3 pounds fresh ripe tomatoes
4 cloves garlic (peeled)
½ onion (diced)
½ red bell pepper (diced)
2 tablespoons olive oil
salt & pepper to taste
½ teaspoon dried basil
½ teaspoon dried oregano
2 cups chicken broth
2 tablespoons fresh herbs (basil/parsley/oregano)
fresh basil & parsley for serving
¼ cup parmesan cheese (optional garnish)
½ cup heavy cream (optional)

Steps:

  • Preheat oven to 450°F.
  • Wash and cut tomatoes (cut in half for smaller apricot sized tomatoes, cut larger tomatoes into quarters or eighths).
  • Place tomatoes, garlic, onion, bell pepper, olive oil, salt, pepper and dried herbs on a large pan.
  • Roast 25 minutes, stirring after 15 minutes. Turn oven to broil and broil 3-4 minutes or until some of the tomatoes get a little bit of char color on them.
  • Bring chicken broth to a boil, add tomatoes, and fresh herbs. Using a hand blender, blend mixture until smooth and creamy. Add heavy cream if using.
  • Top with parmesan cheese, croutons or a drizzle of heavy cream.

This is the essential homemade tomato soup recipe. It's time consuming because everything is from scratch, but very easy to make and easy to customize. You'll need a blender, mesh strainer, and two large pots. If you're cooking for fewer, cut the recipe in half. Top with seasoned croutons, crackers, pumpkin seeds, or feta cheese. The kids like to add Goldfish® crackers. You can be fancy and garnish with basil leaves also.

6 pounds tomatoes, halved, or more to taste
8 cloves unpeeled garlic, or more to taste
3 tablespoons olive oil
3 tablespoons coarse salt, or to taste
2 tablespoons butter
1 medium onion, diced
2 teaspoons white sugar, or more to taste
1 teaspoon dried oregano
4 cups vegetable stock
½ cup heavy cream
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange tomatoes cut-side up on 1 or 2 large 4-sided baking pans. Place unpeeled garlic on top of tomatoes. Drizzle with olive oil and sprinkle with coarse salt.
  • Roast in the preheated oven for 1 hour. Remove from the oven and let cool in the pan.
  • Meanwhile, heat butter in a large stockpot over medium-low heat. Cook onion, sugar, and oregano in the hot butter until onion is softened, 5 to 7 minutes. Peel roasted garlic and add to the pot. Add roasted tomatoes and their juices. Pour in vegetable stock. Cover and let soup simmer for 20 minutes.
  • Puree soup using an electric blender working in batches, using extreme caution with hot liquids; vent the lid a bit and cover with a old towel. Force puree through a mesh strainer into another pot, discarding solids.
  • Stir in heavy cream and season soup with salt and pepper.

1 tbsp olive oil
1 large onion (chopped)
2 carrots (chopped)
2 cloves garlic (minced)
15 medium ripe tomatoes (chopped into chunks)
5 fresh basil leaves (chopped)
1/4 tsp salt and pepper (to taste)
1/3 cup tomato paste
1 cup vegetable stock
1/2 cup milk (or dairy-free milk of your choice; coconut milk works very well)
A few basil leaves for garnish

Steps:

  • Prepare all the vegetables to start: chop the onion, carrots, tomatoes, and the basil leaves. Mince the garlic, and set everything aside.
  • Place a large pot over medium heat. Once the pot has heated, add the oil and then the onions and the garlic.
  • Saute the onions and garlic until the onions begin to soften. Add the carrots, tomatoes, basil leaves and salt and pepper, and stir. Let everything cook for a few minutes, stirring often. You'll notice the tomatoes begin to fall apart as they cook and the carrot pieces will begin to soften slightly. After about 5-6 minutes, add the vegetable stock and tomato paste and stir to combine.
  • Add a lid to the pot and let the soup come to a slow boil. Once it reaches a boil, turn the heat to low and let the soup simmer for about 20 minutes, stirring every 3-5 minutes or so.
  • Once the soup has finished simmering and the carrots have softened, remove the pot from the heat and puree the soup using an immersion blender. If you have a high-powered blender, feel free to use that instead. I like my immersion blender because it creates far fewer dishes to wash!
  • After you've pureed the soup put it through a strainer to catch any little bits of tomato seeds or tomato skin that are still floating around in there. There won't be much to strain out, but no one likes little strands of tomato skin in tomato soup!
  • Once you've strained the soup, add the milk (or dairy-free milk alternative, if you wish) and stir to combine.
  • Ladle the soup into bowls, add a few fresh basil leaves as a garnish, and serve!

2 tablespoons Filippo Berio® Extra Virgin Olive Oil plus some, for drizzling
1 onion, diced
4 garlic cloves, minced
1 tablespoon flour
3/4 cup low sodium, fat free chicken stock
9 medium to large ripe heirloom tomatoes, coarsely chopped
1 teaspoon dried thyme
1/2 teaspoon dried basil
Kosher salt and white pepper
1/2 teaspoon lemon zest

Steps:

  • In a large saucepan heat olive oil over medium-high heat. Add onion and garlic and cook for approximately 5 minutes or until the onion is tender. Add flour and cook for 2 to 3 minutes, stirring constantly. Pour in chicken stock and bring to a light boil, stirring until thickened. Add tomatoes, thyme, and basil. Reduce the heat to a simmer and cook for 10 minutes. Stir in additional chicken stock if desired. Remove from heat and allow to cool slightly.
  • Transfer soup in batches to a blender or food processor. Pulse until smooth. Pour soup into a large saucepan and season with kosher salt and white pepper to taste. Keep warm on low heat until ready to serve.
  • Ladle soup into bowls. Garnish with lemon zest and drizzle with olive oil.

