EASY FRENCH PEACH PIE



Easy French Peach Pie image

This very rich and easy-to-make pie is a modified family recipe. It can be made with either peaches or apples.

1 recipe pastry for a single 9-inch pie crust
1 (28 ounce) can sliced peaches, drained
1 cup white sugar
1 egg
1 tablespoon all-purpose flour
1 teaspoon butter
¼ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Press pie pastry into a 9-inch pie pan.
  • Fill prepared pie crust with peaches. Mix sugar, egg, flour, butter, and cinnamon together in a bowl; pour over peaches.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C); bake until peach filling is bubbling and crust is lightly browned, 40 to 45 minutes.

1 baked pie shell (8-inch)
4 cups sliced peaches
1/3 cup water
1/2 cup sugar
5 teaspoons cornstarch, heaping
1 tablespoon lemon juice

Steps:

  • Add water to 2 cups peaches and soak slightly until peaches are soft.
  • Add sugar mixed with cornstarch.
  • Cook 5 minutes.
  • Add lemon juice and set aside to cool.
  • Place remaining 2 c peaches in pie shell and top with peach mixture.
  • Chill for 4 hours.
  • Serve topped with ice cream or whipped cream.

1 - 9 " unbaked pie crust
2 eggs
1 tbsp lemon juice
1/3 cup sugar
1 cup graham cracker crumbs
Sliced peaches
½ cup almonds, toasted and chopped
1/4 cup melted butter

Steps:

  • Prepare pastry and bake at 450 degrees for 5 minutes. Beat eggs and lemon juice. Stir in sugar and add peaches. Turn into shell. Combine cracker crumbs, nuts, and butter and sprinkle over peaches. Cover edge of pie with foil and bake at 375 degrees for 20 minutes. Remove foil and bake until set for an additional 20 to 25 minutes. Cool on wire rack. Cover and chill before serving.
