I found this recipe in Cooking Enthusiast catalog, under the title of French Influenced. Very tender meat and nice thick sauce. Wonderful flavor. The recipe did call for 2 large sprigs of fresh Rosemary and I opted to use bay leaves instead as I don't care for Rosemary.

4 -5 lbs beef short ribs
salt and pepper
2 tablespoons vegetable oil
1 large onion, diced
2 1/2 cups diced carrots
2 1/2 cups chopped celery
8 garlic cloves, minced
6 ounces tomato paste
1 cup beef broth
1 1/2 cups red wine
2 bay leaves
1/4 cup chopped scallion (optional)
1 tablespoon water
1 tablespoon cornstarch

Steps:

  • Season ribs with salt and pepper.
  • Heat 2 tbs.oil in large dutch oven or braiser over medium high heat, add short ribs and brown as evenly as possible. Do in batches.
  • Remove ribs and set aside. Reduce heat to medium and add onions, carrots, celery, garlic and cook until tender.
  • Add tomato paste, beef broth, red wine and cook, stirring, until incorporated, add ribs and bay leaves, reduce to a simmer, cover and cook over low heat for 3 - 3 1/2 hours or until meat easily falls off the bone.
  • Remove from heat and let sit for about 15 minutes for fat to rise to the top, skim off any fat with a ladle. If sauce isn't thick enough remove ribs and add water/cornstarch mixture and bring to a boil, stir to thicken.
  • Serve ribs over egg noodles and top with sauce.
  • Garnish with scallions. (optional).

Make sure that the ribs are at least 4 inches long and 1 inch thick. If boneless ribs are unavailable, substitute 7 pounds of bone-in beef short ribs at least 4 inches long with 1 inch of meat above the bone. To remove the meat from the bone, see the illustrations below. We recommend a bold red wine such as Cabernet Sauvignon or Côtes du Rhône. The test kitchen's preferred brand of beef broth is Pacific. Serve with egg noodles, mashed potatoes, or roasted potatoes.

1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons vegetable oil
2 large onions (peeled and sliced thin from pole to pole about 4 cups)
1 tablespoon tomato paste
6 medium garlic cloves (peeled)
2 cups red wine
1 cup beef broth
4 large carrots (peeled and cut crosswise into 2-inch pieces)
4 sprigs fresh thyme
1 bay leaf
1/4 cup water (cold)
1/2 teaspoon gelatin (unflavored powdered)

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 300 degrees. Pat beef dry with paper towels and season with 2 teaspoons salt and 1 teaspoon pepper. Heat 1 tablespoon oil in large heavy-bottomed Dutch oven over medium-high heat until smoking. Add half of beef and cook, without moving, until well browned, 4 to 6 minutes. Turn beef and continue to cook on second side until well browned, 4 to 6 minutes longer, reducing heat if fat begins to smoke. Transfer beef to medium bowl. Repeat with remaining tablespoon oil and meat. Reduce heat to medium, add onions, and cook, stirring occasionally, until softened and beginning to brown, 12 to 15 minutes. (If onions begin to darken too quickly, add 1 to 2 tablespoons water to pan.) Add tomato paste and cook, stirring constantly, until it browns on sides and bottom of pan, about 2 minutes. Add garlic and cook until aromatic, about 30 seconds. Increase heat to medium-high, add wine and simmer, scraping bottom of pan with wooden spoon to loosen browned bits, until reduced by half, 8 to 10 minutes. Add broth, carrots,thyme, and bay leaf. Add beef and any accumulated juices to pot; cover and bring to simmer. Transfer pot to oven and cook, using tongs to turn meat twice during cooking, until fork slips easily in and out of meat, 2 to 2½ hours.
  • Place water in small bowl and sprinkle gelatin on top; let stand at least 5 minutes. Using tongs, transfer meat and carrots to serving platter and tent with foil. Strain cooking liquid through fine-mesh strainer into fat separator or bowl, pressing on solids to extract as much liquid as possible; discard solids. Allow liquid to settle about 5 minutes and strain off fat. Return cooking liquid to Dutch oven and cook over medium heat until reduced to 1 cup, 5 to 10 minutes. Remove from heat and stir in gelatin mixture; season with salt and pepper. Pour sauce over meat and serve.
  • TECHNIQUE:With the chef's knife as close as possible to the bone carefully remove the meat trim the excess hard fat and silver skin from both sides of the meat.Going boneless the good news about the bones in short ribs is that they contain marrow, which contributes flavor and body to a braise. The bad news is that they contain lots of fat. Bones also have connective tissue attached to them that looks unsightly when the meat is cooked. We eliminated these problems by using boneless short ribs in our braise. Surprisingly, we didn't miss much flavor from the bones, and adding a half teaspoon of gelatin to the sauce restored any missing suppleness.

