2 pears (medium peeled cored quartered and thinly sliced)
1 tablespoon lemon juice
2 tablespoons sultanas (see Note 1)
1/2 cup plain flour (stone ground specified 80g or 2 2/3oz)
2 tablespoons caster sugar (see Note 2)
2 eggs (lightly beaten)
1 teaspoon vanilla essence
300 ml low-fat milk (10floz)

Steps:

  • Preheat oven to 180C (350F/Gas 4).
  • Lightly spray 4 x 1 cup (250ml/8floz) capacity non-stick muffin holes with canola oil spray.
  • Put pear slices and lemon juice into a bowl and mix to combine and then layer the pear slices and sultanas into the muffin holes.
  • Whisk together the flour, sugar, eggs, vanilla and milk and pour over the pears and bake for 20 to 25 minutes or until set.

FRENCH PEAR TART

This French pear tart recipe is a total WIN! Absolute perfection in both presentation and taste!

1 1/2 cups all-purpose flour
5 tbsp sugar
1/2 tsp salt
12 tbsp unsalted butter, melted
8 large pears, washed
3 tbsp unsalted butter
1 tbsp water
3/4 cup fig preserves
1/4 tsp salt

Steps:

  • Position one oven rack to middle, and move the second rack to the top slot.
  • Preheat oven to 350 degrees F.
  • In a bowl, mix together flour, sugar and salt. Add melted butter and combine to form dough.
  • Transfer dough to a 9-inch tart pan with a removable bottom. With your hands press dough down to spread on bottom and onto the rims of the pan.
  • Place in the oven on the middle rack and bake for 30 minutes, or until crust turns golden brown. When ready remove crust from oven and let sit to cool. Leave oven on.
  • Meanwhile, heat the fig preserves in microwave for about 40 seconds. Pour heated fig preserves through a mesh strainer to separate chunks from liquid.
  • Now, slice five pears into 1/2-inch slices, discarding core.
  • Heat 1 tbsp of butter in a large cast iron skillet. Add pear slices and 1 tbsp water. Cover and cook on medium heat until pears are slightly tender; about 3 minutes.
  • Remove pears onto a large platter and let sit to cool.
  • Take the remaining three pears and cut them in the same manner.
  • Now melt 2 tbsp of butter in previously used cast iron skillet. Add newly-sliced pears, chunks of fig reserves, and salt. Cook on medium heat, covered, for ten minutes; stir occasionally until pears are very tender.
  • Take a potato masher and mash the pears and fig reserves into a puree. Let cook for another 5-7 minutes or until pureed mixture reduces and thickens.
  • Transfer pear-fig puree onto the now cooled crust; spread evenly.
  • Now, take the cooled pear slices and begin to assemble them in layered circles, starting at the outer edges (see photo).
  • Place tart on the middle rack of the oven. Bake in 350 degree F-heated oven for 30 minutes.
  • Warm up the strained liquid fig preserves for 20 seconds in the microwave.
  • When tart is ready, remove from oven and brush surface of the pears evenly with the warmed fig liquid.
  • Return to oven and place on the top rack. Broil very briefly; watching carefully until pears gain a nice caramelized look.
  • Remove from oven and let cool for at least 1 1/2 hours before serving.
  • When ready, place the bottom of the tart pan on a wide can of food. Hold the ring part of the pan and carefully slide it downwards (see photo).
  • Cut pear fig tart into eight slices and serve. Enjoy!

Instead of making French toast slice by slice, assemble it bread pudding-style the night before. When you wake up, slide the dish in a cold oven, turn it on (so the dish heats up without cracking), take your shower, dress for skiing, whatever. When you're done, breakfast will be ready.

1 tablespoon butter, softened
1 loaf (about 1 pound) cinnamon bread, challah, brioche, or any soft, egg-enriched bread
6 large eggs
1/2 cup sugar
2 1/2 cups milk
1 1/2 teaspoons vanilla extract
2 tablespoons butter
2 firm-ripe Anjou or Comice pears, cored and cut into chunks
1 teaspoon sugar
1/2 teaspoon ground cinnamon
Freshly grated nutmeg
Maple syrup

Steps:

  • The night before, make the French toast: smear the butter over the bottom and sides of a 13 by 9 by 2-inch baking dish or other shallow 2-quart baking dish. Tear the bread into small pieces and scatter in the dish.
  • In a large measuring cup or small bowl, whisk the eggs and sugar until light. Add the milk and vanilla and whisk well. Pour over the bread evenly. Tamp down the bread with a spoon or spatula to submerge each piece in egg mixture. Cover with foil, gently pressing down so the foil is right on the surface of the mixture. Refrigerate overnight.
  • The next morning, remove the dish and slide it into a cold oven with the foil on. Turn oven on to 350 degrees F. After 25 minutes, gently pull off and discard the foil. Continue to bake until pudding is puffed and golden brown, about 20 more minutes.
  • In the meantime, prepare the spiced pears: melt butter in a wide frying pan (preferably nonstick) over medium-high heat then add the pears. Stir until pears are coated well with butter, then sprinkle sugar, cinnamon, and a good pinch of fresh nutmeg; continue to cook about 3 minutes until pears begin to soften. Pour in 1/4 cup of maple syrup; cook until bubbly then remove from heat.
  • To serve, spoon bread pudding onto plates and top with spiced pears. Pass additional maple syrup at the table.

