In France, the arrival of the first tiny sweet peas (petits pois) is cause for celebration. However, one 10oz package of frozen green peas (thawed) can be substituted for the fresh peas.

1 1/2 cups green peas (11/2 lbs in pods)
1 cup shredded lettuce
2 tablespoons water
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon sugar
3 medium green onions, sliced
1 dash pepper

Steps:

  • Heat all ingredients to boiling; reduce heat.
  • Cover and cook about 8 minutes or until peas are tender.

2 cans (8 ounces each) sliced water chestnuts, drained
2 tablespoons chopped onion
1/4 cup butter, cubed
2 teaspoons all-purpose flour
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 cup milk
8 cups frozen peas, thawed
2 cups shredded lettuce

Steps:

  • In a large saucepan, saute water chestnuts and onion in butter until onion is tender. Stir in the flour, sugar and salt until blended. Gradually add milk; stir in peas. Bring to a boil. Reduce heat; cover and cook for 3-5 minutes or until peas are tender and sauce is slightly thickened. Add lettuce; cook until lettuce is wilted.

FRENCH PEAS WITH BACON AND LETTUCE

French peas are an elegant side dish or starter. Cooked with spring onions and bacon in white wine and stock and topped with just cooked lettuce.

1 tbsp olive oil
100 g bacon (smoked lardons)
50 ml dry white wine
200 ml chicken stock
350 g frozen peas
1 little gem lettuce
6 spring onions
1 tbsp parsley (fresh and chopped)

Steps:

  • Heat the oil in a deep frying pan over a medium heat.
  • Add the bacon and brown for 3 minutes, stirring occasionally.
  • Pour in the wine, sliced onions, and let the mixture bubble for 2 minutes.
  • Add in the stock and peas, bring back to the boil and cook for 3 minutes.
  • Carefully place the lettuce quarters on top of the peas, with the stalks facing upwards.
  • Put the lid on for 2 minutes then turn off the heat. Remove the lettuce and place on a plate then drain the peas.
  • Place the peas in a serving dish and arrange the lettuce on the top to serve.

Peas came in late this year. Not enough to freeze like I always do so instead I tried this simple, tasty treat because I love lettuce, peas, and with a bit of butter. The new scallions that I pulled up from the earth, the fresh lettuce, snipped, and the peas just make such a treat to devour and enjoy the accomplishment of these garden treats.

3 small scallions, finely sliced
1 tablespoon unsalted butter
1 teaspoon olive oil (or any oil)
1 iceberg lettuce, shredded
1 cup frozen peas
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder (optional)
1/4 cup chicken stock (heated)
1/4 teaspoon salt (to taste- don't add if the dish tastes perfect!)

Steps:

  • In a saucepan, cook the scallions in the butter and oil until soft.
  • Stir in the shredded lettuce, until wilted adding frozen peas and stock.
  • Simmer, uncovered, until everything is tender and the liquid flavorful and liquid reduced.

1/4 cup butter
1/2 cup chopped onions
2 cloves garlic, finely chopped
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper

1/2 cup heavy cream
1 cup shredded Cheddar cheese
2 cans (15 oz each) LeSueur® very young small early peas, drained
1 can (2.8 oz) french fried onion rings

Steps:

  • Heat oven to 350° F. In large saucepan, melt butter over medium heat. Add onions and garlic, cook 2 minutes or until onions are tender. Stir in flour, salt, pepper; cook stirring constantly, 1 minute. Slowly stir in milk and cream; cook stirring constantly 4 to 5 minutes or until thickened.
  • Stir in cheese until melted and smooth. Add peas; stir gently to combine.Spoon mixture into 8 inch square baking dish. Bake 20 minutes. Top with french fried onions; bake an additional 5 minutes. Serve immediately.