1 (8 ounce) can beef broth
2 lbs beef short ribs
1 cup flour
1 tablespoon parsley
1 tablespoon seasoning salt
1 teaspoon salt

5 cups eggnoodle pasta

Steps:

  • Mix flour and seasonings.
  • Coat short ribs in flour and seasonings.
  • Heat medium size skillet over high heat.
  • Add oil to heated pan.
  • Brown meat in the oil~ look for a golden brown color.
  • Remove meat from skillet.
  • Add beef broth to the pan you browned the meat inches.
  • Add tomato sauce to the skillet.
  • Re-add meat to the skillet.
  • Cover and cook for 1 hour.

8 meaty beef short ribs

1 cup merlot (I use wine from BC vineyards)
2 1/2 cups beef stock
1/4 cup flour
1 tablespoon brown sugar
2 tablespoons Dijon mustard
1 medium onion, halved and thinly sliced
2 garlic cloves, thinly sliced
4 -5 sprigs fresh thyme

Steps:

  • Preheat oven to 450 F.
  • Season the short ribs with salt and pepper and place in a roasting pan that's just large enough to hold them in a single layer.
  • Roast for 30 minutes.
  • Meanwhile, place the wine, stock, flour, sugar and mustard in a medium-sized pot and whisk until well combined. Mix in the onion, garlic and thyme.
  • Bring to a boil, boil 2 minutes and then remove from the heat.
  • Once the short ribs have roasted for 30 minutes, remove from the oven and drain away the excess fat.
  • Reduce the oven temperature to 325°F.
  • Pour the wine/stock mixture over the ribs.
  • Cover and bake for 2 hours or until the meat is very tender and falling off the bone.
  • Skim any fat from the surface of the ribs before serving.

Fabulous comfort food that is a restaurant quality meal. The flavors are wonderful and the ribs are so incredibly tender, the meat falls right off the bone. The recipe calls for 4 short ribs, though the amount of the sauce is sufficient for 6-8 ribs.

4 beef short ribs
1 cup diced carrot
1 cup diced celery
1 cup diced onion
1 tablespoon fresh garlic, chopped
1 tablespoon fresh thyme
1 (6 ounce) can tomato paste
2 cups red wine, Edmeades Zinfandel preferred
2 tablespoons peppercorns
1 1/2 quarts beef stock

Steps:

  • Heat large saute pan until smokey hot. Season both sides of ribs with salt and pepper, I use fresh ground pepper and sea salt. In 1 tbsp of olive oil, sear ribs on both sides for 1-2 minutes. Remove from pan and place in a large casserole dish. On medium heat, saute all vegetables, thyme and peppercorns for 5 minutes. Add tomato paste and stir until well combined, no lumps. Deglaze with red wine and let reduce for 5 minutes. Add beef stock and bring to a boil. Pour all sauce over the ribs, cover and braise in the oven at 325 for 3 hours.
  • When finished, remove ribs and keep warm. Strain the vegetables from the sauce, reserving 3/4 cup, and return to the stove on medium high heat. Combine cold water and flour in equal parts, whisk into reserved sauce, then whisk this into the remaining sauce to slightly thicken. When done, plate the ribs and ladle sauce onto the ribs. I served this with garlic mashed potatoes and steamed baby carrots.

4 lbs beef short ribs, bone in, cut into single rib chops
sea salt & freshly ground black pepper, to taste
3 cups zinfandel (red wine)
1/2 cup sugar
1 tablespoon minced fresh garlic
3 sprigs fresh thyme, picked
3 ounces canola oil
2 cups small-diced onions
1/2 cup small-diced celery
1/2 cup small-diced carrot
6 ounces canned chopped tomatoes
2 cups beef broth
2 ounces mushrooms, preferably porcini
2 bay leaves

Steps:

  • Generously season the short ribs with salt and pepper. In a large mixing bowl, whisk together the zinfandel, sugar, garlic, fresh thyme and a pinch of salt. Marinate the short ribs in the wine mixture for 12 hours in the refrigerator.
  • Pour 3 ounces canola oil into a Dutch oven over high heat. Remove the short ribs from the wine and allow the beef to rest for several minutes and come to room temperature. Reserve marinade.
  • Once the meat has rested, place in the hot pan. Stir and turn the meat often, carefully allowing each piece to brown on each side before removing from the pan. When browned (will take several minutes per side), remove the beef from the pan and add the onions, carrots, and celery. Stir constantly and allow the onions to cook until mahogany in color, about 10 minutes; if onions are browning too quickly, reduce to medium heat. Add the short ribs back to the pot along with the reserved wine marinade. Allow the wine to come to a boil before reducing the heat to a simmer, skimming foam and fat from the surface of the liquid. After simmering for several minutes, add remaining ingredients and allow to simmer uncovered until the meat is fork tender and nearly falling off the bone, roughly 5 hours.
  • Once the beef has cooked, transfer short ribs to a dish and cover. Reduce the pan liquids until they coat the back of the spoon, simmering about 30 minutes. Strain the braising liquid and return the short ribs to the liquid. Season the short ribs and braising liquid with salt and pepper to taste. Reserve for later use.
  • This may all be done up to 3-4 days in advance. Reheat in oven or microwave until meat is at least 160 degrees Fahrenheit.