1 slice onion
4 whole cloves
2 cups chicken broth
2 tablespoons butter

Steps:

  • In a stockpot, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.
  • In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.

1 1/2 cups chopped red onions (2 onions)
2 carrots, unpeeled and chopped
1 tablespoon minced garlic (3 cloves)
4 pounds vine-ripened tomatoes, coarsely chopped (5 large)
1 1/2 teaspoons sugar
1 tablespoon tomato paste
1/4 cup packed chopped fresh basil leaves, plus julienned basil leaves, for garnish
3 cups chicken stock, preferably homemade
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
3/4 cup heavy cream
Croutons, for garnish

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot over medium-low heat. Add the onions and carrots and saute for about 10 minutes, until very tender. Add the garlic and cook for 1 minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, salt, and pepper and stir well. Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 to 40 minutes, until the tomatoes are very tender.
  • Add the cream to the soup and process it through a food mill into a bowl, discarding only the dry pulp that's left. Reheat the soup over low heat just until hot and serve with julienned basil leaves and/or croutons.

Number Of Ingredients 9

1-1.25kg/2lb 4oz-2lb 12oz ripe tomatoes
1 medium onion
1 small carrot
1 celery stick
2 tbsp olive oil
2 squirts of tomato purée (about 2 tsp)
a good pinch of sugar
2 bay leaves
1.2 litres/ 2 pints hot vegetable stock (made with boiling water and 4 rounded tsp bouillon powder or 2 stock cubes)

Steps:

  • Firstly, prepare your vegetables. You need 1-1.25kg/2lb 4oz-2lb 12oz ripe tomatoes. If the tomatoes are on their vines, pull them off. The green stalky bits should come off at the same time, but if they don't, just pull or twist them off afterwards. Throw the vines and green bits away and wash the tomatoes. Now cut each tomato into quarters and slice off any hard cores (they don't soften during cooking and you'd get hard bits in the soup at the end). Peel 1 medium onion and 1 small carrot and chop them into small pieces. Chop 1 celery stick roughly the same size.
  • Spoon 2 tbsp olive oil into a large heavy-based pan and heat it over a low heat. Hold your hand over the pan until you can feel the heat rising from the oil, then tip in the onion, carrot and celery and mix them together with a wooden spoon. Still with the heat low, cook the vegetables until they're soft and faintly coloured. This should take about 10 minutes and you should stir them two or three times so they cook evenly and don't stick to the bottom of the pan.
  • Holding the tube over the pan, squirt in about 2 tsp of tomato purée, then stir it around so it turns the vegetables red. Shoot the tomatoes in off the chopping board, sprinkle in a good pinch of sugar and grind in a little black pepper. Tear 2 bay leaves into a few pieces and throw them into the pan. Stir to mix everything together, put the lid on the pan and let the tomatoes stew over a low heat for 10 minutes until they shrink down in the pan and their juices flow nicely. From time to time, give the pan a good shake - this will keep everything well mixed.
  • Slowly pour in the 1.2 litres/ 2 pints of hot stock (made with boiling water and 4 rounded tsp bouillon powder or 2 stock cubes), stirring at the same time to mix it with the vegetables. Turn up the heat as high as it will go and wait until everything is bubbling, then turn the heat down to low again and put the lid back on the pan. Cook gently for 25 minutes, stirring a couple of times. At the end of cooking the tomatoes will have broken down and be very slushy looking.
  • Remove the pan from the heat, take the lid off and stand back for a few seconds or so while the steam escapes, then fish out the pieces of bay leaf and throw them away. Ladle the soup into your blender until it's about three-quarters full, fit the lid on tightly and turn the machine on full. Blitz until the soup's smooth (stop the machine and lift the lid to check after about 30 seconds), then pour the puréed soup into a large bowl. Repeat with the soup that's left in the pan. (The soup may now be frozen for up to 3 months. Defrost before reheating.)
  • Pour the puréed soup back into the pan and reheat it over a medium heat for a few minutes, stirring occasionally until you can see bubbles breaking gently on the surface. Taste a spoonful and add a pinch or two of salt if you think the soup needs it, plus more pepper and sugar if you like. If the colour's not a deep enough red for you, plop in another teaspoon of tomato purée and stir until it dissolves. Ladle into bowls and serve. Or sieve and serve chilled with some cream swirled in. In the Fall when fresh field tomatoes are at their best I make a huge batch of this soup and freeze it for use over the Winter. It freezes very well and tastes fresh when defrosted. This is much better than the commercially canned soup and I know that I have used the best ingredients with no chemical preservatives.

4 c tomatoes, diced or pureed in the blender (approximately 8 small tomatoes)
1 onion chopped
4 clove garlic, minced
1 c chicken broth
1 tsp sea salt or garlic salt
1 Tbsp dry basil or fresh basil if you have it
1 dash(es) pepper
2-3 tsp sugar
1 Tbsp sour cream (optional)

Steps:

  • 1. Saute onion and garlic in a little coconut or canola oil till tender and translucent.
  • 2. Add tomatoes and chicken broth, and seasonings and cook over medium heat for approximately 15 minutes.
  • 3. Remove from heat and allow to cool slightly before transferring carefully to a blender. Puree until smooth.
  • 4. Return to pot to reheat. Check the seasonings and correct if necessary. Serve with a dollop of sour cream. (Optional)
  • 5. You may add some cooked seafood to the prepared soup to make a good seafood soup. 1/4 c. to 1/2 c. is plenty.

The half and half really adds great texture to the soup so don't cheat and add skim milk or other low fat milk. It will really take away from the great taste of the soup. The touch of cloves adds a special taste that will not be missed. A must have in this soup!
