I found this recipe on a FaceBook page called Slice of Life!!! It is so good and moist I just had to share it.

GLAZE
1 c powdered sugar
2 Tbsp honey
2 Tbsp milk
CAKE
3 c honeycrisp or granny smith apples peeled and diced ( i used granny smith in this one and it took 2 large apples)
1 c lightly toasted walnuts
2 tsp vanilla
2 tsp ground cinnamon
3 c all purpose flour
1 tsp baking soda
1 tsp salt
2 c sugar
1 1/4 c vegetable or canola oil
3 eggs

Steps:

  • 1. Preheat oven to 325 degrees lightly grease or spray bundt pan
  • 2. In a bowl mix the apples, walnuts, vanilla and cinnamon. set aside. In a seperate bowl sift together the flour, soda and salt.
  • 3. Beat sugar,oil and eggs in large bowl. Add dry ingredents and beat until combined. (Batter will be thick) Fold in apple mixture.
  • 4. Scrape batter into sprayed bundt pan and bake on center rack for 1 to 1 1/2 hours. ( mine took 1hr 15 minutes) Allow cake to cool 45 minutes or so. turn onto plate and drizzle with glaze

3 cups diced apples
1/2 cup chopped walnuts
1 teaspoon vanilla extract
1 1/2 teaspoons ground cinnamon
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups granulated sugar
1 1/4 cups vegetable oil
3 large eggs
1 cup powdered sugar
2 Tablespoons honey
1 Tablespoon milk

Steps:

  • In a bowl, mix together the apples, walnuts, vanilla, and cinnamon. In a separate bowl, sift together the flour, baking soda, and salt.
  • Using an electric mixer beat the sugar, oil, and eggs in a large bowl. Add in the dry ingredients and beat until completely combined. Fold in the apple mixture.
  • Scrape the batter into a lightly greased Bundt pan or tube pan.Bake in a 325 degree F oven for 1 hour and 30 minutes or until a tester inserted into the middle of the cake comes out clean (for dark pans it may be a little shorter).
  • Allow the cake to fully cool in the pan, about 1 hour, and then turn it out onto a plate.
  • For the glaze, add all the ingredients to a small bowl and whisk until smooth. Drizzle over cooled cake.
  • Store covered cake in refrigerator for up to 3 days.
  • Drizzle the apple cake with some of the honey glaze, serve and enjoy!

1 ½ cups vegetable oil
2 cups white sugar
3 eggs, beaten
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 ½ cups apples - peeled, cored and diced
1 cup chopped walnuts
1 cup raisins
1 (16 ounce) container cream cheese frosting
¼ cup finely chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease one 10 inch tube pan.
  • Beat together the oil, eggs, vanilla and sugar.
  • Sift together the flour, baking soda, salt, cinnamon and nutmeg. Add to egg mixture; stir in apples, nuts and raisins.
  • Pour into prepared pan and bake at 325 degrees F (165 degrees C) for 1 1/2 hrs or until a cake tester inserted in the center comes out clean. Cool and frost with cream cheese icing. Sprinkle top with 1/4 cup fine chopped nuts.

HONEY GLAZE
1 c icing sugar
2 Tbsp honey
2 Tbsp milk
APPLE CAKE
4 medium apples, diced
1 c lightly toasted pecans, chopped
2 tsp pure vanilla extract
2 tsp ground cinnamon
3 c flour
1 tsp baking soda
1 tsp salt
3 large eggs
2 c sugar
1 1/4 c vegetable oil

Steps:

  • 1. Combine icing sugar, honey and milk in a small bowl. Set aside.
  • 2. Preheat oven to 325 F. Lightly grease or spray a Bundt pan or tube pan.
  • 3. In a large bowl combine apples, vanilla, pecans and cinnamon. In a separate bowl sift flour, baking soda and salt. Add to apple mixture and stir to combine.
  • 4. in a separate bowl, beat together eggs, sugar and oil. Add to the apple/flour mixture and stir with a wooden spoon to combine. The mixture will be very thick and your arm/wrist will get a good workout.
  • 5. Scrape the batter into the prepared pan and bake for 1 hour and 30 minutes or until a tester inserted in the middle comes out clean.
  • 6. Allow the cake to cool fully in the pan and then turn out onto a plate. Drizzle the honey glaze over the cake.

3 cups white lily all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 cups firmly packed brown sugar
1 1/2 cups crisco vegetable oil
3 large eggs, lightly beaten
4 cups grated apples, about 4 large
1 cup chopped pecans
2 teaspoons vanilla extract
1/4 cup butter or 1/4 cup margarine
1/2 cup pecan halves
3/4 cup firmly packed brown sugar
1/4 cup heavy cream
1/4 cup corn syrup
1/8 teaspoon orange extract (optional)

Steps:

  • Heat oven to 350 degrees. Coat a 10-inch fluted tube pan with no-stick flour spray.
  • COMBINE flour, cinnamon, baking soda and salt; set aside.
  • BEAT sugar, vegetable oil, and eggs in large bowl. Gradually add flour mixture.
  • Stir in apples, pecans, and vanilla.
  • POUR batter into prepared pan, no more than 3/4 full. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean.
  • COOL 15 minutes on wire rack before removing from pan. Finish cooling on wire rack. Drizzle with Butter Pecan Glaze.
  • Butter Pecan Glaze.
  • MELT butter in small saucepan; add pecans.
  • COOK over medium heat, stirring constantly until nuts are toasted - about one minute. Mix in brown sugar, cream and corn syrup.
  • BRING to a rolling boil and cook about 2 minutes, stirring constantly. Remove from heat and blend in orange extract, if using.
  • COOL glaze until thickened. Drizzle over Fresh Apple Cake. Extra glaze may be spooned over individual slices, if desired.
