FRENCH-STYLE MUSHROOM STEW



French-Style Mushroom Stew image

Mushrooms simmered with onions, wine, and carrots make for a rich, French-style stew. Serve with egg noodles, polenta, or mashed potatoes.

16 ounces button mushrooms, chopped
8 ounces cremini mushrooms, chopped
8 ounces shiitake mushrooms, chopped
8 ounces oyster mushrooms, chopped
2 cups roughly chopped onion
6 tablespoons extra-virgin olive oil, divided, or to taste
salt and freshly ground black pepper to taste
1 large leek, white and light green parts only, diced
2 medium carrots, thinly sliced
3 cloves garlic, crushed and minced
1 tablespoon tomato paste
2 ½ tablespoons all-purpose flour
1 ½ cups dry red wine
1 ½ cups vegetable broth
1 tablespoon tamari, or to taste
¼ teaspoon cayenne pepper, or to taste
3 sprigs fresh thyme, chopped
2 leaf (blank)s bay leaves, or more to taste

Steps:

  • Combine all four mushroom types in a large bowl with onions; toss gently to mix.
  • Heat 2 tablespoons oil in a very large pot over medium-high heat. Cover the bottom of the pot with one layer of the mushroom-onion mixture. Cook, without moving them around too much, until they begin to brown and caramelize on one side, 3 to 5 minutes. Stir and cook another 3 to 5 minutes to brown the other side. Transfer to a large bowl using a slotted spoon. Add 2 tablespoons oil to the pot, and repeat with another batch. Continue until all mushrooms and onions are cooked.
  • Season mushroom-onion mixture with salt and pepper.
  • Reduce heat to medium-low and 1 tablespoon oil to the pot. Add leek and carrots and saute until leeks turn a light golden color and start to soften, about 5 minutes. Add garlic and saute until fragrant, about 1 minute. Stir in tomato paste; cook for 1 minute. Add flour; cook and stir for 1 more minute.
  • Add wine, vegetable broth, tamari, cayenne, thyme, and bay leaves, and scrape up the brown bits at the bottom of the pot with a wooden spoon. Carefully add the mushroom-onion mixture. Bring to a simmer.
  • Reduce heat to low and simmer, partly covered, until carrots and onions are tender and sauce has thickened, 30 to 40 minutes.

FRENCH FRIED ONIONS AND MUSHROOMS

1 onion, cut into 1/4-inch slices
12 mushrooms
1/2 cup milk combined with 1/2 cup water
Fritter batter (see below)
Peanut or vegetable oil
Juice
Salt

Steps:

  • Soak onions in milk and water for 30 minutes to remove some of the harshness. Drain and spread on towels.
  • Preheat oil to 350 to 370 degrees. Dip onions in batter and fry, for about 5 minutes until light brown; drain on absorbent paper.
  • To fry mushrooms, cut stems 1/4-inch below caps. Wipe caps clean with paper and sprinkle with lemon juice and salt. Heat vegetable oil to 375 degrees. Dip mushrooms in fritter batter and fry, 2 to 3 minutes or until golden brown.

FRENCH MUSHROOM SOUP



French Mushroom Soup image

This recipe is adapted from Martha's first book, Entertaining.

1/2 cup minced onion
1/2 cup unsalted butter, divided
6 tablespoons all-purpose flour
12 cups homemade chicken stock or low-sodium canned chicken broth
2 sprigs flat-leaf parsley leaves, plus more for garnish
1 small dried bay leaf
Pinch of dried thyme
3 pounds mixed mushrooms, such as shiitake, cremini, and oyster, trimmed and thinly sliced
Coarse salt
Juice of 1/2 lemon
4 large egg yolks
1 cup heavy cream

Steps:

  • Cook onions in 4 tablespoons butter in a large stockpot over medium heat until soft, 4 to 5 minutes. Stir in flour and cook over low heat for 4 minutes without browning. Add the stock, blending it completely with the flour. Add the parsley, bay leaf, and thyme, and simmer for 20 minutes. Strain into a second pot.
  • In a large skillet, heat remaining 4 tablespoons butter over medium heat. Add the cremini mushrooms and season with salt. Cook until softened, and then add the shiitake and oyster mushrooms. Season with salt and lemon juice and cook until mushrooms are deep golden brown, 8 to 10 minutes.
  • Reheat stock mixture to a simmer. Whisk the egg yolks and cream until blended. While whisking, slowly add a cupful of the hot soup into the cream mixture and add back to the soup and heat to just below a simmer (if the soup simmers, the yolks will curdle). Add the cooked mushroom mixture and stir to combine. Serve garnished with parsley.

1/2 Tbsp flat Italian parsley, chopped finely

Steps:

  • Cook mushrooms over medium heat in EVOO until they sweat off water and become drier. Add all other ingredients and sautee until golden.

  • Briefly rinse or brush any dirt off of mushrooms, then quarter them. Toss mushrooms into a food processor and chop finely by pulsing. You can also chop them finely by hand with a chef’s knife.
  • Melt butter in a saute or fry pan over medium low heat. Add shallot and cook a minute or two until soft. Add garlic and cook one minute longer. Add mushrooms and cook until most of the moisture has released and mushrooms are almost dry. Stir in sherry (if using) and cook until liquid is about gone.
  • Add herbs, salt, pepper and sour cream or creme fraiche and stir until combined. Cool and refrigerate for 4-5 days or use immediately as an appetizer spread.