CHOCOLATE PEAR PUDDING

This is a cross between pears belle Helene and Eve's pudding, but that's an irrelevance really. The only important thing to remember is that this is easy, quick, very comforting and seems to please absolutely everyone. It's not hard to make sure you always have what you need in the house to make this. And for hot days when baked sponge and sauce seems inappropriate, then bear in mind that tinned (or bottled) pears and chocolate sauce - with or without vanilla ice cream - make a lovely pudding/ dessert on their own. You can make your own chocolate sauce or buy one you like, obviously, but I have a complete storecupoard standby of a sauce which I make by heating together a 170g can/ three quarters of a cup evaporated milk, half a teaspoon instant espresso powder, 150g golden syrup/ half a cup of dark corn syrup and 100g dark chocolate, 70 percent minimum cocoa solids/ 3 1/2 ounces semisweet chocolate. The sponge itself does make a little bit of its own sauce, so if you really don't want to make some separately, just serve with chocolate ice cream. As with any baking, you really do want all ingredients at room temperature before you start.

  • Preheat the oven to 400 degrees F and grease an 8 1/2-inch square ovenproof dish with butter.
  • Drain the pears and arrange them on the base of the prepared dish. Put all the remaining ingredients in a processor and blitz until you have a batter with a soft dropping consistency.
  • Spread the brown batter over the pears, and bake in the oven for 30 minutes. Let stand for 5 or 10 minutes and then cut into slabs - I cut 2 down and 2 across to make nine slices - and serve with chocolate sauce.

2 (1 pound) loaves sliced artisan bread, cut into 3/4 inch strips with crusts removed
4 pears - peeled, cored and sliced
2 cups heavy cream
1 pinch ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a medium bowl, stir together the brown sugar, 1/4 cup white sugar, flour, cinnamon and salt. Mix in the butter and 1 tablespoon of vanilla just until the mixture resembles coarse crumbs. Set aside.
  • In a separate bowl, whisk together the eggs, 1 cup white sugar, half-and-half, 1 teaspoon of vanilla, pear brandy and salt.
  • Line the bottom of a 9x13 inch baking dish with a layer of bread. Top with a layer of pear. Pour about 1/4 of the custard over the layers followed by about 1/3 of the heavy cream. Sprinkle with some of the crumb topping. Repeat layers until you are out of ingredients, ending with the crumb topping on top. Press down on the layers as needed to help them absorb the liquid. Cover the pan with parchment paper then seal with aluminum foil. Place another baking pan on top or two dinner plates to keep it from puffing while it bakes.
  • Place the pudding onto a larger pan or cookie sheet with sides. Pour boiling water into the bottom pan until it is half way full.
  • Bake for 10 minutes in the preheated oven, then reduce the oven temperature to 350 degrees F (175 degrees C) and continue baking for 25 minutes. Pudding is done when a knife inserted into the center comes out clean.

Gordon adds a touch of spice to the ultimate French classic to create the definitive autumn pudding

8 pears
100g caster sugar
100g butter
2 star anise
3 cardamom pods
1 large cinnamon stick
2 tbsp brandy
500g block all-butter puff pastry

Steps:

  • Core the pears, then peel as neatly as possible and halve. If you like, they can be prepared up to a day ahead and kept in the fridge, uncovered, so that they dry out.
  • Tip the sugar, butter, star anise, cardamom and cinnamon into an ovenproof frying pan, about 20cm wide, and place over a high heat until bubbling. Shake the pan and stir the buttery sauce until it separates and the sugar caramelises to a toffee colour.
  • Lay the pears in the pan, then cook in the sauce for 10-12 mins, tossing occasionally, until completely caramelised. Don't worry about them burning - they won't - but you want to caramelise them as much as possible. Splash in the brandy and let it flambé, then set the pears aside.
  • Heat oven to 200C/fan 180C/gas 6. Roll the pastry out to the thickness of a £1 coin. Using a plate slightly larger than the top of the pan, cut out a circle, then press the edges of the circle of pastry to thin them out.
  • When the pears have cooled slightly, arrange them in the pan, cut side up, in a floral shape, with the pears around the edge pointing inwards. Rest the cinnamon stick on the top in the centre, with the cardamom pods scattered around.
  • Drape the pastry over the pears, then tuck the edges down the pan sides and under the fruit (see Gordon's guide). Pierce the pastry a few times, then bake for 15 mins. If a lot of juice bubbles up the side of the pan, pour it off at this stage (see guide). Reduce oven to 180C/fan 160C/gas 4 and bake for 15 mins more until the pastry is golden. Leave the tart to stand for 10 mins, then invert it carefully onto a serving dish.

1 cup biscuit mix
1/4 cup chopped nuts (walnuts, pecans or almonds)
1/4 teaspoon cinnamon

Steps:

  • Drain and chop the pears, 1/2" chunks, reserve 1 cup of syrup.

  • in a saucepan combine the pear syrup, brown sugar& butter.
  • Heat to boiling, add lemon zest and lemon juice.

½ cup chopped pecans

Steps:
