Number Of Ingredients 12

1/2 cup butter, cubed
2/3 cup packed brown sugar
1/2 cup heavy whipping cream
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 cup chopped pecans, optional
3 large bananas, sliced
12 slices egg bread or challah (about 3/4 pound)
1-1/2 cups 2% milk
3 large eggs
1 tablespoon sugar
1 teaspoon vanilla extract

Steps:

  • Place butter in a microwave-safe bowl; microwave, covered, until melted, 30-45 seconds. Stir in brown sugar, cream, cinnamon, allspice and, if desired, pecans. Add bananas; toss gently to coat., Transfer to a greased 13x9-in. baking dish. Arrange bread over top, trimming to fit as necessary., Place remaining ingredients in a blender; process just until blended. Pour over bread. Refrigerate, covered, 8 hours or overnight., Preheat oven to 375°. Remove French toast from refrigerator while oven heats. Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 5-10 minutes. Invert to serve.

3 eggs
1/3 cup milk, preferably whole
1/3 cup heavy cream
1/4 teaspoon pure vanilla extract
1/4 teaspoon orange-flavored liqueur (recommended: Grand Marnier)
1/8 teaspoon sea salt
1/8 teaspoon ground cinnamon
1 cup unsalted butter
2 cups packed brown sugar
1/4 teaspoon ground cinnamon
1/2 cup orange juice
1/4 cup dark rum
1 tablespoon creme de banana liqueur, optional
3 bananas, peeled and sliced
6 thick bread slices, preferably French toast bread (brioche) or Texas toast

Steps:

  • Batter: In a large bowl, combine all of the ingredients until a smooth batter is formed.
  • Sauce: In a saucepan over medium-high heat, melt the butter, then add the brown sugar. Stir continuously until the sugar has dissolved. Add the cinnamon and orange juice and bring to a simmer. Remove the pan from the heat, pour in the rum and creme de banana, if using, then return the pan to the heat. Brush down the sides of the pan with water using a pastry brush. Remove from heat.
  • In a small saute pan, add 1/4 cup of the caramel sauce and the bananas. Saute over high heat until just warmed through. Keep warm.
  • Toast: Preheat a griddle or a nonstick pan over high heat. Dip the bread slices into the batter, then put them on the griddle, turning over after 2 minutes. To each serving plate, add 1/4 cup of the caramel sauce and top with the French toast. Spoon the bananas, over the toast and drizzle with some of the caramel sauce.

1/2 cup milk
2 eggs, lightly beaten
1 tablespoon dark rum plus 1/2 cup
2 teaspoons sugar plus 3 tablespoons
3 1-inch slices brioche, from a medium loaf, cut into 12 small triangles
6 tablespoons unsalted butter
8 small scoops vanilla ice cream, frozen hard for serving
4 firm bananas, cut diagonally
2 teaspoons lemon juice
Confectioners' sugar, for sprinkling

Steps:

  • In a large shallow bowl whisk together milk, eggs, 1 tablespoon rum and 2 teaspoons sugar. Soak bread triangles 30 seconds per side, until well-coated. In a large cast-iron or nonstick skillet melt 2 tablespoons of the butter over medium-low heat. When butter bubbles, carefully transfer brioche triangles to pan and cook 1 to 1 1/2 minutes per side, or until golden brown. Arrange triangles and ice cream decoratively on 4 dessert plates, standing toasts on their edges.
  • In another skillet, melt remaining 4 tablespoons butter over medium heat. In a small bowl, toss banana slices with lemon juice and remaining 3 tablespoons sugar. When butter bubbles, add bananas and cook, turning them once, until each side is glazed light brown, about 3 minutes per side. In a small pan warm remaining 1/2 cup rum and pour over bananas. Heat one minute, then carefully light with a long match. Shake pan until flames subside and pour over toasts and ice cream. Sprinkle with confectioners' sugar and serve immediately.

½ (12 count) package Hawaiian bread rolls (such as King's®)
3 eggs
¾ cup milk
1 ½ tablespoons vanilla extract

2 bananas, sliced 1/8-inch thick
½ cup brown sugar
¼ cup chopped pecans
¼ cup butter, cut into 1/4-inch cubes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Slice bread rolls horizontally without separating into individual rolls, creating 2 even halves.
  • Whisk eggs in a large, shallow bowl until smooth. Stir in milk, vanilla extract, and cinnamon to make a smooth batter.
  • Dip bottom half of bread rolls into batter, coating both sides, and place in baking dish. Cover bread with sliced bananas. Sprinkle brown sugar and pecans on top. Dot with cubes of butter. Dip top half of bread rolls in batter, coating both sides, and place on top.
  • Bake in the preheated oven until middle is set and top is golden brown, about 25 minutes.