This recipe is from the November 2001 issue of Gourmet Magazine. It is from the "You Asked for It" Column and was adapted from Lucques in Los Angeles. You will need to do some advance prep for the ribs (overnight) so plan accordingly. It is a bit fussy, but it is so yummy it hurts.

2 tablespoons black peppercorns, cracked
8 beef short ribs (approx 5 1/4 lb.)
6 fresh thyme sprigs
1 tablespoon kosher salt
2 tablespoons vegetable oil
1 cup chopped sweet onion
1/4 cup chopped celery
1/4 cup chopped carrot
2 cups dry white wine
1 1/2 cups ruby port
2 tablespoons balsamic vinegar
1 bay leaf (not California)
3 fest flat-leaf parsley sprigs
3 cups veal stock or 3 cups beef stock
1 1/2 lbs russet potatoes (baking)
1 1/4 lbs yellow fleshed potatoes
3/4 cup whole milk
3/4 cup heavy cream
1 cup unsalted butter, cut into tablespoon pieces
3 tablespoons olive oil
4 medium shallots, thinly sliced
15 ounces Baby Spinach
1/2 cup creme fraiche
1 tablespoon prepared horseradish (to taste)
fresh thyme sprig

Steps:

  • Prepare short ribs:.
  • Press peppercorns onto short ribs and put in a large roasting pan. Scatter thyme sprigs over ribs, then chill, covered, for 8 hours, or overnight. Remove thyme sprigs and reserve.
  • Preheat oven to 350°F.
  • Sprinkle ribs with Kosher salt. Heat oil in a deep 12 inch heavy skillet over moderately high heat until it is hot but not smoking. Brown the ribs in two batches on all sides, transferring meat sides up to a roasting pan.
  • Add onion, clelery, and carrot to the skillet and saute, stirring and scraping up the brown bits in pan, until the vegetables are golden brown, about 8 minutes. Add white wine, Port, vinegar, bay leaf, parsley, and reserved thyme sprigs and boil until mixture is reduced to about 3/4 cup, about 20 minutes. Add stock and bring to a boil, then ladles over short ribs in roasting pan (liquid will come about halfway up ribs).
  • Cover the pan tightly with 2 layers of foil and braise short ribs in the middle ot oven until meat is tender and almost falling off the bone, 2 to 3 hours (depending on the size of the ribs). Uncover roasting pan and roast ribs until they are slightly browned, about 15 minutes more.
  • Remove from oven, then tent with foil and let stand for 10 minutes. Transfer ribs to a platter and keep warm, covered.
  • Pour liquid in roasting pan through a fine sieve into a bowl, then skim off the fat. (Liquid should measure 1 cups, but you may have more. If so, transfer liquid to a small saucepan and boil until reduced to 1 cup.)
  • Make potato puree while short ribs braise:.
  • Cover unpeeled potatoes with salted cold water by 1 inch in a 6 to 8 quart saucepan. Simmer potatoes, uncovered, until tender, about 25 minutes. Drain in a colander and cool 15 minutes, then peel potatoes while they are still very warm. Heat milk and cream until warm in a large heavy saucepan over low heat, then force peeled potatoes through a potato ricer into the saucepan. Add butter a few pieces at a time, stirring until incorporated before adding next few pieces. Season the puree with salt and keep warm, covered.
  • Prepare spinach while ribs are standing:.
  • Heat olive oil in clean 12 inch heavy skillet over moderately high heat until hot but not smoking, then suate shallots, stirring, until golden, about 4 minutes. Add spinach and saute stirring, until just wilted, about 2 minutes. Season with salt.
  • Make horseradish cream:.
  • Stir together creme fraiche and horseradish.
  • Serve each rib on potato puree with spinach, then drizzle with cooking liquid and top with a dollop of horseradish cream.
  • Cooks note: The ribs can be made one day ahead. Cool, uncovered, in roasting pan, then chill, covered. Reheat, covered, in a 350 F oven until heated through.

12 pieces beef short ribs

2 tablespoons extra virgin olive oil
1 (750 ml) bottle dry red wine
1 lb small onion, peeled
1 1/2 tablespoons fresh rosemary, chopped
2 tablespoons grainy mustard
1 pint grape tomatoes

Steps:

  • Preheat oven to 325 degrees.
  • Season ribs with salt and pepper.
  • In large Dutch oven at medium high heat, heat 1 tbsp olive oil and brown ribs on all sides. Transfer to bowl.
  • Increase heat to high, add the wine and bring to a boil. Lower the heat and gently boil until reduced to half (about 10 minutes).
  • Put ribs in Dutch oven. Cover and bake 1 hour and 15 minutes.
  • In large skillet, heat remaining olive oil over med high heat and saute onions, rosemary, salt and pepper to taste. Remove when onions are browned (about 5 minutes) and add to ribs. Cover and bake for 30 minutes longer.
  • Transfer ribs and onions to bowl. discard fat from liquid.
  • Place dutch oven with broth on stove. Bring to boil and stir in the mustard and salt and pepper to taste.
  • Add tomatoes and return ribs and onions to the pot. Cover and lower the heat to medium and simmer until tomatoes are tender (about 10 minutes).
