or bake for 20 minutes, remove from oven and top with mozzarella and continue to bake for another 10 to 15 minutes.
  • *Note: If lasagna has been refrigerated, bake for 40 minutes total.
  • Once cooked, refrigerate overnight, and cut into 15 squares.
  • Heat oil to 350º F.
  • Dredge each square in flour then egg and then bread crumbs to coat.
  • Fry for about 1 minute until golden brown.

1 c buttermilk
1 egg
2 splashes hot sauce
1 1/2 c self rising corn meal
1 Tbsp cajun seasoning
veg oil for frying
CREOLE SAUCE
1/4 tsp creole seasoning
1/4 tsp garlic powder
1/4 c onion powder
3 Tbsp creole mustard
2 tsp dry ranch dip seasoning
2 shakes hot sauce
lemon juice of 1/2 of lemon
2/3 c sour cream
salt to taste

Steps:

  • 1. Rinse drain and snap off ends of asparagus.
  • 2. Shake asparagus in flour in plastic bag.
  • 3. Mix wet ingredients of buttermilk, egg and hot sauce. Dredge in wet ingredients.
  • 4. Then mix corn meal and cajun seassoning and dip asparagus in.
  • 5. Then put in hot oil and fry til golden brown (just a few mins).
  • 6. You Can eat just as is or make the creole sauce that Is at bottom of recipe.
