This an old recipe of my great grandmother,it was passed donw to me by my grandmother but I added a little twist to it by adding blueberry instead of blackberriesand it turn out very good, I love blackberry cobbler it's my favorite.

1 prepared pie crust sheet
2 (1 pound bag frozen peaches, slightly thawed and coarsely
1 pt fresh blueberries
2 Tbsp all-purpose flour
1/2 c sugar
1/4 tsp ground nutmeg
1/2 tsp vanilla extract
3 Tbsp unsalted butter, cold and cut into cubes
1 egg mixed with 1 tablespoon water, for egg wash
sugar cubes, crushed for dusting

Steps:

  • 1. Directions Preheat oven to 400 degrees F. Roll pastry to fit a 2-quart oval baking dish. In a large bowl, combine peaches and blueberries. Mix in flour, sugar, nutmeg, vanilla and butter cubes. Pour into the baking dish and cover with pastry. Using a fork, cut off excess dough and create a decorative edge by pressing tines along edge of pan and pushing down. With a paring knife, cut 3 slices on top of the pastry to vent. Brush on egg wash and dust with sugar. Bake until golden brown on top and edges are bubbling, about 45 to 50 minutes.

Summer is the best time of the year because fresh, organic, local fruit is so readily available! This is a recipe I put together trying to stay with clean foods, local fresh fruit, and nut flour. I do not eat gluten free, but I love the way nut flours work in baked good. So this one is made using almond flour rather than wheat flour (but wheat would work fine) and I used very ripe fruit so didn't need all the sugar in other recipes. Turned out delicious! A definite keeper!

3 cups fresh peaches
1 cup fresh blueberries
2 teaspoons cinnamon
1 tablespoon cornstarch
1/3 cup sucanat or 1/3 cup white sugar
1 teaspoon baking powder
2/3 cup almond flour or 2/3 cup flour
1/4 cup butter
1/4 cup hot water

Steps:

  • Bring a large pot of water to boil, and have a large bowl with cold (ice) water standing by. Drop the peaches into the boiling water one a time. Keep them in there for no more than a minute, then take out and immediately put into cold water. The skins will slide right off!
  • Slice peaches into a prepared baking dish. Add blueberries. Mix 1 tsp of the cinnamon and all of the cornstarch. Note, I do not add additional sweetener to the fruit, but you might want to if they are not ripe, or not in season.
  • Melt the butter and let it cool a bit. Mix together the baking powder, the additional cinnamon, sucanat (which is dried sugar cane juice and is AWESOME), almond flour (or you can go half almond flour with wheat flour, or just go with wheat flour), and butter. Add the hot water until it is the conisistency of a sweet bread batter. Pour over your fruit and bake at 425 for 30-40 minutes or until the top is golden brown.

2 (15 ounce) cans sliced peaches
1 betty crocker wild blueberry muffin mix
1 cup water
3 tablespoons oil
1 egg

Steps:

  • In a 2-quart baking dish add 1 can of peaches and juice and 1 can without juices.
  • Next add can of blueberries from muffin mix and juices, DO NOT DRAIN, mix fruits well.
  • In a large bowl combine muffin mix, water& oil, just until mixed.
  • Pour over fruit and place in a 425°F preheated oven.
  • Bake for about 20 minutes.

4 lbs peaches, peeled and sliced
3/4 cup sugar
3 tablespoons flour (all purpose)
3/4 cup butter
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup vegetable oil
1 large egg, lightly beaten
1 cup fresh blueberries

Steps:

  • Peach Mixture:.
  • Mix together peaches, sugar and flour.
  • Melt butter in skillet over medium heat, add peach mixture, bring to boil, stirring often, for 5 minutes.
  • Spoon into greased 13 x 9 baking dish.
  • Set aside.
  • Blueberry Muffin Batter:.
  • Mix together flour, sugar, baking powder and salt.
  • Set aside.
  • In seperate bowl combine milk, vegetable oil and egg.
  • Add to dry ingredients and stir JUST UNTIL MOISTENED.
  • Gently fold in blueberriess.
  • Spread over peach mixture.
  • Bake at 400 for 25-30 minutes or until crust is golden brown.

4 cups canned sliced peaches with juice
1 cup frozen blueberries
¾ cup all-purpose flour
½ cup white sugar
1 teaspoon baking powder
½ cup butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x9-inch glass baking dish.
  • Pour peaches into the prepared dish, and sprinkle the blueberries over the peaches. In a bowl, whisk the flour, sugar, and baking powder until thoroughly combined. With a pastry cutter, cut the butter into the flour mixture to make a crumble, and spread the crumble mixture over the fruit.
  • Bake in the preheated oven until the fruit is bubbling and the topping is golden brown, 45 minutes to 1 hour. Allow to cool; filling will thicken as it cools.

FRESH PLUM OR PEACH COBBLER MUFFINS

This is an variation on a recipe found in The Muffin Lady cookbook. I used plums, because that's what I had, but peaches would be delicious, too. She says to use unripe fruit, as it will ripen up and get sweet during cooking. Also, use sliced fruit rather than chopped, because chopped will tend to "get lost" during baking. These muffins are like a hand held fruit cobbler. So good!

2 firm plums or 2 peaches
2 cups flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
4 tablespoons melted butter
1/4 cup oil
3/4 cup milk
1 teaspoon vanilla extract
cinnamon, for dusting muffin tops

Steps:

  • Heat oven to 350 degrees.
  • Peel and slice fruit into 6 slices each.
  • Sift the dry ingredients, making a well in the center.
  • Pour wet ingredients into the well, and blend by hand.
  • (Batter will be thicker than regular muffin batter.) Scoop batter into lightly greased, large 6 muffin pan.
  • Insert 2 plum or peach wedges into each muffin.
  • (They will be sticking out over the batter. This is ok) Sprinkle muffin tops with cinnamon.
  • Bake for 30 minutes, or until center of muffins is resistant to touch.
  • Cool 5 minutes in pan, then turn out on rack to cool.

  • In a medium saucepan, stir together the brown sugar, cornstarch, and water. Mix in the peaches and blueberries. Cook and stir over medium heat until thick and bubbly. Mix in 1 tablespoon butter and lemon juice. Continue cooking until the butter melts. Pour into a 1 1/2 quart ungreased baking dish. Evenly spoon batter in mounds over the hot fruit.
